This chocolate Brownie Truffles recipe is made from scratch, easy to make, and one of our favorite holiday treats! They are fudgy, soft, and completely addicting!

How to make Brownie Truffles:

Make Brownies: Prepare and bake brownies according to recipe instructions. Do not over-bake them! This recipe works best with soft and warm brownies so they’re easy to roll into balls.

Form Into Balls: Once brownies have cooled enough to handle, use a fork to crumble them up. Scoop 1 heaping tablespoon into your hands and press together to form into a ball. Should make about 35 balls.

Melt Chocolate: Place chocolate chips in a double boiler (I make my own by placing a heat proof bowl over a pot of simmering water), or in the microwave, stirring often until melted and smooth.

Dip In Chocolate: Drop brownie balls into the bowl of melted chocolate and use a fork to coat it on all sides, then lift up and allow excess chocolate to drip off into bowl.

Enjoy: Place brownie bites on prepared pan and top with sprinkles if desired. Allow brownie truffles to set up at room temperature, or refrigerate for a few minutes until chocolate sets.

Make Ahead and Freezing Instructions:

To Make Ahead: Make this brownie truffles recipe ahead of time and store in the fridge in an airtight container for up to a week.

To Freeze: Place brownie balls in an airtight freezer safe container or bag and freeze for up to one month.

Notes

Chocolate: It’s essential to use high quality chocolate chips, like Guittard or Ghirardelli so they melt smoothly (other chocolate chip brands will not melt well). You could also use high quality chocolate bars or Bakers chocolate
Brownies: we prefer to make homemade brownies, but a box mix would work as well.
Make Ahead Instructions: Make these ahead and store in the fridge in an airtight container for up to a week.
Freezing Instructions: Place brownie balls in an airtight freezer safe container or bag and freeze for up to one month.

    The melted chocolate chips were difficult to cover the brownie balls. It’s too thick and doesn’t come out very smooth, so I covered everything with sprinkles. They taste ok though

  2. Very easy and simple- and an absolute hit! I dialed them up a notch by adding caramel bits in the middle while rolling them into balls. They did not last long at the party I brought them to! Great recipe!

    These came out beautifully! So simple to make. I did bake about 10 minutes longer, because the batter didn’t seem to want to set, but still very moist. I had a little trouble with the dipping chocolate when I used the butter, so ended up using a little bit of shortening to thin it out.
    All in all, very good! I just went and got a cookie scoop and I’m fixing to make more 😉

    I feel like i did something wrong. My brownies were extremely greasy when I went to roll them. I baked until the stick in the center came out clean which was about 25 minutes. the crumbs tasted moist. They are in the freezer now. I will see what happens after they are frozen and chocolate covered.

  5. I’ve been making brownie balls for years now, both box mix and homemade, and everyone loves them. I make one addition after the brownies are baked by mixing in chocolate frosting, it makes them extra fudgy. I also use a food processor to break up the brownies, its quick and efficient and you don’t have to cut off the edges, unless you just like to eat them.

    These are great…and addictive! I have one problem with them–after I coated them, and the coating was set, little bits of oil seeped through the chocolate coating. Is this a normal thing?

    When you melt the chocolate and butter be sure to add a couple splashes of milk because it is a really thick substance with just the chocolate and butter

  9. I’m a little confused! I am using boxed brownie mix. How much chocolate do I melt AND do I add butter to the melted chocolate for the dipping???? PLEASE

    1. Hi Nanette, you can use a boxed brownie mix, Crumble the brownies after they cook and roll them into balls. Freeze them for 20 minutes.
      Melt the 12 oz bag of chocolate chips and the 3 tbsp butter together, and then dip the brownie balls in them.

  10. The consistency of my brownies looks NOTHING like pictured. Does the recipe call for (4) 4oz bakers bars? I followed exactly and mine have a really strong chocolate flavor. Haven’t dipped them yet!

  12. Have these in the oven now, after 20 minutes they are still soup! Followed the recipe, but they are not turning out at all. The edges are baking but the center is still liquid. The batter tasted really good though!

  13. Okay, so cake balls and Oreo truffles typically have frosting or cream cheese to bind the crumbs together into balls prior to dipping. No binding agent here? Is it that the brownies are moist enough to hold form on their own?

    1. Hi Janelle, yep, as long as the brownies aren’t overcooked, they will hold together great because of their own fudgey/moist texture 🙂

  15. Im confused as to what chocolate to melt in the microwave? The chocolate chips or the bakers chocolate? Rhe recipe doesnt speicify only says chocolate.

      1. Both get melted in the microwave. The bakes chocolate first, for the brownies. The melted chocolate chips are for dipping the brownie balls in. 🙂

            Update… they are AMAZING!!! I had to add a stick of butter to make the melted chips the right consistency to dip the brownie balls; next time I’ll get blocks of semisweet chocolate.

    1. Hi Trish, I would only freeze the brownie part–not the completed dipped chocolate brownie–you could freeze the brownie part and then dip them the day of.
      Also, I’ve stored the dipped truffles in my fridge for the past week and they’re still amazing!

        1. You could try freezing them whole–the chocolate just may not defrost very well. I haven’t done it for that reason but you could try!
