This tomato avocado melt is a quick and healthy breakfast for an on-the-go family!

AliseMelty

I love everything about this Tomato Avocado Melt, but particularly that it 10 minutes to make and it always satisfies my hungry tummy! And, not only does it have some of my favorite ingredients layered on top, it has a thin layer of mayo and cayenne spread on the bread, which is the secret ingredient!

The mayo/cayenne combo adds just the right touch of tang and bite and makes it addicting!

I often make this for my one-year-old’s lunch as well, leaving out the cayenne, and he gobbles it up!  If you’re like me and hardly have time to feed yourself come lunch-time, this is your solution!

I’ve compiled a whole bunch of awesome lunch and snack ideas here, and I refer to them often, but this Tomato Avocado Melt is probably my favorite of all!

This recipe is the absolute business. My mom wanted something light and fast for her birthday dinner tonight so I threw these together for us. It actually took less time to make it than to eat it. BTW the cayenne/mayo combo really makes this, good call there.

All the best to you, I like the site and I’ll be back as soon as I need a new recipe, which will be sooner rather than later 😀

  2. Wow looks and sounds great?I have been looking for quick healthy suggestions for lunch and breakfast that does not take long THANK YOU

This was sooo good! I’m not a big fan of mayo, so I used cream cheese instead. I had first tried this last year and have been wanting to make it again, but I couldn’t remember where I had seen it. This time I’m printing it out!. Easy, simple and tastes great!

  3. This is absolutely delish!!! My daughter and I had these 2 mornings in a row. They just melt in your mouth! On need od a couple more avacados! Thank you for sharing!

Hello! Thank you for sharing this recipe with the world! I am going to try this out shortly for my breakfast. I will keep you posted on how it turns out. I’m Vegan so I will tweak a couple of the ingredients… Stay tuned… lol!

  5. Tried this with fried egg this morning for breakfast and we loved it! Will definitely be making this without egg for lunch too – quick, ingredients we love and always have on hand, and delicious. The cayenne really adds to the flavor, don’t leave it out! Thanks.

  6. Augh! This looks amazing + would be the perfect breakfast or lunch! <3 I need to go get avocados! *-*

  7. Lauren, I want to be eating one of those right this minute! Only problem, I don’t have an avocado that’s ripe enough today.

  8. This sounds delicious. I think I’ve found my plan for Easter brunch! However, what would you suggest as an alternative to mayonnaise? I am not a fan of it at all; I know yogurt can be used as a substitute but I feel like it wouldn’t work well here.

    1. Hi Lindsey, how do you feel about miracle whip? Otherwise you could just leave it off altogether. 🙂

      1. Lol I’m not the biggest fan of miracle whip, but I do use it occasionally. That should have been my first thought. I may end up leaving it off. Thank you!

  9. i made this for lunch yesterday and I have to say they are wonderful. Having them again today. This can be addicting. I love them so much. I could eat it every day.

  10. A ridiculously simply yet amazing sandwich! I too have been eating this almost every day for lunch. For an extra kick I mix some sriracha into the mayo as well. Yum!!

  11. Nice to meet you. This looks delicious. I will have to try it. I’m looking for easy things to make, and avocados are so good for you.

  12. Hi Lauren!
I rolled onto your food blog this morning and am glad I did. These recipes you have featured are amazing! Now I know what to do with this avocado and these tomatoes that need used up. I notice that a lot of your photos of cooked meat show the meat sitting atop a portable gas grill. Do you cook the different meats on that kind of grill? I figure you are using the grill to stage the photos because it looks nice, but wanted to ask and find out for sure.
    Thanks a lot!

    1. Hi Don, Thanks for your comment! I live in a tiny apartment with my husband so we do all of our grilling on that little portable gas grill–Hopefully one day soon we will be in a bigger place with space for a real grill, but for now, the portable one works!! 🙂

      1. Those are nice little grills Lauren. I have one of those too. I found out it can make great toast when you are out camping.
I found this recipe this morning and made it for dinner tonight. Wow…it is pretty good and so quick and easy! Glad I found your food blog!
You really do a fantastic job with your photos. Everything looks sooo good.
        Don

  13. This reminds me of an open face sandwich served at the Lunch Box, a former restaurant in Akron, OH. It was topped with sprouts and shelled pumpkin seeds, and a slightly tart yogurt or sour cream dressing was drizzled over top. So yummy. I don’t recall the avocado on it, but I think that is a great addition.

    1. Correction to above posting. It is sunflower seeds not pumpkin seeds. Made this and it was delicious. For the dressing, I thinned out some non-fat plain yogurt with lemon juice and a few drops of milk to desired consistency. Also, sprouts are alfalfa sprouts. Try it!.

  14. Holy cow, this makes my mouth water! I love everything you put on this! Thanks for sharing! Pinned!

  15. Ok. Why have I never thought of this?? Genius snack idea! Thanks for sharing with me!
