Recipe
One Pan Lemon Basil Chicken and Rice
Ingredients
For the Chicken:
- 1 1/2 pounds boneless skinless chicken breasts (about 3-4 breasts)
- 1 Tablespoon olive oil
- salt and freshly ground black pepper to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried basil
For the rice:
- 1 Tablespoon butter
- 1 cup long grain white rice , uncooked
- 2¼ cups low-sodium chicken broth
- juice of 1 lemon
- 1/4 cup fresh basil leaves , chopped and divided
Instructions
- Season chicken with salt, pepper, garlic powder, onion powder and dried basil.
- Add olive oil to a large skillet (with a fitted lid) over HIGH heat.
- Add the chicken and brown (sear) for only 1-2 minutes on each side, just until browned (chicken will not be cooked through.) Transfer chicken to a plate.
- Add butter to the pan, reduce heat to medium. Stir the butter with a wooden spoon to scrape up any browned bits from the chicken.
- Add the rice and sauté for 2-3 minutes until lightly browned.
- Add chicken broth, lemon juice, and 3 tablespoons of the fresh basil to the pan and stir. Bring mixture to a boil.
- Once boiling, place chicken on top, then cover, reduce heat to low, and simmer for about 20 minutes until all of the liquid is absorbed.
- Garnish with remaining tablespoon of fresh basil. Serve immediately.

The rice was delicious! The chicken, however, was incredibly bland, even with the seasoning. It almost seemed as though the rice soaked up all of the flavors/seasoning, leaving nothing behind for the chicken. I will be making the rice again, but definitely not the chicken as both myself and my spouse were disappointed in how it tasted.
I made this for meal prep and it was delicious! I wanted something without a ton of ingredients and steps and this was a winner.
This was so easy and delicious! I added Italian green beans mixed in and boom! Healthy, easy dinner!!!
This was ridiculously easy to make for something that packs so much flavor. I found the lemon a bit overpowering but I think that’s just my personal taste. My husband would not stop eating it. I had to hide the leftovers just so I’d have a lunch tomorrow. 😛
The family loved it
We loved this meal. It tasked really good and was really easy to make. I get home late in the evenings and need something that is quick and don’t dirty up a bunch of dishes. I wouldn’t change a thing with this recipe I felt that it had the right amount of everything in it.
I made this recipe (I actually made a double batch to have lunches), it was soo good my family ate ALL of it. Definitely a repeat recipe
This was delicious! I couldn’t get fresh basil delivered and did it with dried one.
Rice was juicy and lemony, the chicken was amazing.
I am looking forward to doing it again with fresh basil.
Thank you so much for this recipe!! Instead of rice, I used quinoa, as I need to watch my carbs, and I used a low sodium chicken broth and unsalted butter because I also have to watch my sodium. I am trying your Black Bean Corn Quesadillias tomorrow night. Thank you for the recipes and shopping lists,! You are making my life so much better!
I added a little parmesan cheese. Dish was amazing and easy!!
This has become the number 1 most requested meal in our home! Everyone likes it! This website has made me stop dreading dinner! The recipes are fresh, easy & delicious!
That’s such a nice compliment–thank you Sue! XOX
This is one of my favorite go-to meals, the lemon basil rice is so yummy that I usually double that part of the recipe!
Hi Lauren! Your website is amazing and helpful. I have a 2-year old son and my husband and I enjoy cooking up tasty meals together. Typically he is on the grill and I’m in the kitchen. But our two obstacles in the kitchen are coming up with new things to eat, instead of the same-old, same-old, and having a shopping list to accompany those meals. I always forget an ingredient or have difficulty planning out the whole week and combining those meals ingredients to make ONE list, instead of five individual lists, haha. So thank you for your hard work, and for making my life easier.
Don’t stop!
Thank you so much for the nice feedback Staci! So happy you have found some recipes you enjoy! <3
Making this again tonight. I am going to double the recipe and have the rest as a freezer meal.
