Easy and delicious Peanut Noodles recipe made with udon noodles tossed in a simple homemade peanut sauce. You can make them spicy or milk, and the best part is they’re made with pantry ingredients and on the table in less than 15 minutes!

How to make Peanut Noodles:

Prepare Pasta: Cook noodles according to directions. Drain, reserving ½ cup of the pasta water.

Make Sauce: Combine peanut sauce ingredients in a mixing bowl. Add hot pasta and toss to coat. Add a little reserved pasta water, to thin the sauce, if needed.

Serve: Garnish with peanuts, chopped green onion, and fresh herbs.

Recipe Variations:

  • Add Protein: Cooked shrimp, chicken, tofu, tempeh, edamame, or top with a fried egg (my favorite!)
  • Add Veggies: Spiralized, or thinly grated carrot, and cucumber would add beautiful color and crunch.
  • Noodles: Use anything you have: ramen, spaghetti, etc.
  • Nut Free: Substitute tahini for the peanut butter.
  • Peanut Butter: Try almond butter, or use tahini for a nut-free option.

Ingredients
 
 

Peanut Sauce:

  • 1/2 cup creamy peanut butter*
  • 1/4 cup low-sodium soy sauce , or tamari
  • 3 Tablespoons rice vinegar
  • 2 1/2 Tablespoons honey*
  • 2 1/2 Tablespoons sesame oil
  • 1 teaspoon freshly grated ginger
  • 3 cloves garlic , minced
  • 2 Tablespoons chili oil * for mild, or add more for extra heat

Garnishes:

  • 2 green onions , chopped
  • 2 Tablespoons dry roasted peanuts , chopped
  • Sesame seeds , roasted
  • 2-3 Tablespoons fresh cilantro , chopped
  • 2-3 Tablespoons fresh basil leaves , chopped
  • 2-3 Tablespoons fresh mint leaves , chopped

Instructions
 

  • Cook noodles according to directions. Drain, reserving ½ cup of the pasta water.

Notes

Yield: Makes about 4 cups.
Udon: I like to use the refrigerated fresh udon noodles that you just heat and serve. They often come in smaller packages (for example, I buy two 7.5 oz packages, to make this recipe and serve 4). Discard seasoning package.
Chili Oil: Could substitute 2 Tablespoons of another hot sauce, like Sambal Oelek or chili paste.
Honey: Could substitute agave or granulated sugar.
Variations:

    My spouse made the sauce this afternoon. I cooked up some thin whole-wheat spaghetti. No shopping needed today.
    I took Lauren’s advice and topped each portion with a fried egg. Atop the egg I sprinkled scallions, mint, and basil from my garden.
    It was delicious. This will be a go-to meal, but I won’t have those garden herbs in January!

    Quick and easy base recipe for peanut noodles- it was great for a fast meal and it’s very versatile. I added peanuts, cilantro, basil and some purple cabbage. Any of the protein recomendations sound great too! It’s also kid approved which is always a plus! 👍

    I saved this recipe and forgot about it until your email today, so we had it for a nice light lunch. It was very tasty and flavorful with a little kick from some Chinese Zing sauce (chili oil). I used crunchy peanut butter and had this with some leftover chicken breast that was marinated with a spicy teriyaki sauce, and broccoli cooked with ginger and garlic. I wish I had some fresh herbs to add as a garnish.

    Amazing! If you like savory peanut butter dishes then you have to try this. I served it with a side of broccoli to complete the dish. Adding chicken would be a good idea to add some extra protein, too!

    SO yummy! We added all the toppings-veggies, herbs, and chicken. Just the noodles and the sauce would have been delicious, but it was extra good with all the toppings. Very versatile for kids with their own preferences.

    These peanut noodles were EXACTLY what I was craving. They’re rich and creamy and a little sweet, but a subtle heat comes through with the chili oil to balance it all out. I topped with fresh basil, dry roasted peanuts, and sesame seeds. An added bonus is the fact that since udon noodles cook so quickly you can whip up this high quality dish in all of fifteen minutes—which is perfect for someone who often winds up making dinner at 9pm.

    literally just got back from the gym, opened my email, seen the monthly challenge & accepted lol had everything on hand… this was ssoooo delicious, made it in less than an hour w shrimp i ran under water to defrost quick & fried eggs (as you suggested), used vermicelli noodles & only had green onions so used extra of it to give the freshness of the missing herbs ididnt have & to cut through the peanut butter taste, also used Sriracha in place of the chili oil… next time i will save more pasta water bc it was a bit dry, which was my fault… this might most definitely become a staple of mine, my 2 toddlers & man devoured it!!
