Lasagna Soup made with ground beef, sausage, spinach and three types of cheese!  The perfect easy dinner for those cold winter nights!

We are in soup mode at our house and surprisingly, my kids have been loving it.  This lasagna soup was a huge hit as was Creamy White Chicken Chili and even Authentic New Orleans Gumbo (not truly a soup but a total winner!).

I guess the only positive thing about cold winter temperatures is that you can continue cooking warm comfort food and soups, like this delicious Lasagna Soup! This soup is seriously yummy! .  This tastes just like lasagna, but in soup form, so how could it not be amazing?!

How to Make Lasagna Soup:

1. Brown the meat. In a large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper as you cook. Drain grease and remove meat from the pot.

2. Cook onion and garlic.  In a large pot heat olive oil over medium heat. Toss in diced onion and sauté for about 5 minutes, stirring occasionally. Add in minced garlic and cook for another minute or two.

3. Add sauce and spices.  Stir in tomato paste, marinara sauce, spices, and broth. Return meat to the pot.

4. Add lasagna noodles.  Bring the pot to a boil then add lasagna noodles (broken into 4ths) to pot and reduce heat to medium-low and cook, stirring occasionally, until noodles are tender. Add spinach, if using.

5. Combine cheeses.  In a small bowl, stir together mozzarella, Parmesan and ricotta cheeses.

6. Serve warm.  Ladle the hot soup into bowls, and dollop a scoop of the cheese mixture on top. Garnish with fresh basil.

Make ahead and freezing instructions:

To make ahead: Make the recipe up to step 4.  Do not add the noodles to the pot.  Store the soup in the refrigerator.  When ready to serve, start at step 5, bringing the soup to a boil and cooking the noodles at that point. Serve with a dollop of cheese.

To freeze: Freeze lasagna soup without the cheese.  Place soup in a freezer safe container and freeze for 2-3 months.  Thaw in the refrigerator overnight and reheat slowly on the stovetop.  If you are making this recipe specifically for freezing, you may choose to make the noodles fresh once ready to serve (see make ahead instructions).

Store lasagna soup covered, in the refrigerator for 3-4 days.

Other Variations of Lasagna Soup:

  • Vegetarian Lasagna Soup:  Omit the sausage and ground beef and add more chopped vegetables to step 3 (cooking with onion and garlic). I recommend zucchini, mushrooms, and yellow squash.
  • Vegan Lasagna Soup: Omit the sausage and ground beef and add more chopped vegetables to step 3 (cooking with onion and garlic). I recommend zucchini, mushrooms, and yellow squash.  Substitute the cheese with homemade cashew ricotta.
  • Pasta substitutions: Substitute any type of pasta for the broken lasagna noodles!

    We have a new family favorite!!! this dish was excellent! i wanted to try the manara recipe linked above.. squishing the tomatoes with my hands was so therapeutic.. and easy!! The one big thing i did differently was to put the soup in a casserole dish, add the cheese mixture on top, and baked it in the oven for 15 mins at 400 deg.. we could not stop eating it!!!

    This turned out so good! I had 1lb of ground turkey on hand so that’s what I used. But I bet it would be even better with sausage instead. I also used frozen spinach because that’s what I had. Next time I’ll definitely cut the noodles a little smaller just so they fit on the spoon easier. But I’ll definitely be making this again!

I’m feeding my daughter and 4 of her college volleyball teammates today, and I am so thrilled with how this turned out! DELICIOUS! And, I don’t say that lightly. So much flavor and depth!     Made this for the family last week and wow – it was a total hit with everyone!! So easy to customize, and so flavorful! I love the added color AND nutrients that the spinach provides, and for those with picky eaters they will likely not even know they are eating spinach!     Hubs and I give this a thumbs up! Good winter soup to add to my list. The cheese dollop is key and you only need a small tablespoonful. It tempting to sprinkle extra Parmesan but skip to enjoy the lasagna flavors.

    Soup is absolutely delicious. I got confused while making soup. Under ingredients it says noodles broken into pieces but under directions it says broken into fourths. I broke noodles into fourths and they were way too big to eat with a spoon. Next time I will do pieces.

    This was amazing! I had to tweak it since we have dairy and egg allergies in this house, but it still came out incredible. I’m not usually a leftover person, but the leftovers were great! Definitely adding this to our dinner rotation!

    Excellent recipe. This was delicious! The only thing I did different was use Mafalda shaped pasta because it looks like mini pieces of lasagna noodles. It saved me a step in breaking up whole lasagna noodles. This will be going into my soup rotation. Thank you for the recipe! 🙂

    I made this recipe with ground chicken instead to avoid red meat. Definitely still delicious. I will say that braking the lasagna noodles into only 4ths makes it hard to eat. In the future I will likely be substituting a more bite sized noodle. But that’s just my preference! Still a wonderful soup!

    Hi!
    I made this lasagna soup recipe tonight for dinner. Followed your recipe to a T. Ok, not totally. I used left over lasagna I had.
    I made the marina sauce following your recipe too.
    My daughter don’t like soup… She LOVED it and ate a second bowl!
    My son said it was so flavorful, so good!

  21. Really easy and flexible to substitute with what you have on hand. I used 93% lean ground beef, browned with some olive oil and cooked the onions with the beef to keep from using another pot. For the broth, I used knorr chicken tomato bouillon cubes and water. Very good and just as satisfying (well almost!) as a lasagna.

    1. Yes, you could make it in the slow cooker! Cook the meat first, but then add everything to the crockpot and cook for several hours if you’d like. Add the noodles closer to eating as they’ll probably take 30-45 minutes or so to cook.

    I started my soup in the morning and simmered it all day to create depth of flavor. I also added a can of whole tomatoes with juice that I crushed (the whole tomatoes have the most flavor). I added the spinach at the very end after turning the stove off. That added a nice brightness.

    Wow! This recipe is amazing!!!!!!!!! I did add double the ground beef and I added about 5 big carrots with the onions to sauté for extra veggies. Whole family loved it and can’t wait to make again!!

    This was delicious! I saw some people saying that it wasn’t overly soupy, but that can be remedied by adding water/broth. I personally prefer a thicker soup with more solids so this was perfect! Definitely making this again!

  28. I would recommend cooking the cheese mixture a little bit not just as a Dollup like you would do a sour cream. Italians would prefer it like it was in a lasagna, not an afterthought.

    My soup did not get soupy either. Followed directions, but did add the vegetables suggested for vegan lasagna. Tasted great. I considered turning it into a lasagna. I liked it better the second day. Dry enough to serve it on a plate, used extra cheese with it and it was great. Gave it three stars because it really wasn’t soup. 5 stars for taste. Bread was a necessity, I think it needed crunch.

    Yes yes yes!!! My favorite dish as a soup. Cant get any better than this. I couldn’t wait to make this dish once I saw it. Looking for an excuse to make a delightful warm cozy soup night but nothing popped up until tonight! Absolutely delicious. I didn’t have dry basil only fresh so I added extra beside garnish and it took the soup that is already so delicious to the next level.       Loved it, and my partner and his family loved it!
      Definitely cut the amount of stock if you want it to be less liquidy, the first time I made this I did 3 cups of vege stock. The second time I made this I doubled the recipe and I used 5 cups chicken stock. Chicken stock definitely had a much nicer flavour than vege stock in my opinion but it’s personal preference.
      Ricotta where I live is expensive so I just made a bechamel / cheese sauce I found from a regular lasagna recipe and I dolloped that on top. Spinach was out of stock in my supermarket so I substituted with broccoli.
      Also I used canned tomatoes but with seasoning (e.g canned tomatoes with basil and oregano or basil and garlic, etc) so that I didn’t have to add herbs (saves time!)

      Will definitely be making again, such a nice dish in Winter

    I made the lasagna soup last night and it was terrific! I’m going to add it to my fall favorites recipes. It would make a fun, heart warming dish on a cool October night. A few things, DO add (the optional) spinach. And also I added only 5 cups of chicken broth and extra marinara sauce. I didn’t make my own sauce this time. I just used Prego old world style meat sauce and it worked out just fine.

    This was absolutely delicious!! Instead of taking the meat out of the pot once it was cooked I just left it in & added the chopped onion and the minced garlic & it came out just fine. I did add a cup less of chicken broth, slightly more red pepper flakes & added a whole box of lasagna noodles because i wanted it thicker. Definitely going to be adding it to our rotation.

    This was amazing. I used the homemade marinara sauce recipe with fresh herbs, frozen homemade chicken stock and frozen spinach. I started the marinara then prepped the soup ingredients, browned the meats and put them in a bowl, drained most of the fat leaving some to saute the onion/garlic, threw onion/garlic in meat bowl, put frozen chicken stock in pot and stirred till melted. By this time the marinara was done so I added the sauce/paste & meat to the stock pot, cooked the pasta, added the fresh herbs at the spinach step, and stirred till spinach thawed.

    I made this last night. It was sooo good. I did it in the instant pot & cooked the noodles separately so I could freeze leftovers. I added splash of basalmic vinegar. Also some of us are on low carb diets. Since I didn’t have ricotta cheese I used crumbled goat cheese. (my son & DIL raise goats so she makes cheese and shares with me. ) I say ADD the spinach, it really makes the soup even more special. Lots of lasagna Soup recipes out there, but we like this one the best. Thanks

    made this tonight and my only future alteration would be to use some other kind of noodle. the soup itself was fantastic, but with such big pieces of noodle i didn’t know whether to serve it with a fork or a spoon. the soup itself is watery and perfect for a spoon, but those noodles need more help than that… lol. i will absolutely be making this again, just different pasta! thank you for sharing!

    I love this recipe. I omitted the red pepper flakes. The spicy marinara was spicy enough. I added bread crumbs and an egg to the meat mixture, then made meatballs. I used bow tie pasta. I added chopped zuchinni when I added the noodles. I added an egg to the ricotta mixture, then cooked it in the microwave. I let it cool a little to firm up. We put scoops on top of the soup.   61. Second time I’ve made this, and I jazzed up the marinara recipe and soup itself with additional spices (garlic powder and garlic salt, onion powder, red pepper flakes (in the marinara, too), a dash of Italian seasoning, and white mustard)

    It’s so good and definitely staying in rotation!

      Absolutely! I’ve seen a bunch of videos where they add a huge heaping spoonful of it into the soup and then top the bowls off with it as well. Definitely makes it creamier!

    Made multiple mistakes with this recipe and still came out fantastic. I found this recipe after realizing that I needed to use up mushrooms and ricotta, and I didn’t have time to make my veggie lasagna. I’m happy with how straightforward this was to make.     I have read so many recipes about lasagna soup and had to finally try yours out. I made a few minor adjustments to fit what I already had (spaghetti sauce instead of marinara) and added my frozen chicken broth which I always keep for recipes. I used less oregano and Italian seasoning since my sauce was already wonderfully flavorful. I also used rotini noodles and had the cottage cheese/mozzarella blend to top it. It was TOTALLY AWESOME!!     Fabulous soup! Typically think soups are better next day when flavors have time to settle, but this was amazing straight from the stove. My husband prefers cream based soups, so to please him, I added 1/2-3/4 cup cream. Perfect. Although, with the ricotta-mozerella-park cheese mixture for dollaping, cream is not necessary. This soup will now be in our fall/winter rotation.

    So good and easy to make. I used ground turkey and added a dash of heavy cream at the end. Next time I may just used bow tie pasta for fun 🙂 Will definitely be making again

  76. After looking for a long time, I finally decided on this Lasagna Soup recipe and it did not disappoint! I always make my own marinara, added extra seasonings, extra garlic, extra spinach, used BTB beef broth, broke my noodles smaller and doubled the recipe. It made a lot, and was a HUGE hit in my lasagna loving home. The cheese mixture was wonderful…added a little garlic powder and parsley to that. I will definitely be making this again.

    Made this for the first time I’ve never made lasagna soup. I’ve always made baked lasagna but wow is this delicious over-the-top! I love soup to begin with so I’m not surprised I really enjoyed this! I used veggie ground round crumbles by MorningStar farms and some vegetarian sausage but otherwise followed the recipe exactly and I used a good jar sauce, absolutely delicious thank you for the great recipe!

    THIS WAS DELISH!!! The only thing I did different is use cottage cheese instead of ricotta cheese cuz hubby doesn’t like ricotta. Next time I’ll just buy different noodles because the lasagna noodles broken up we’re still too big. But we LOVED this soup! Thank you!

  83. Omw this soup was great I made it cause I suck at making traditional lasagnas so I gave this a try my whole family was like that just sounds nasty but I gave it a shot. I made a huge pot just in case well it lasted maybe 6 hours and everyone wanted more. I told them all don’t knock sumn till yeahv tried it

    This is excellent! A local diner advertised their lasagna soup so I had to attempt to make our own! It was perfect and approved by my husband, as well as two sometimes hard to please teenagers! The only thing I’d do differently is add more spinach next time! Thanks for sharing this recipe!

    Made this tonight…first time. Excellent. Used ground beef and had 1 leftover chicken sausage. Delicious and filling. I will precook the noodles next time and break them up smaller. Did add spinach ( hiding veggies for hubby). Bringing a bowl over to my elderly neighbor too.

    This was delicious and the perfect way to use up the end of a box of lasagna noodles! I went the extra mile and used my homemade sausage in this recipe. So good! Definitely five stars!

    I was thinking there might be too much cheese involved here when I was finishing up cooking, but I was wrong about that. Is there ever too much cheese? Not likely. Haha 🙂 Thank you for the meal inspiration!

    Delicious, delicious! Making it again. This time, will add the black beans as someone also tried. I personally mixed most of the cheeses into the soup just before serving, leaving just a little dollop in the middle of the bowl about the size of a half dollar. Wanted that cheesy goodness found in every bite. 😁 Sooo good!

    I found this Recipe in an internet search and just wanted to try it. I doubled the batch and i’m so glad I did! Served it with a loaf of garlic bread and it was an instant hit! It came out awesome. Thank you so much for a great hearty meal.

    Wow did we love this soup! We should have doubled it. I prefer ground turkey so i used that as the meat. I also didn’t have spinach on hand. Other than that, we followed the recipe. So good. Saving this baby!
