My Mom's Peach Blackberry Cobbler is so easy to make, with juicy summer peaches and sweet blackberries, baked under a golden, buttery topping. It's an easy, crowd-pleasing dessert that's perfect served with a scoop of vanilla ice cream!

This Peach Blackberry Cobbler will be the highlight of your summer with sweet peaches and blackberries under a buttery, golden biscuit topping. It's always a crowd pleaser.

Peach Blackberry Cobbler Disappears Before It Even Cools Down

I mean, peaches and blackberries together in a cobbler is just a no brainer, winning combination. I based this recipe off of my famous Peach Cobbler (which has been one of the most popular desserts on here for over a decade!). It's one of those desserts that looks impressive but is quick and easy to throw together.

Obviously fresh peaches is best, but you could use bottled peaches (or quart-size canned peaches from the store). Top it with vanilla ice cream and it totally SLAPS!

How to make Peach Blackberry Cobbler:

Prep Peaches: Add the sliced peaches, sugar, salt, and lemon juice to a saucepan. Heat and stir on medium heat for just a few minutes, until the sugar is dissolved and some of the juices have released. If you are using canned peaches, skip this step. Learn all of my tricks for easily peeling peaches!

Melt Butter and Make Batter: Preheat oven to 350°F. Slice butter and place in a 9×13 inch baking dish. Place in the oven just until the butter is melted. Mix the dry ingredients then stir in the milk just until combined. Pour the batter on top of the melted butter.

Top with Peaches and Blackberries: Spoon the peaches and juice on top of the batter. Place the blackberries on top around the peaches. Generously sprinkle cinnamon on top.

Bake and Serve: Bake at 350°F for 38-40 minutes. Serve this peach and blackberry cobbler recipe warm, with a scoop of ice cream, if desired.

Ingredients 
 

  • 5 peaches, , peeled, cored and sliced (about 4 cups)
  • 1/3 cup granulated sugar
  • 1 tsp lemon juice
  • 1/4 teaspoon salt
  • 1 1/2 cups blackberries, , or a 12 oz container

For the Batter:

  • Prep Peaches: Add the sliced peaches, sugar, lemon juice, and salt to a saucepan and stir to combine. *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
    5 peaches, ⅓ cup granulated sugar, 1 tsp lemon juice, ¼ teaspoon salt
  • Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
  • Melt butter: Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9×13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
    6 Tablespoons butter
  • Make Batter: In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
    1 cup all-purpose flour, 1 cup granulated sugar, 2 teaspoons baking powder, ¼ teaspoon salt, ¾ cup milk
  • Add fruit: Spoon the peaches and juice (or canned peaches, if using) over the batter. Arrange blackberries with peaches. Sprinkle cinnamon generously over the top.
    1 ½ cups blackberries, ground cinnamon
  • Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

Notes

Canned Peaches: To substitute canned peaches, use 1 quart jar, undrained.
Gluten Free: Use gluten-free flour, I personally really like the Cup4Cup brand.
