Mix Cream Cheese and Cream: Beat cream cheese until smooth. Add cream and extracts and mix until medium/stiff peaks (don’t overmix).
1 cup heavy whipping cream, 4 oz cream cheese, 1 teaspoon coconut extract, 1 teaspoon vanilla extract
Millionaire Pie Filling: In a separate bowl add condensed milk, lime juice and zest and mix well. Add pineapple (be sure to strain it very well so it’s not very wet), cherries and cherry juice, coconut, and pecans. Fold in the whipped cream mixture.
14 oz can sweetened condensed milk, 1 lime, 15 oz can crushed pineapple, 2/3 cup chopped Maraschino cherries, 1 cup sweetened shredded coconut flakes, ½ cup chopped pecans, 2 Tablespoons maraschino cherry juice
Topping: whip the heavy cream and powdered sugar until stiff peaks. Pipe or spread on top of pie and garnish with more maraschino cherries, if desired.
