Lasagna Soup made with ground beef, sausage, spinach and three types of cheese!  The perfect easy dinner for those cold winter nights!

We are in soup mode at our house and surprisingly, my kids have been loving it.  This lasagna soup was a huge hit as was Creamy White Chicken Chili and even Authentic New Orleans Gumbo (not truly a soup but a total winner!).

Lasagna Soup with a scoop of ricotta cheese on top and a spoon in the bowl.

I guess the only positive thing about cold winter temperatures is that you can continue cooking warm comfort food and soups, like this delicious Lasagna Soup! This soup is seriously yummy! .  This tastes just like lasagna, but in soup form, so how could it not be amazing?!

How to Make Lasagna Soup:

1. Brown the meat. In a large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper as you cook. Drain grease and remove meat from the pot.

2. Cook onion and garlic.  In a large pot heat olive oil over medium heat. Toss in diced onion and sauté for about 5 minutes, stirring occasionally. Add in minced garlic and cook for another minute or two.

3. Add sauce and spices.  Stir in tomato paste, marinara sauce, spices, and broth. Return meat to the pot.

Browned meat in a dutch oven with tomato sauce and chicken broth added.

4. Add lasagna noodles.  Bring the pot to a boil then add lasagna noodles (broken into 4ths) to pot and reduce heat to medium-low and cook, stirring occasionally, until noodles are tender. Add spinach, if using.

5. Combine cheeses.  In a small bowl, stir together mozzarella, Parmesan and ricotta cheeses.

Cooked lasagna noodles in a pot of soup and a small bowl of ricotta and mozzarella cheese on the side.

6. Serve warm.  Ladle the hot soup into bowls, and dollop a scoop of the cheese mixture on top. Garnish with fresh basil.

Make ahead and freezing instructions:

To make ahead: Make the recipe up to step 4.  Do not add the noodles to the pot.  Store the soup in the refrigerator.  When ready to serve, start at step 5, bringing the soup to a boil and cooking the noodles at that point. it back up on the stove.  Serve with a dollop of cheese.

To freeze: Freeze lasagna soup without the cheese.  Place soup in a freezer safe container and freeze for 2-3 months.  Thaw in the refrigerator overnight and reheat slowly on the stovetop.  If you are making this recipe specifically for freezing, you may choose to make the noodles fresh once ready to serve (see make ahead instructions).

Store lasagna soup covered, in the refrigerator for 3-4 days.

Other Variations of Lasagna Soup:

  • Vegetarian Lasagna Soup:  Omit the sausage and ground beef and add more chopped vegetables to step 3 (cooking with onion and garlic). I recommend zucchini, mushrooms, and yellow squash.
  • Vegan Lasagna Soup: Omit the sausage and ground beef and add more chopped vegetables to step 3 (cooking with onion and garlic). I recommend zucchini, mushrooms, and yellow squash.  Substitute the cheese with homemade cashew ricotta.
  • Pasta substitutions: Substitute any type of pasta for the broken lasagna noodles!

I just made this tonight. I did not use spinach and used cottage cheese in the cheese topping. This is delicious! I will have to try it with the spinach next time. This is definitely a keeper! Thanks for the recipe.

Made multiple mistakes with this recipe and still came out fantastic. I found this recipe after realizing that I needed to use up mushrooms and ricotta, and I didn’t have time to make my veggie lasagna. I’m happy with how straightforward this was to make. Delicious meal. My 2yo had a second bowl. (She’s usually a fan of anything pasta and cheese related.)

I have read so many recipes about lasagna soup and had to finally try yours out. I made a few minor adjustments to fit what I already had (spaghetti sauce instead of marinara) and added my frozen chicken broth which I always keep for recipes. I used less oregano and Italian seasoning since my sauce was already wonderfully flavorful. I also used rotini noodles and had the cottage cheese/mozzarella blend to top it. It was TOTALLY AWESOME!! Thanks for sharing. ❤

Made this for a crowd this weekend. It got rave reviews! We don’t eat pork so I used all ground beef and it still turned out so flavorful!

Fabulous soup! Typically think soups are better next day when flavors have time to settle, but this was amazing straight from the stove. My husband prefers cream based soups, so to please him, I added 1/2-3/4 cup cream. Perfect. Although, with the ricotta-mozerella-park cheese mixture for dollaping, cream is not necessary. This soup will now be in our fall/winter rotation.

So easy to make & absolutely delicious. I used Rao’s tomato basil marinara so it was super quick. Only change I made was less ricotta as hubby isn’t a fan. I think I’ll sneak in more next time since he enjoyed the flavor!

This is definitely one of my favorite soups! Highly recommend using the homemade marinara sauce too. So good!

  9. Super excited to try this recipe. Have it simmering right now for dinner tonight. I made double the recipe so we can freeze a bunch for easy weeknight meals. What would be the serving size for those nutrition facts? I’m tracking on WW so would be helpful to know. thanks!

So the hubs (Mark) loved this even better a few days after we made it!!! This is delish and I’m making for the 2nd time tonight! Cheers to a great dinner recipe, used what we had on hand, added mushrooms and used homegrown kale instead of spinach! Found you from Becky at AcreHomestead.

I made this for a soup luncheon at my school. It was gone by 10:45 a.m. Everyone asked for the recipe and requested that I bring to our next food function! Thanks for sharing this! I’ll probably never make actual lasagna again.

So good and easy to make. I used ground turkey and added a dash of heavy cream at the end. Next time I may just used bow tie pasta for fun 🙂 Will definitely be making again

  15. After looking for a long time, I finally decided on this Lasagna Soup recipe and it did not disappoint! I always make my own marinara, added extra seasonings, extra garlic, extra spinach, used BTB beef broth, broke my noodles smaller and doubled the recipe. It made a lot, and was a HUGE hit in my lasagna loving home. The cheese mixture was wonderful…added a little garlic powder and parsley to that. I will definitely be making this again.

  16. Delicious!!! I needed a quick dinner & the family LOVED IT! I added a few extra cups of spinach to lighten it up since I used some spicy sausage. I can also see zucchini & mushrooms being a lovely addition. A+

SOOOOO delicious!! I used Rao’s marinara as I was crunched for time and this is honestly one of the best soups I have ever had.

Made this for the first time I’ve never made lasagna soup. I’ve always made baked lasagna but wow is this delicious over-the-top! I love soup to begin with so I’m not surprised I really enjoyed this! I used veggie ground round crumbles by MorningStar farms and some vegetarian sausage but otherwise followed the recipe exactly and I used a good jar sauce, absolutely delicious thank you for the great recipe!

This was amazing, my boyfriend & I will be adding this to our regular fall/winter meal rotation. So delicious, & the homemade marinara recipe was worth the extra tiny bit of effort!

This was amazing! Just did 1lb of ground beef and used 1/2 box of bow tie pasta because that’s what I had. Super easy to make!

THIS WAS DELISH!!! The only thing I did different is use cottage cheese instead of ricotta cheese cuz hubby doesn’t like ricotta. Next time I’ll just buy different noodles because the lasagna noodles broken up we’re still too big. But we LOVED this soup! Thank you!

  22. Omw this soup was great I made it cause I suck at making traditional lasagnas so I gave this a try my whole family was like that just sounds nasty but I gave it a shot. Terrific recipe! Easy to follow and very customizable. Flavors were spot on and the best part was the creamy, cheesy goodness at the bottom of the bowl. My entire family gives this recipe 5 stars!

This is excellent! A local diner advertised their lasagna soup so I had to attempt to make our own! It was perfect and approved by my husband, as well as two sometimes hard to please teenagers! The only thing I’d do differently is add more spinach next time! Thanks for sharing this recipe!

  27. 5 stars
Made twice. 2nd time for friends. They loved it as did we. Never making pan lasagna again. This has same ingredients and flavor but less labor intensive. Thank you!

Made this tonight…first time. Excellent. Used ground beef and had 1 leftover chicken sausage. Delicious and filling. I will precook the noodles next time and break them up smaller. Did add spinach ( hiding veggies for hubby). Bringing a bowl over to my elderly neighbor too.

Followed the recipe exactly and it turned out GREAT!! Made some garlic bread to go with it, WHAT A MEAL!!

  30. 5 stars
Our favorite soup and now in our weekly rotation. Easy and delicious!! Serve it with warm garlic bread- yum!

  31. 5 stars
This recipe was super yummy and amazing!! I used turkey meat and it still tasted yummy. Now my family is requesting to have it once a week! Thank you for the recipe!

  32. 5 stars
This was delicious and the perfect way to use up the end of a box of lasagna noodles! I went the extra mile and used my homemade sausage in this recipe. So good! Definitely five stars!

I was thinking there might be too much cheese involved here when I was finishing up cooking, but I was wrong about that. Is there ever too much cheese? Not likely. Haha 🙂 Thank you for the meal inspiration!

  33. 5 stars
Delicious, delicious! Making it again. This time, will add the black beans as someone also tried. I personally mixed most of the cheeses into the soup just before serving, leaving just a little dollop in the middle of the bowl about the size of a half dollar. Wanted that cheesy goodness found in every bite. 😁 Sooo good!

Can you help me understand the calorie content? What is the estimated caloric content per serving?

I love this recipe! I used ground turkey instead. Everyone in my family loved it! Definitely will make again.

Wow did we love this soup! We should have doubled it. I prefer ground turkey so i used that as the meat. I also didn’t have spinach on hand. Other than that, we followed the recipe. So good. Saving this baby!

  37. This is honestly one of my very favorite soups to make in the fall and winter! I love how easy it is to throw together and cheese stirred in deserves all of the heart eyes!!!
