These easy French Toast Roll-Ups take my favorite french toast recipe and wrap it around a sausage link, making a fun, dunk-able finger food everyone loves!

When you make these French Toast Roll-ups, be sure to make a double batch! They reheat great, and are freezer friendly too, making them perfect for busy mornings that you need a good grab-and-go breakfast for yourself or your kids! We even like to bring them camping and reheat them in tinfoil over the fire.

I love that the ingredients are simple ones that I always have on hand (I keep pre-cooked sausage links in my freezer so I always have them when I want to make these, or breakfast quesadillas or a breakfast skillet).

How to make French Toast Roll-Ups:

Flatten the bread with a rolling pin or your hands. Cut crusts off, if desired.

Add sausage link: place the sausage on the front edge of bread and roll up tightly.

Dip into batter: Dip french toast roll ups into the egg mixture (this recipe uses our classic french toast batter), rolling gently to coat all sides, then place on hot griddle.

Cook for a few minutes, turning gently as you go, until golden brown on all sides. Serve warm with homemade syrup.

Make Ahead and Freezing Instructions:

To Make Ahead: The egg mixture can be made up to 1 day ahead of time. The sausages can be rolled in flattened bread a few days ahead of time, stored in an airtight container in the fridge. Cooked leftovers can be stored in a sealed container for 1-2 days. Reheat in microwave, toaster oven, griddle or air fryer.

To Freeze: Store in a freezer safe container or bag with as much air removed as possible to prevent freezer burn. Reheat in microwave, toaster oven, griddle or air fryer.

Recipe Variations:

  • Nutella French Toast Rolls: Spread Nutella near the end of the piece of bread. Roll up tightly, dip in egg mixture, and cook according to recipe.
  • Strawberry Cream Cheese: Spread cream cheese near the end of the piece of bread and add diced strawberries, or some strawberry jam. Roll up tightly, dip in egg mixture, and cook according to recipe.
  • Peanut Butter Banana: Spread peanut butter near the end of the piece of bread and top with diced bananas. Roll up tightly, dip in egg mixture and cook according to recipe.

  • 10 slices bread
  • 10 fully cooked sausage links
  • 3 large eggs
  • 1/2 cup milk
  • 3 Tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 Tablespoon all-purpose flour

Instructions
 

  • Use a rolling pin or your hands to flatten the bread (slice crusts off, if desired).
  • Place a sausage link on the front edge of the bread and roll up tightly. Set aside.
  • Add eggs, milk, sugar, cinnamon, vanilla, and flour to a shallow dish or blender and mix until smooth.
  • Preheat griddle or skillet over medium heat. Grease well with butter.
  • Dip sausage roll ups into the egg mixture, rolling gently to coat all sides, and then place on hot griddle. 
  • Cook for a few minutes, turning gently as you go, until golden brown on all sides. Serve warm with syrup.

    I just made a batch of these mid-day for future mornings. I had to limit myself to trying only one! They are so good and easy to assemble. I like the extra protein from the sausage but combined with the tastiness of French toast. Thanks for such a good recipe!

You should seriously think about putting all your delicious recipes into a book. I print your recipes and it looks like I have your book already but you still amaze me with new recipes.   3. Do you think you could make them ahead of time and freeze them cooked? We are going on vacation and looking for quick things to make in the mornings.

  4. Would it work to roll the cooked sausages in the bread a day in advance and keep then cold to take camping to cook the next could days? Or would it be better to roll out the bread at the time of cooking? I really want to take these camping this weekend! Thanks!

  5. Can you freeze them after it’s been coated with the ingredients. If it’s frozen what’s the best way to cook it and what sausages can be used?

    1. I wouldn’t suggest that, unless they were dipped in the mixture and cooked fully, and then frozen. To reheat you could pop them in the microwave, or thaw them in the fridge overnight and then toast them in a skillet until warmed through. Any small, fully cooked breakfast sausages can be used.

    YES!!! Made these this morning with some scrambled eggs for a Sunday morning treat! My husband and I loved these! So easy to make and I had enough egg mixture left over to refrigerate for as quick on the go this week! Waste not want not! I WILL be making this again. Thanks!

    1. Hi Carol, this recipe calls for cooked sausages. You could definitely buy uncooked sausages and then cook them before rolling them in the bread!

    I made these tonight and they are amazing. We love having breakfast for dinner. The batter was enough to make 20 though. I froze the extra for breakfast throughout the week. My children are picky eaters and they requested that I make this again. Thank you!

  9. I substituted real maple syrup for the sugar in this recipe. I don’t normally use sugar in French toast at all, but I wanted these to be totally “self-contained” so they could be eaten on the go, without needing syrup. Worked well, but I had enough batter to make an entire loaf of bread into these…excellent for a teen boy who’s a bottomless pit!
