Cozy season starts with these Pumpkin Cupcakes

I find any excuse to make Pumpkin Cupcakes! My kids love to help pipe on the frosting and top each one with the festive pumpkin candy. Plus, you can make the cupcakes and frosting ahead of time! I like to freeze the cupcakes in an airtight container, for up to one month or so. And, how cute are these cardboard cupcake boxes? They're perfect for bringing cupcakes to any event.

Normally make carrot cake for my son in law’s birthday, but decided to make these instead. Everyone absolutely loved them. Especially the cinnamon cream cheese frosting. ♥️

I just made a triple batch of pumpkin cupcakes and they were delicious! I didn’t make the frosting, but the cakes were delightful. They rose properly and held their shape. Baked for 20 minutes and used pumpkin pie spice rather than the recommended spices, since that’s what I had on hand. This recipe is a keeper!

The timing is way off for me, which is unusual. I baked them for 25 minutes and they’re still underdone. I’m not in a high altitude area or anything. They taste really good though!
