This tomato avocado melt is a quick and healthy breakfast for an on-the-go family!

My sister-in-law introduced me to this tasty melt while I was visiting for Christmas last year. Part of me still holds a tiny grudge that she didn’t share it with me sooner, because I know it’s a family favorite at her house, and it has quickly become my go-to quick lunch of choice!

Seriously, this Tomato Avocado Melt is to die for and I basically eat it every day for lunch!  It takes 2 seconds to throw together and it always satisfies my hungry tummy! And, not only does it have some of my favorite ingredients layered on top, it has a thin layer of mayo and cayenne spread on the bread, which is the secret ingredient!

The mayo/cayenne combo adds just the right touch of tang and bite that makes this melt completely addicting!

I often make this for my one-year-old’s lunch as well, leaving out the cayenne, and he gobbles it up!  If you’re like me and hardly have time to feed yourself come lunch-time, this melt is your solution! A deliciously addicting sandwich in under ten minutes.

I’ve compiled a whole bunch of awesome lunch and snack ideas here, and I refer to them often. But this Tomato Avocado Melt is probably my favorite of all!

This tomato avocado melt is a quick and healthy breakfast for an on-the-go family!

Unit: slice, small, Tablespoon
Servings: 4 people
Calories: 368 kcal

Ingredients
  • 4 slices bread
  • 1-2 Tablespoons mayonnaise
  • cayenne pepper , to taste
  • 1 small roma tomato , sliced thin
  • 1/2 avocado , sliced thin
  • 8 slices cheese (your favorite kind)
Instructions
  1. Spread a thin layer or mayonnaise on each piece of bread. Sprinkle with a pinch of cayenne pepper. Layer bread with tomato and avocado slices and top with cheese. Broil on high for 2-4 minutes, or until bread is toasted and cheese is bubbly!

    This reminds me of an open face sandwich served at the Lunch Box, a former restaurant in Akron, OH. It was topped with sprouts and shelled pumpkin seeds, and a slightly tart yogurt or sour cream dressing was drizzled over top. So yummy. I don’t recall the avocado on it, but I think that is a great addition.

      Correction to above posting. It is sunflower seeds not pumpkin seeds. Made this and it was delicious. For the dressing, I thinned out some non-fat plain yogurt with lemon juice and a few drops of milk to desired consistency. Also, sprouts are alfalfa sprouts. Try it!.

    Hi Lauren!
    I rolled onto your food blog this morning and am glad I did. These recipes you have featured are amazing! Now I know what to do with this avocado and these tomatoes that need used up. I notice that a lot of your photos of cooked meat show the meat sitting atop a portable gas grill. Do you cook the different meats on that kind of grill? I figure you are using the grill to stage the photos because it looks nice, but wanted to ask and find out for sure.

      Hi Don, Thanks for your comment! I live in a tiny apartment with my husband so we do all of our grilling on that little portable gas grill–Hopefully one day soon we will be in a bigger place with space for a real grill, but for now, the portable one works!! 🙂

        Those are nice little grills Lauren. I have one of those too. I found out it can make great toast when you are out camping.
        I found this recipe this morning and made it for dinner tonight. Wow…it is pretty good and so quick and easy! Glad I found your food blog!

    A ridiculously simply yet amazing sandwich! I too have been eating this almost every day for lunch. For an extra kick I mix some sriracha into the mayo as well. Yum!!

    This sounds delicious. I think I’ve found my plan for Easter brunch! However, what would you suggest as an alternative to mayonnaise? I am not a fan of it at all; I know yogurt can be used as a substitute but I feel like it wouldn’t work well here.

    Tried this with fried egg this morning for breakfast and we loved it! Will definitely be making this without egg for lunch too – quick, ingredients we love and always have on hand, and delicious. The cayenne really adds to the flavor, don’t leave it out! Thanks.
