This easy Mini Meatloaf recipe is made with ground beef or ground turkey and topped with a delicious meatloaf sauce. They cook faster, are easier and healthier than traditional meatloaf.

Why I love this meal:
- Fast – Making meatloaf in a muffin tin is easier to make and faster to cook than regular meatloaf.
- Make Ahead – This meatloaf is easily prepped in the morning or even the night before, making dinnertime way less stressful. I also like to make extra and freeze the individual portion sizes for future quick meals.
- The Sauce – The homemade sauce only has four simple ingredients and couldn’t be easier to whip up. It takes this meal over the top with how delicious and flavorful it is!
How to make Mini Meatloaf:
Combine Meatloaf Ingredients: In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
Press Into Muffin Tin: Divide the meat among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
Make the Sauce: Mix all ingredients in a small bowl. Once meatloaf has cooked for 15 minutes, remove them and blot out any grease in the muffin cups. Spoon the sauce over them.
Return to oven for 10-15 minutes until cooked through. Serve mini meatloaf muffins with a side of Perfect Mashed Potatoes or this Apple Pecan Salad.
Healthy Meatloaf?
These easy mini meatloaf muffins are only 140 calories made with lean ground beef or about 120 calories made with ground turkey (that’s including the sauce!). I often use ground turkey instead of ground beef because once I add the sauce, my family really can’t tell the difference.
Make Ahead, Freezing, and Storing Instructions:
- To Make Ahead: Combine meatloaf ingredients and then press into a muffin tin. Cover with plastic wrap, and refrigerate until ready to bake, or up to overnight.
- To Freeze: Grease muffin tin and press meatloaf mixture into each. Cover and “flash freeze” for about an hour. Carefully remove each partially frozen meatloaf muffin and place them in a freezer safe container. Freeze for up to 3 months. When ready to bake, place the frozen servings back in muffin tin and allow them to thaw completely in the fridge. Then bake as instructed.
- To Store: Place the cooked muffins in a container in the refrigerator for 3-4 days.

I originally shared this recipe September 2013. Updated August 2019 and February 2022.
This turned out very good. Just a couple substitutes. Instead of ketchup I used Bear’s breath (so good!) it has just a touch of spice. And less than half the brown sugar. Turned out great!
These got rave reviews from my family. My kiddos who doesn’t love meatloaf loved these. I discovered didn’t have BBQ sauce so used A1 sauce and then at the last minute omitted the chili powder because I wasn’t sure if it would be weird with A1 sauce. I did a mix of regular sized muffin tins and mini muffin tins just because they are cute.
These turned out *fantastic,* this is our new go-to meatloaf recipe. I did not have BBQ sauce, so I used A1 instead. The only thing I’d do next time is do 1 1/2 times, or double, the sauce to heat and add on top of mashed potatoes. These are going into regular rotation in our house, thank you for sharing this recipe!
I don’t have a standard muffin pan as mine or jumbo size I guess but that should be fine right? It will just make fewer of them and I’m sure you could also use those aluminum mini loaf pans as well?
Also, do you think it would be OK to open the egg? Or keep the egg and omit the breadcrumbs? I have different reasons for both of those questions.
Anyway, looking forward to trying this For a freezer meal.
Yes, that will work with a larger man (just cook slightly longer). The egg and breadcrumbs just act as binders. You could omit one of the other and be fine, or use a replacement like a “flax-egg” for the egg and gluten-free bread or cracker crumbs.
Made this last night omitting onion. Very delicious and no leftovers. This will be my go to meatloaf especially for the topping.
This is my go too since I made it last year!! My picky eaters loved them and my hubby loved them too!! Simple and delicious!! Definitely worth it thanks for sharing this recipe with us!!
Hi Lauren:
Can I double every ingredients in this recipe to make one big loaf?
No need! We have a full sized loaf recipe right here: https://tastesbetterfromscratch.com/meatloaf/
Made this tonight exactly as written and it was so delicious! And quick and easy for a weeknight meal. Thank you for this recipe!
Just made this tonight using venison burger. Huge hit for my whole family!! My wife cooks professionally and she was very impressed with dinner tonight. We will be making these regularly from now on. Thank you for the idea.
I added celery for a bit more texture. I will definitely make these again. My husband loved them. served with potatoes and sweetlet pas.
Hi – this looks great! What is the serving size for adults? Thank you.
If you make 12 muffins the serving the 1 muffin!
Running back here to say THANK YOU! This was amazing for the whole family especially my extremely picky 2-yr old, he housed a whole one by himself! Will definitely be making again and might try sneaking some veggies in there too! He doesn’t like burgers but these were sweet and delicious!
These are delicious but I’m not sure if I’m doing something wrong. I use the leanest ground beef that’s available and I still get lots of grease in the cups. The ones in the video don’t look greasy at all.
I use a paper towel to blot up the excess grease!
These are perfect for my husband to take to lunch. I take some to our parents and share with neighbors as well.
Super good
Even our picky kid loves this! Huge hit!
We made this last night and we all loved it. We only had a pound of ground beef and cornflake crumbs rather than panko – but all of us loved the flavour and was super easy to put together. Will definitely make again! My 9-year old even asked for the leftover for her school lunch.
This recipe has become an instant favorite! The kids absolutely love it, I always try to make extra to freeze but they never seem to make it that far. Thank you for a real crowd pleaser!
My family all loves these! Instead of using the muffin tin I make them into patties of the same size and bake on a parchment-lined baking sheet (it makes cleanup so much easier!) Also I always make a huge batch and freeze the extras; they bake perfectly from frozen without thawing first!
I, too, have made these several times and love it!! Planning to make a double batch to freeze.
This is probably my 10th time making this. Love it so much!
The meatloaf was great! Cooked in the amount of time as said in the recipe. But the sauce on top was far to sweet for me. I would do half the brown sugar next time. Will definitely make this again though!
excellent!
Delicious! Used real garlic, Colby jack cheese, and onion powder (since I didn’t have any onions). Next time I’ll use less brown sugar cause the glaze was very sweet. Easy and tasty recipe!
This came out AMAZING. So moist, so flavorful, so fast!
Took much less time than a regular meatloaf and our 6yo loved it. We paired it with a cauliflower mash. I only gad a pound of ground beef so I adjusted the other ingredients accordingly. Delicious!
I didn’t have brown sugar, so I used a scant half-cup of palm sugar. Excellent results. This is a clever way to serve meatloaf. We loved it!
So delicious. I only used 1/4 cup brown sugar for sauce and it was just right. The bake time is half the time so helpful for summer when you don’t want to heat up your kitchen!!
Love these mini meatloaves! They’re always a hit!
These mini meat loaf’s are SO delicious!!! No wonder why they are 5 stars. Will be making more of these for sure. Thank you for sharing.
Making this for the second time because it was SO delicious! Whole gang loved them. Easy, quick and tasty! I made extra to freeze for quick lunches. Definite recipe keeper. I did add slightly less sugar and still amazing.
This is like my 5th time making these and they are such a hit. My son is a truck driver and I can freeze these and he can warm them up while on the road. Love them
These are fabulous! my WHOLE family loves them!
Making these again! Hubby loves them and He takes the leftovers for lunch. All of your recipes are fabulous. I have yet to not like one and I have been using your recipes for about a year. There’s just the two of us so leftovers make a wonderful lunch the next day. Thank you for making my life so easy!
I just made these tonight and they are so good 💗💗
Delicious 😋. Definitely will make again. Thanks for sharing. 😊
Absolutely love this recipe, it was so easy to make and baked so quickly. We’ll definitely be having it again! Thanks so much for sharing it ❤️
I made these for my family and they were a huge hit, and they were quicker bake time than traditional meatloaf. The glaze on top gives it that extra hit. I will make these again.
OMG! This was the best meatloaf I’ve ever had. It was so easy to make my kids loved it and there was nothing left on their plates. I will definitely make this again. I will give this a 🌟 🌟🌟🌟🌟
Super easy, super quick and super tasty!
I used extra lean ground beef and there was very little fat! Will for sure make again!
This is now my go to meatloaf recipe! Its so good!!! An added plus is that this recipe is quick and easy with ingredients I usually have on hand. I make it with 1lb of ground beef in 9 of the muffin tins and adjust other ingredients. I served this with twice baked potatoes and green beans.
Delish. Only prob is fat accumulates in bottom of cup.
How is the best way to warm up the leftover meatloaves? I want to make these for a Christmas party, but only have a microwave at work to warm them up. Can these be made ahead of time and then baked the next day?
Love this recipe. Spices are perfect. I made with mashed potatoes and salad.
My new favorite thing to make. With just the 2 of us I pared down the recipe abit. They are so delicious.
This Mini Meatloaf Muffin is so delicious! And since my ingredients are limited, I have only used my favorite CJ Hot and Spicy Korean BBQ Original Sauce Chicken & Pork Marinade that I bought from Karman Foods. It’s perfect! Best paired with Cold Barley Tea.
No, the loaf pan will take much longer –here’s my recipe: https://tastesbetterfromscratch.com/meatloaf/
Hands down the BEST meatloaf!! Even better than my moms!! Super easy to make and the whole family LOVED them! Definitely a family favorite!
I made these exactly the same but doubled up and in mini loaves in a 18 loaf pan and cooked for 20 min each time and they were FANTASTIC. So much so that this is my first review on Pinterest ever. Loved by my eaters including myself. Thank you.
First time trying this, I put together a weekly menu so I can watch my budget at the grocery store, today was meatloaf or meatballs with side dishes. My son said meatballs sounded good and I didn’t have the energy for meatballs so I compromised, mini meatloaves and my son loved it and so did I
Yum. If you use lean meat make sure to add a little extra sauce to the meat. This recipe was delicious and I used a little olive oil spray, I was surprised it didn’t stick to the pan at all. Great recipe!
OMG I loved this recipe!
I do not enjoy cooking AT ALL, but this looked so good! I have always loved the ends & edges of regular meatloaf so you can imagine how thrilled I was to see this version!
I did change it up a bit as I only had Progresso Italian bread crumbs. I also did not add mustard. Lastly, I also cut up a green bell pepper to add like my grandmother used to!
I changed the sauce as well. Again, like my grandmother I just used ketchup & a whole lot of brown sugar.
I never comment on recipes but this was FABULOUS!! I will definitely cook this again! I also appreciate the info on freezing as it will come in handy! Thank you for sharing this recipe!
Great recipe, very easy and quick to bake. My one substitution was celery instead of onions. I thought the sauce was a bit too sweet, will cut down on the sugar next time or try BBQ sauce instead of sugar as others have suggested. I liked the chili powder in the meat mixture very much!
I cut the recipe in half since there is just the two of us. And I substituted impossible burger for the ground beef. Came out great. Got a thumbs up from my husband who also ate the leftovers for lunch the next day.
Made this for dinner tonight and it was amazing! This was definitely a quick, 30-minute meal and I really appreciated that. I will definitely save this to my favorites list. 🙂
Great recipe! I added one carrots finely chopped into it and my 3 yo loved it.
These were fun to make and eat, but not fun to clean up the muffin tins afterwards (I almost threw them away!!!!) I also did not have the ingredients for the sauce but made my own up and was delish – used a small Spicy Sriracha sauce from Chickfila in it!
Soooo good! The sauce is boss! My brother said it was better than mom’s (but of course we didn’t tell her that 😉 I used regular breadcrumbs that I had on hand and made mini loaves on a sheet pan. I’ll definitely make more sauce next time as everyone wanted more for both the meatloaf and baked potatoes I served it with. I’m a newbie with cooking, and this is definitely one to add to my recipe stash. Simple and delicious! Thanks for sharing it!
Very flavorful! Perfect size for me since I don’t eat much. For the topping I did half ketchup and half BBQ sauce. This recipe is definitely a keeper!
Can regular bread crumbs be used instead of panko? Or any other substitutions for panko?
Yes, that fine! Or you could use crushed crackers (like ritz, club or saltines).
Hubby says this is the best meatloaf he has ever eaten, and he LOVES meatloaf! This is a keeper for sure!
Really easy and delicious. I appreciate how they are portioned, and how they keep well. The sauce on top was soooo good! My husband isn’t a big fan of meatloaf, except for your recipe and now this one! I am always looking for more quick and easy recipes to throw together with a toddler running around. Thank you!!
Made this tonight. My kids scarfed it down with no complaint. I did substitute onion powder (2 tsp) for the onion for a kid who won’t eat something if she thinks she can see an onion. It’s going into my monthly rotation. Super easy for portion! I didn’t use the sauce, and it was still really good, and we didn’t miss it.
Delicious! We loved how tasty and cute they are.
Awesome ide.Even my Italian wife from Calabria Italy loved it.Wish we could edit the serving quantities by editing it like many other sites.
Very good. Did add a little more salt but other then that they were good per the recipe. I liked how easy and how delicious they turned out. Will be using this recipe again.
Can you freeze the fully cooked mini meatloaf!
And use individually as wanted?
Yes, sure!
This recipe was fast, easy to make, and tasted even better than the regular, full-sized (loaf-sized) meatloaf. Thanks for the recipe!
Made these for the second time today! So easy and so delicious!! My husband is a huge meatloaf fan and he loves these! I love the idea of making these in a muffin pan! Perfect portion size for me (I am a calorie counter)!! Thank you for the great recipe!
Hello….I made these tonight and they turned out wonderful. Definitely will make them again.
The hubs and I both loved this recipe. Just made a few changes. I added some garlic powder, a little bit of lemon pepper, and a little Kitchen Bouquet and omitted the chili powder, since I only like that in my chili.
Otherwise I kept the rest the same as recipe.
It was delicious! And will be on my menu rotation.
What do you recommend I use in lieu of egg?
Simple recipe the whole family loved.
Could I freeze these if I already put the sauce on top? I.e. freeze my leftovers?
Yes, sure!
Love this recipe! Quick, easy, economical and fun! It’s a keeper!
Loved these! My kids said this one is a keeper! I added some garlic and onion powder to the sauce for a little tang. So easy and pretty quick!
I’ve made these several times and we love them! However, my husband wants it as a full meatloaf so he can slice it up for sandwiches the next day. Any suggestions on cook time?
I have a full meatloaf recipe here: https://tastesbetterfromscratch.com/meatloaf/ and here’s my meatloaf sandwich recipe, too! Enjoy! https://tastesbetterfromscratch.com/meatloaf-sandwich/
I used ground turkey. Also, I didn’t have nutmeg so I substituted ground ginger. I like that it is simple and quick! Tastes delicious!
Immediately became a family favourite! The individual size was perfect to freeze for future meals.
This was so delicious. My picky kids were quiet and ate every bite. I made one small modification adding a small pocket of cheese in the middle.
Can you substitute spicy brown mustard for Dijon mustard. Would it alter the flavor too much?
That would be fine! Enjoy!
Let me tell you this meatloaf was soooo easy to make and very delicious, my grandpa is extremely picky with his food and he said this is one of best meals he had all year . Highly recommend delicious!
Super super tasty. Easy to make and fast. I am planning to make them regularly. The only thing the sauce on top is a bit too sweet /umhealtby and covers the taste of the tasty meatloaf ..
Made this tonight – DELICIOUS! My husband said that sauce is so good you could bottle it. The only modification I had to make was dark brown sugar instead of light.
These were perfect! My family enjoyed these and I will definitely make again. The portions are just right and so much easier to get out than the usual loaf. Yum!
Wife and I loved the recipe. I usually make 8 lbs at a time cause my adults kids are single and i freeze them and they take them back home with them and always text me after a long day at work and come home to a tasty dinner made with love by dad.
Do you freeze them after they are all done cooking? With the sauce on top? We made these tonight and loved them. I’d love to make a big batch and freeze!
I made this for dinner for my family and surprised my sister and made it for her family , it was delicious
I served it with mashed potatoes, and broccoli, and Hawaiian rolls , very pleased that it was so easy to make and didn’t take forever to cook all the way through. Will be making this regularly.
I made this delicious recipe. We had steamed lemon pepper green beans and pasta shells with cheese. What an amazing combo. Simple and quick. Loved it.
These mini meat loaves were very tasty and easy to make. I used sriracha ketchup and it gave it a very nice kick.
A great idea! I used my own meatloaf recipe but your topping :). The mini meatloaf portions were very convenient and came out perfectly done according to your cooking instructions! And if any of you have kids who count and debate “how many pieces did you get?” this helps! (My teenage son tends to eat the lion’s share of every meal! Ha!)
This came out awesome! My 10 yr old son loved it! Will definitely make again!
Very easy to make. Delicious, big hit with the family!
This was so tasty and convenient. I will be making this again.
BIG HIT AT MY HOUSE!!!
Very simple recipe. Easy to make! The flavors blended perfectly (especially the sauce), and we loved the texture of the finished product.
You can also add a box of stovetop dressing for. Chicken to add extra flavour. Yummy!!! Even meat loaf haters will eat this and look for more.
WOW !!!! 😋 How awesome is this recipe! It’s the perfect recipe to make for a single person as well. I quit making meatloaf because i had too much for leftovers.
Love this. I decided to give meatloaf another shot because I haven’t hated it since I was a child. Wow!! I loved it, my husband loved it and my 4 & 7 year old picky eaters couldn’t get enough!! Thanks!!
Just made these for dinner! They were AMAZING!!! I didn’t have Dijon mustard so I just used regular but yum! Approved by my 2 year old, 6 year old, and hubby!
I just made this recipe with a side of crunchy potatoes aka hash browns. The meatloaf is hands down delicious! I can’t get enough of the sauce either! Thank you for sharing.
Made these about a week ago (sorry for the delay) and they were terrific. The sauce was a little sweet for our taste, but I can sure adjust that! We ate two meals and a lunch from them! Can’t wait to try this again!
Made these 4 or 5 times now. everybody loves them, including my mother-in-law who comes for over for dinner just to eat these. Maybe I should make them less…
I experimented with turkey gravy, but not as good as the barbecue sauce in the recipe.
I did stuff the meatloaves with a third of a cheese stick and/or a babybel, for molten cheese when you cut into them. It’s really yummy. Kids love them.
It was delicious! I made it without mustard because I didn’t have any, and used Italian breadcrumbs instead of panko. Turned out great!
I’ve made mini meatloaf many times but all of my family agreed this was the BEST EVER! So delicious and so easy!
Made these for dinner and they were a hit! Everyone loved them including the kids 🙂
I also precooked onions with garlic and added 1/2 cup of parmesan cheese to ingredients.
Thanks!
Did you use fresh garlic when you sautéed it with the onions or the garlic powder called for in the recipe?
I made these for the first time last week & they were amazing. My boys are very picky eaters & they both cleared their plates.
I make these and love the technique since I’m a single person. I always use cooked white rice instead of bread crumbs. This is a trick I picked up in the Pontiac Press in the 70s where a page had recipes for picnicking at Meadowbrook Theater.
I also sauté the onion and garlic to precook them a bit.
Hi! I’m not a very good cook but I haven’t given up yet on finding a recipe for meatloaf that I can make and enjoy. I’ve been trying to find one that’s not only easy j to make, but tastes good so I don’t have to waste it. I found this one on Pinterest. I only have a mini loaf pan, so I just used that. I have to say, I could actually really enjoy this one!! There is only one change I will have to make with the next batch is to just don’t add any chili powder. I’m a big wimp when it comes to spice.
I also enjoyed the glaze. Thanks for the tip to remove the fat the has come up to the top. The glaze stayed where I told it to 😁 and it came out perfect. It wasn’t too sweet and no one ingredient overwhelmed another. Thank you so much for a recipe that I look forward to making again and again!
Love it! The sauce on top is delicious. Glad I did it and not just ketchup. Way better!
I have made these several times and everybody loves them. Won’t make meatloaf any other way now. Thank you!
This recipe is definitely a keeper for our family. Super easy to make and delicious! Thank you!!
What About using OverSized Muffin Tins(6ea)? Would Cooking Times increase and by how much? Thank You.
My husband was in the mood for meatloaf so we decided to try this recipe and we are so glad we did. First let me say that I did not grow up eating meatloaf so I definitely have my reservations regarding any meatloaf. These meatloaves came out perfectly and they we’re all quickly gobbled up. This is a wonderful recipe and convenient for making sure everyone gets fair portions. This recipe is a definite keeper!
I’m so happy you and your family enjoyed it Liz! Thanks for coming back to comment!
Very delicious!!
Thanks for such a quick & easy recipe that I used in a pinch and that my entire family really enjoyed! I didn’t have any panko or bread crumbs so I just crushed up some Ritz crackers really fine and omitted the salt. I also spooned more of the jarred bbq sauce I used in the recipe (Head Country original) on top of the loaves since it’s a family favorite. I served it with peas and mashed sweet potatoes and the meal was a hit! I will definitely be making it again and again.
Yum! These were so good and easy. All 7 of us liked it a lot. What a clever way to make meatloaf! I may try adding fresh parsley next time. But it is delicious without! I didn’t add any extra salt. Was perfect! Thank you!!
These were delicious! Love all of your recipes – thank you for always being my “go-to” when coming up with what to make for dinner!
Thank you so much Kate! That means a lot.
We had these last night. Very good! I had something similar in the past that were large patties on a baking sheet. I was a little hesitant to do these in my muffin tin, but they cooked so well (very evenly). I chose not to make the sauce as directed, because I felt like it was a lot of sugar (just personal preference). Instead, I just eyeballed some Worcestershire sauce and ketchup, but next time I think I’ll give the sauce in the recipe a try.
Made these today. They were amazing! I especially liked the sauce on top, so much better than plain ketchup.
Hi there! So excited to try this delicious recipe! Just a couple questions. In the instructions, you mention garlic powder. But I don’t see garlic powder in the ingredients list. You also mention egg whites in the directions, but in the ingredients, it just says eggs. Which is it? Thanks in advance!
Thanks Molly–I’ve fixed it. I used to add two egg whites but now I just add 1 egg. Enjoy!
I made these last week and they were amazing!! Can’t stop thinking about them! Thank you!
I’m so happy to hear that! Thank you!
I know this is a weird question, but is it possible to make using muffin tin liners? I was just trying to make clean up easier? What are your thoughts about this? Thanks!
It wouldn’t work with paper liners, tinfoil *might* work, and silicon muffin liners would work.
Thanks Lauren!
So good and easy to make. Even my picky ones loved it. I substituted onion power for diced onions since my kids don’t like the texture of onions.
Thanks Amy, I’m really happy your family liked it!
I have made this recipe dozens of times and it’s one of my families favorites!
I don’t see the option to add this to a custom meal plan. Am I not seeing the button? Thank you!
Hi Sara,
Thanks for pointing this out. It has been fixed and you should be able to add it to your meal plan now!
Could this be made in a regular loaf?
Definietly! You will need to increase the cook time significantly. I would check it at 50 minutes but it may take closer to 60+ minutes.
My husband loves meatloaf, but I had not found a recipe that I was happy with. Made this for dinner last night, and it was even better today in sandwiches. Now, we’re both happy. Delicious. Thank you!
Had for dinner tonite. Delicious. Love the small individual sizes
Mmm everything looks great. Can’t wait to try it. Thanks
This looks like bite size yummy goodness! Pinned!
Oh my goodness, this made me laugh because my husband hates meatloaf too (and we’ve been married for 4 years too!) and he always tells me the Christmas story line too!!!! That’s too funny!!! I happen to love meatloaf and try to sneak it in at least every couple of months…. yours looks wonderful, I’d definitely have it for dinner!!!! 🙂
Hahahaha no way, that’s too funny! I was happy to prove him wrong, because I knew he would love it if he gave it a chance!
