If you’ve ever had chicken divan, it may have looked a little different than this, but this is the only version I’ve ever really known, and it was one of our go-to family favorite recipes growing up!
Traditional chicken divan is loaded with cheese, sour cream and bread crumbs, but I far prefer this version!. There’s so much flavor in the yummy sauce and this is a super easy dish for a weeknight meal.
Creamy chicken curry sauce layered over rice, chicken and vegetables. Even though it’s a “skinny” version, the boys always love it! This is one of my oldest brother’s favorite meals, and one of Jeff’s favorites too!
6-7 chicken tenders, cooked and cubed
3 cups cooked white, brown or wild grain rice
1 large head of fresh broccoli, steamed
1 can cream of chicken soup
1/2 cup light mayonnaise or plain greek yogurt
1 1/2 tsp lemon juice
1 tsp curry powder
Spoon rice into a casserole dish. Layer grilled chicken tenders on top of the rice, followed by stemed broccoli pieces.
Make the sauce by mixing the cream of chicken soup, mayo or yogurt, lemon juice and curry powder. Pour sauce on top of casserole. Bake at 350 F for 20-30 minutes.
