An easy, southern-style sausage gravy with flaky homemade biscuits makes the BEST Biscuits and Gravy!  One of our favorite breakfast recipes of all time!

It’s no secret that a yummy homemade breakfast makes me excited to get up on Saturday morning. Our weekday breakfasts usually consist of plain old oatmeal or freezer breakfast sandwiches but on the weekends I like to make something much more fun!

This sausage gravy recipe is a TREASURE in our family, thanks to my mother-in-law. She’s made it so many times she has completely perfected the recipe, and now it’s one of our favorite breakfasts.

I should issue a disclaimer that you’ll never want to order biscuits and gravy from a restaurant after trying this recipe. I know from experience that every other will pale in comparison. But the good news is that it’s just about one of the easiest things in the world to make.

Pair it with my absolute favorite homemade, light and flaky buttermilk biscuits and you will be in heaven!

Sausage Gravy Ingredients:

  • Pork sausage: any sausage will work and choose hot or milk based on your preference. I think it’s best with sausage, but you could substitute bacon or other chopped meats.
  • Flour and butter: for flavor and to thicken the gravy
  • Half and half– or substitute whole or 2% milk.
  • Seasoning: Thyme, Rosemary, Crushed red pepper

How to Make Biscuits and Gravy:

1. Make homemade biscuits.

2. Make Sausage Gravy:

  • Brown sausage in a large saucepan.  Use a paper towel to blot out most of the grease from the pan.
  • Add flour, butter, and half & half.  Cook on medium-low, stirring often, for several minutes until thickened.

  • Add thyme, rosemary, red pepper flakes and black pepper.
  • Serve over warm biscuits.

Notes

Make ahead Instructions:
You can make the gravy ahead of time and store it in a container in the fridge for 2-3 days, depending on the freshness of your ingredients.
Rewarm on the stove, adding a splash of half and half or milk to thin it, if needed, and additional seasonings, to taste. 
Freezing instructions:
I’d suggest making the recipe with whole milk, if you want to freeze it. (Half and half will have a slightly different texture upon reheating from frozen, but will still taste good). Thaw overnight in the fridge.
Rewarm on the stove, adding a splash of half and half or milk to thin it, if needed, and additional seasonings, to taste. 
The biscuits can be made ahead and stored in the freezer for 3-5 months.

    This was an overall good recipe for biscuits and gravy. I used my Nana’s biscuit recipe. For the gravy, used whole milk and didn’t blot the sausage drippings as the recipe instructs. No need to use cream that way, and so much of the smoky sausage flavor is in the drippings. Used nutmeg, sage, and cumin for the seasonings. A little salt and pepper to round it out.

    Do not add cornstarch like one commenter suggested as it is not necessary if you follow the instructions.The recipe is delicious as is. We used Jimmy Dean’s Hot because that’s what we prefer and it was excellent.

My husband grew up with a Meemaw making his gravy and she passed before I could get her recipe. No biscuits and gravy could ever live up to his southern grandmas recipe until I made this! He said it was better! Highly recommend literally everyone to give this simple and delicious recipe a try!

    Can confirm. The author wasn’t lying about this recipe ruining restaurants forever lol. The rosemary and thyme pops when you eat it and the flavor profile is just incredible! I used Jimmy Dean original sausage and the original Grands biscuits. 10/10 would recommend.

    My husband and I really loved this recipe! I would recommend adding the butter and flour first, then stirring until there is no visibly dry flour before adding the half and half, just to make it a little easier to combine. I also like it a little spicier, so I like to use the spicy breakfast sausage instead of regular ground sausage. All in all, a fantastic recipe and super easy to follow. Thank you!

    I used this as a base recipe. I didn’t add as much half/half (only a cup) and a little extra flour (1/2 TBSP) because we like thicker gravy. I added garlic powder, onion powder, herbs de Provence, thyme, salt/pepper and red pepper flakes (I didn’t have any rosemary). It was really good!

    Preparing to make a large breakfast for some house guests and this recipe seemed to have more spices and flavor ingredients than most others. This was my practice meal. This was EASY and so ABSOLUTELY flavorful! I did not have half and half, but I did have heavy cream and nonfat milk and it seems to work just fine. I mixed half of each. I actually like a little thicker gravy, so I think the heavy cream added a little. I do love the rosemary flavor in sausage gravy, so next time I will be adding a little more rosemary to the recipe. REALLY loved it and so did the husband, thanks!!

  14. Hey Laura ,just read the recipe for Biscuits and gravy, My Mom use to make it just like that.It was so good, She use the Iron skillet to make that. And, it was almost like your but I don’t think she use red pepper…Though my gram and my mom could make some great roux for anything with a cream sauce.They made the best cream spinach,That recipe has to be over 90yrs old..And It’s still a staple in our family..Love your recipes, Can you make a carmel frosting I need that for something I want to make there are some out here, but I just like to have one from you..Thanks for all your great deals and recipes..Hope you have blessed Hoildays and have a healthy and peaceful New Year with Family and Great friends..

    Me and my family liked the recipe a lot. Used Flaky Pillsbury rolls, roll of breakfast sausage and heavy cream. I used a bit more of thyme and rosemary. This recipe is very tasty. Thank you for sharing it.

    Absolutely delicious!! My fiancé said he was craving chicken biscuits and gravy so of course I went looking for a recipe. I made the gravy the night before and stored half in the fridge, froze the other half. It’s just the two of us and it makes a lot! In addition to the gravy, I made some crispy chicken thighs to put in the biscuit. Just boneless skinless chicken thighs, panko, onion powder, salt, pepper, and smoked paprika. 380F 14 minutes in the Airfryer- perfect! It was perfect with the gravy🥰
    Will definitely be keeping this recipe! It’s something I’d make for breakfast with house guests 🩷

    1. Sure, that would be fine! The half and half adds thickness, but if you find you want the gravy thicker, just spoon some of the sauce out, and mix a little flour with it, then stir it all back into the pan.

    This is fantastic! This was the first time I have made sausage gravy. I used my own buttermilk biscuits recipe that I always make. But this garvy is outstanding. Super delicious. Made it as written except I used a pound and a half of sausage. My man and I like thicker gravy and more sausage. And I used 1lb regular pork sausage and 1/2 lb of maple pork sausage. Super delicious and he loved it. Said he couldn’t stop eating it. Will most definitely be making this again and again and again! Thank you for a great recipe!

  28. I recommend when you stir the flour in to let it cook for a minute and combine well with the sausage if you yoss the butter flour and half & half in all at once you get a pastey texture because the flour isnt cooked

    Definitely add 3-4 tablespoons of cornstarch at the end to assist with thickening. DON’T add it right to the gravy tho. Mix in a small amount of water first!

    I’m not even particularly into biscuits and gravy, but this recipe is great! I made biscuits earlier today from the recipe i always use (from Mom on Time Out’s blog) and the gravy was extremely fast and easy. My husband works a lot and we have a 14 month old and this was quick, easy, and came together so fast. My picky daughter even ate a bit of it and my husband loved it.

    I didn’t have half and half so used whole milk and also had just ran out of rosemary so I omitted it, otherwise followed the recipe as written.

    Absolutely perfect. I am a huge biscuits and gravy fan. I love trying it at different breakfast restaurants. I found this recipe, this morning and am so glad I did. I used whole milk because I didn’t have half and half. Came out wonderfully.

    For the biscuits, I bought store bought biscuits, heated up a cast iron skillet in the oven, with 2 tbsp of butter, and tossed the biscuits in the butter, to cook. I flipped them and cooked them for a few minutes longer. Both sides of the biscuits had a wonderful crust on them, which enhanced the meal even more.

    I was skeptical about the rosemary and thyme, and no salt…. but wow, this is my new way to make sausage gravy! I doubled this recipe, but only had one cup of half and half one hand so I used 3 cups 2% and about 1/2 cup heavy cream. Yummo. (I’m going to keep the calories a secret!) Thanks! Cindy.

  38. Best sausage gravy recipe ever! The herbs give it so much flavor. I’ve followed the recipe as written many times and it’s great! I’ve also played with it quite a bit. When I don’t have 2 1/2 cups of cream lying around I use 4 tablespoons of butter with whole milk. I mix the butter into the sausage, sprinkle 3 tablespoons of flour over it, then add some milk, stir until it’s a paste, then repeat until I’ve added all the milk. It cuts waaaaay down on how long you have to let the gravy cook to thicken up. I have also made it with Jimmy Dean sage breakfast sausage and that’s really good too. I make cheddar garlic biscuits for this that are to die for!

  40. Do I use salted or unsalted butter? And is it crucial that the sausage I use is uncooked? Also, should the sausage (I might use turkey or chicken) be unseasoned?

      I used salted butter. Not sure about being able to use cooked sausage. I use Jimmy Dean sage pork sausage and it turns out delicious. Any other seasoned sausage would probably be pretty good. Just adds more flavor. Make sure it sounds like the spices in the sausage will go good with thyme and rosemary.

  46. OMG, I’ve been making sawmill gravy for over 40 years and never thought to put any seasonings in it besides salt and pepper. Which tastes good, but the very small amounts of these 3 spices really takes it over the top. Thank you for that!
    AND for the technique of adding the flour directly to the browned meat. I’d been using the French method of making a roux with the pan drippings and flour, cooking that for a few minutes, then adding the milk. But to get a good mix you almost have to use a whisk, which is another dirty utensil. But adding the flour directly to the sausage (I still cook it for a couple minutes) and then adding the milk is so quick and easy, and comes out PERFECT.
    So yeah, thanks for this great recipe and technique!

Left out the Rosemary since I was out & the red pepper flakes due to picky eaters & the flavor was still amazing. Can’t wait to try it as written with the homemade biscuits.     Wowowowow! I made this for dinner yesterday. Used mild Italian bulk sausage and it turned out great! Sauce is silky and fla orful. Not too salty either…lets the salt from the biscuit pop through. YUM.

    One of my husband’s favorite breakfasts is sausage gravy and biscuits. I’ve tried a few recipes over the years and came across this one yesterday. I made it for him this morning and he loved it!     So I’m making this for the first time yesterday, first time ever making biscuits and gravy, first time ever making gravy. So I bought sausage links and thought I could just mash em all up, little did I know that wasn’t the way of going about it. So I squeezed all the sausage out from the outside layer and everything was going fine until I tasted it. Soni thought out a little more seasoning in it. And I did this about three times and I couldn’t figure out what I did wrong and why it was so floury tasting and then I read the recipe again and was like Ohhhh 2 tablespoons not 2 cups of flour…. So today day 2 of trying to cook this recipe and I friggen nailed it!!! So amazing!!! I friggen love this recipe!!! Not everyday does anyone ever hear of an Asian guy cooking biscuits and gravy, until now!! No more rice for breakfast for this guy!!

She picked this one so I made it and she loved it! i was also surprised at how good it tasted. I don’t usually eat that heavy of a breakfast but I wanted to try it. It was delicious!     I had a hard time getting this to thicken and ended up adding two more teaspoons of flour. It took a lot longer to make because I was waiting for it to thicken. Other than that it was a pretty good and easy recipe.

    All of our neighbors have made us biscuits and gravy for years. We finally reciprocated with this recipe a few weeks ago. They all felt like we were holding back all this time. It has such great spice and really does make the best gravy. We are going to try to freeze some of the gravy this time because if we share again, the neighbors will know why we have been putting on the lbs. Lol. This IS the best.. if you like a spicy gravy.     1. Yes it does! Make it and refrigerate it or freeze it. Reheat in a saucepan. You will want to add a splash of milk or cream to thin in out a little and then add additional spices to make up for that.

    My wife has wanted to try this four days and begged me to make it. I will start by saying, I had to start cooking when she became disabled and have had to learn how to Cook many meals. It is not a joy of mine, but has become a necessity. I will say this, we just finished eating the meal and she had the biggest smile and exclaimed, “Oh my god baby, this is delicious” I loved it myself. It was easy, which I love. Great recipe, try it. We had to use 3 cups of milk and 1/4 cup of flour, I didn’t have half & half. Thanks mother-in-law.

    I have to refrain from making this every weekend. My husband goes crazy over this recipe. The biscuits are PERFECT and the gravy is on point. GREAT recipe!
