No Bake Millionaire Pie is a Retro Classic

Even though Millionaire Pie is an old-fashioned recipe, I hadn't had it until recently. It actually reminds me of an ambrosia salad, in pie form. Every bite hits that perfect combo: tangy pineapple, sweet cherries, and a little pecan crunch tucked into a homemade graham cracker crust. It’s no-bake, make-ahead friendly using pantry staples, so I can just stash it in the fridge, and magically pull it out to serve.

How to make Millionaire Pie:

Whip Cream Cheese and Cream: The cream cheese needs to be at room temperature so that you can mix it until smooth. Then add the cream and extracts. Don't overwhip the cream–you just want medium-stiff peaks.

Make Pie Filling: When you mix condensed milk with lime juice and zest, a chemical reaction occurs that helps thicken and firm up the condensed milk, which will allow the pie to set up, and allows us to cut a slice without it being a sloppy mess.

Add pineapple (be sure to strain it really well so it’s not very wet), cherries, coconut and pecans. Fold in the whipped cream mixture. 

Fill Pie Crust: Scoop the cream filling into your graham cracker crust.

Refrigerate for several hours before serving. You can then garnish with extra whipped cream and maraschino cherries, if desired.

Ingredients
 
 

  • 1 graham cracker pie crust
  • 14 oz can sweetened condensed milk
  • 1 lime , zest and juice* (about 2 ½ tablespoons)
  • 15 oz can crushed pineapple , drained well, more for topping if desired.
  • 2/3 cup chopped Maraschino cherries
  • 2 Tablespoons maraschino cherry juice
  • 1 cup sweetened shredded coconut flakes
  • ½ cup chopped pecans
  • 1 cup heavy whipping cream
  • 4 oz cream cheese , softened
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract

  • Mix Cream Cheese and Cream: Beat cream cheese until smooth. Add cream and extracts and mix until medium/stiff peaks (don’t overmix).

  • Millionaire Pie Filling: In a separate bowl add condensed milk, lime juice and zest and mix well. Add pineapple (be sure to strain it very well so it’s not very wet), cherries and cherry juice, coconut, and pecans. Fold in the whipped cream mixture.
    14 oz can sweetened condensed milk, 1 lime, 15 oz can crushed pineapple, 2/3 cup chopped Maraschino cherries, 1 cup sweetened shredded coconut flakes, ½ cup chopped pecans, 2 Tablespoons maraschino cherry juice
  • Add filling to graham cracker pie crust, smoothing into an even layer.

  • Refrigerate for several hours before serving.
    1 cup heavy whipping cream, ¼ cup powdered sugar
  • Topping: whip the heavy cream and powdered sugar until stiff peaks. Pipe or spread on top of pie and garnish with more maraschino cherries, if desired.

Notes

Lime Juice: This is essential to help thicken the sweetened condensed milk and allow the pie to thicken and set.
Nuts: Can omit for nut allergies.
Make Ahead Instructions: Millionaire pie can be made 1-3 days ahead of time, stored covered in the fridge.
