Oatmeal Cookie Bars Mean Business!
I don't know anyone who has tried these Oatmeal Chocolate Chip Cookie Bars and not immediately fell in love. They're so easy to make and I love the chewy texture from the oats. We don't skimp on the chocolate either.

How to make Oatmeal Chocolate Chip Cookie Bars:
Make Cookie Dough: With a hand mixer or stand mixer, beat together the butter, brown sugar, and white sugar until smooth and light. Mix in eggs, one at a time, then add vanilla. In a separate bowl, combine the salt, baking soda, baking powder, flour, rolled oats, and 1 cup chocolate chips. Pour the dry ingredients into the wet ingredients and stir until combined. Add remaining chocolate chips.
Bake: Press cookie dough into greased pan with parchment paper then bake at 350°F (180°C) for 25-30 minutes, or until golden brown. Let it cool completely before cutting and serving with a cut and serve turner.

Oatmeal Chocolate Chip Cookie Bars
Equipment
- Stand Mixer , optional
Ingredients
- 1 cup butter (227g), room temperature
- 1 cup light brown sugar (220g), packed
- 1/2 cup granulated sugar (100g)
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 cups all-purpose flour (188g)
- 2 cups old-fashioned rolled oats (170g)
- 2 cups chocolate chips (340g) semi-sweet, milk chocolate, or a little of both!
Instructions
- Preheat oven to 350°F (180°C). Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.
- Beat Butter and Sugar: In a large mixing bowl beat together the butter, brown sugar, and granulated sugar until smooth and light.1 cup butter, 1 cup light brown sugar, ½ cup granulated sugar
- Add the eggs one at a time, mixing after each addition. Add the vanilla.2 large eggs, 2 teaspoons vanilla extract
- Mix Dry Ingredients: In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour and rolled oats.½ teaspoon salt, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 ½ cups all-purpose flour, 2 cups old-fashioned rolled oats
- Combine: Add dry ingredients to the creamed mixture and stir until combined. Stir in chocolate chips.2 cups chocolate chips
- Bake: Press into prepared pan and bake for 25 to 30 minutes or until golden brown. Allow to cool completely before cutting.

Oatmeal Cookie Bars Mean Business!


These are some of my favorite bars of all time. And so easy to make. I bake mine for 27 minutes. Definitely be sure to let them cool if you plan on taking them anywhere or else they won’t be set, but when it’s just me I love digging in right away.

I have now made this recipe twice, and twice, it’s not come out very good. I wanted to prove it wasn’t my own fault which is why I made it again. You know, before the internet, when I used old fashioned cookbooks, i rarely had a recipe turn out wrong. But now, relying on internet recipes, I’d say around 40% of the time it isn’t quite right. I put that down to the person who posts the recipe not being accurate in their instructions, or being too vague. Or trolling. Ha ha, I gotcha. I gave you wrong info and your whole recipe got ruined. Because this recipe needs to bake for 45 minutes minimum, and even when you put foil on top, the top of the bars gets very brown. Also, when you put foil on, the chocolate chips you put on the top stick to the foil. I will not make this one again. In fact I plan to switch back to old fashioned cookbooks. Because you can rely on them. Not online recipes written by clowns.
I’m sorry they didn’t work out for you. Whenever you put foil over baked goods, it’s always a good idea to “tent” it, so it doesn’t get stuck to the top of anything. Also, I wonder if your oven is calibrated to the right temperature? And were you using a metal pan (not glass). Metal will conduct heat better, and the bars shouldn’t take 45 minutes to cook.
The great thing about blogs (rather than cookbooks), is you have access to reader reviews, you can contact the author for help, and there’s usually a much more detailed recipe, step-by-step photos, and a full video tutorial to help guide you.
I’ve made these in the past as written and they were delicious!! Wondering If I wanted to add peanut butter to this recipe , how much would I add and would I reduce the butter? Thanks
Made these today and really enjoyed them. Made a half batch and at the 15 minute mark- I covered with foil and cooked an additional 10 minutes. I loved them. They would have been too dark if I wouldn’t have covered them. Yum! 😍 Came out great! Delish 🤤
Wonderful recipe. I also cut the recipe in half and baked them in a 9×9 metal pan for 23 minutes. The bars came out perfect.

These are delicious. I cut the recipe in half for my husband and I. The oatmeal makes the cookie so chewy and soft. Mixing of the chocolate chips adds a great flavor. Will definitely make again. I love bars because they are so easy.

I have made these so many times now!!! They are delicious!! I add a big spoonful of peanut butter when I mix the butter and sugars and it’s amazing! Definitely 100% recommend.
Do you think these would work if I subbed white chocolate morsels and added blueberries? I am always looking for new ways to use my favorite berry and this batter sounds awesome.
