Brioche French Toast made with a creamy, custard batter and French brioche bread. This easy recipe takes traditional french toast to a whole new level.
I’ve got a slight obsession with french toast; this is the 7th french toast recipe I have created for my website! It ranks in the top 3 for me alongside Baked French Toast Casserole and Crunchy French Toast.
Brioche French Toast
If you love French toast as much as I do then you need to try this recipe! I mean , doesn’t it just make sense to use a French bread to make a recipe called “French Toast?”
So Let’s talk about the bread: It’s really the most important part of any French Toast recipe, and it’s particularly important in this recipe!
Brioche bread is different from other breads. This traditional French bread is risen with yeast (like other breads) but made with more butter and egg yolks, giving it a light, flaky texture and causing the crust to turn slightly golden brown.
You should be able to find it at your local grocery store. First check the bakery section for the good stuff, made with real butter, and eggs. If you don’t see it there, they may carry a lesser quality kind near the regular sandwich breads, and that will work. (But it’s worth it to try to find the real stuff if you can!)
Brioche bread is sometimes confused with challah bread; a kosher, braided bread used in Jewish traditions. Unlike brioche, challah bread is dairy free.
Why I LOVE this recipe
- The bread. Truly, the brioche bread is the star of this recipe.
- The custard batter. The cream and flour in this recipe help create a really creamy, custard-like sauce that makes excellent french toast1
- The toppings. Homemade syrup (or your favorite high quality syrup), fresh fruit, and a spoonful of whipped cream will seal the deal in making this the BEST French toast ever!
Brioche French Toast in 5 easy steps:
- Preheat griddle. Heat to 350 degrees F or heat a large skillet over medium heat.
- Blend ingredients. Add all ingredients, except the bread, to a blender or to a shallow dish and whisk well to combine. If whisking by hand, it’s okay if the flour doesn’t mix in completely smooth.
- Grease griddle with butter.
- Dip bread. After greasing the griddle, dip the bread into the batter on both sides and place on hot pan.
- Cook for a few minutes, until the bottom of the bread starts to get golden brown. Flip and cook on the other side the same. Serve warm, with syrup and a sprinkle of powdered sugar.

- 4 large eggs
- 1/4 cup milk
- ½ cup heavy whipping cream
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 teaspoons vanilla extract
- 8 slices Brioche bread
Instructions
- Preheat griddle to 350 degrees F or heat a skillet over medium heat.
- Add all ingredients, except the bread, to a blender or to a shallow dish and whisk well to combine. If whisking by hand, it's okay if the flour doesn't mix to be completely smooth.
- Grease griddle with butter.
- Dip bread slices into the egg mixture, dredging them well on both sides, and place on hot pan.
- Cook for a few minutes, until the bottom of the breads starts to get golden brown. Flip and cook on the other side the same.
- Remove to a plate. Serve warm, with syrup and a sprinkle of powdered sugar.

We are not big French toast eaters especially my daughter. Brioche bread is so tasty in this recipe. She tried it today and said I need to make it more often. Her son, my grandson is pretty picky and he ate a piece and a half and he is only 3. He loved greemaws pound cake. Apparently he thought he was eating dessert! We served it with fresh cherries. Thanks for the amazing recipe!
My husband makes the best French Toast, but he is always looking to “perfect” his recipe. I wondered about the flour also. It is an interesting secret ingredient.
Anyway, my question is: how thick do you cut the bread slices? The picture looks like it is about 1/2 inch. He remembers going to a restaurant when he was a child, and the Toast was “thick and custardy in the middle.” He described “thick” to be about 1 inch.

Looks amazing. I’m making this today! What is the purpose of the flour? This is the first time I have seen flour in a French toast recipe.
It’s my secret ingredient! It makes is more of a “batter” and not so watery when dipping the bread.
