This easy Mini Meatloaf recipe is made with ground beef or ground turkey and topped with a delicious meatloaf sauce. They cook faster, are easier and healthier than traditional meatloaf.

Why I love this meal:

  • Fast – Making meatloaf in a muffin tin is easier to make and faster to cook than regular meatloaf.
  • Make Ahead – This meatloaf is easily prepped in the morning or even the night before, making dinnertime way less stressful. I also like to make extra and freeze the individual portion sizes for future quick meals.
  • The Sauce – The homemade sauce only has four simple ingredients and couldn’t be easier to whip up. It takes this meal over the top with how delicious and flavorful it is!

How to make Mini Meatloaf:

Combine Meatloaf Ingredients: In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.

Press Into Muffin Tin: Divide the meat among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.

A scoop of meatloaf mixture in each compartment of a muffin pan.

Make the Sauce:  Mix all ingredients in a small bowl. Once meatloaf has cooked for 15 minutes, remove them and blot out any grease in the muffin cups. Spoon the sauce over them.

Return to oven for 10-15 minutes until cooked through.  Serve mini meatloaf muffins with a side of Perfect Mashed Potatoes or this Apple Pecan Salad.

Healthy Meatloaf?

These easy mini meatloaf muffins are only 140 calories made with lean ground beef or about 120 calories made with ground turkey (that’s including the sauce!). I often use ground turkey instead of ground beef because once I add the sauce, my family really can’t tell the difference.

Make Ahead, Freezing, and Storing Instructions:

  • To Make Ahead: Combine meatloaf ingredients and then press into a muffin tin. Cover with plastic wrap, and refrigerate until ready to bake, or up to overnight.
  • To Freeze: Grease muffin tin and press meatloaf mixture into each. Cover and “flash freeze” for about an hour.  Carefully remove each partially frozen meatloaf muffin and place them in a freezer safe container.  Freeze for up to 3 months. When ready to bake, place the frozen servings back in muffin tin and allow them to thaw completely in the fridge. Then bake as instructed.
  • To Store: Place the cooked muffins in a container in the refrigerator for 3-4 days.

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl (using your hands, meat chopper, or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
  • Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
  •  In the meantime, in a small bowl mix together all of the ingredients for the sauce.  
  • Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
  • Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
  • Serve with mashed potatoes and any extra sauce.

    My kids LOVE these. They are already meatloaf eaters, but they love these little individual ones. I use my homemade BBQ sauce in this recipe and substitute it for the sauce on top as well. So yummy and I love how it cooks so much faster than typical meatloaf.

    I can’t figure out what I did wrong, mine came out so greasy but I followed the recipe to the letter. I even removed them from the tin after the first 15 min, drained off the pooled grease, then returned them to the oven again as directed. They didn’t get any nice crispy edges like I’d hoped because of the steaming effect.

    Will try again to see if I can solve the problem by doing the second bake out of the muffin pan. Really love the idea of portioned meatloaf because my two guys eat an entire loaf otherwise, and then we have no leftovers for meal prep!

    Thank you for this recipe! It was excellent, as is. I didn’t make any changes. We’re empty nesters, so no picky kids to accommodate, but I make this for my Mom who has the beginnings of dementia and no longer cooks. She loves it, and I love that it’s easy to make, serve and freeze. I’ve always used oatmeal in my meatloaf recipes, and the Panko bread crumbs in this make it more dense and less crumbly. It’s a keeper!

    These were very simple to make, using ingredients I had on hand. Everything mixes in one bowl! Love that. They were very good, I made a double batch, the sauce makes A LOT, I think next time I would double the mini meatloaf recipe and keep the sauce a single recipe. I do think I over baked mine, I baked for 15, out for topping, then 15 more minutes, ours were very well done. Haha. But we still gobbled them up. The main reason I didn’t give 5 stars was clean up!! It was not fun getting all that grease out of the muffin pans or washing the pans out after. Other than that, it was a very simple, hearty, tasty recipe.

    Made these for dinner last night with some roasted vegetables and mash potatoes and oh my goodness they were so yummy. The sauce that goes on top was one of the best I’ve tasted on a meatloaf in ages even with how simple the ingredients are.     When my 33 year old son was a little boy I would get home from work, make a quick batch of drop biscuits from scratch, make the filling usually with ground turkey then line the tins with the dough and fill them up with the seasoned ground meat, and top with a slice of sharp cheddar. We called them Burger Biscuits!

    Sooo good!
    I had to adjust cooking times slightly as mine looked a little bigger than yours. I used a thermometer to make sure the internal temp was 165f. These are super greasy. I did pre-spray the pan which after the amount of grease left behind I don’t think it was necessary. My boyfriend ate one before it even got to the dinner table. I will for sure be adding this to my weekly rotation.

    1. I use to make mine like this too and agree too greasy…I now just shape mine in mini loaves and bake them on a cooling rack tha sits inside a rimmed cookie sheet lined with foil. The fat drips off and foil makes easy clean up. They came be frozen too

    Didn’t make these in tins (I have cupcake tins and was thinking muffin tins were larger) but I love Tastes Better From Scratch recipes and just made little loaves.

    So. So. So. Good.

    It is kind of a sweet meatloaf (which is just fine for my sweet tooth!), but i definitely understand if some would prefer to cut on the sugar in the sauce. I served it with lemon pepper green beans and while it might sound like a weird combo, it actually went really well together. I’ll make it with potatoes next time, but I was just working with what I had on hand tonight.

    So happy for another winner! Feels a lot lighter than regular meatloaf, too 🙂

  45. I found this recipe about a year ago and make it often, definitely have added it to my repertoire. My husband is a chef and does most of the savory cooking (I am the baker in the family) – he enjoys this recipe when I make it and adds the mashed potatoes. I have even used the mini mini muffin tin when I use 2 pounds of beef and a little left over. Just like little poppers, they are actually really yummy if you are looking for a protein snack.     This was the quickest and best turkey meatloaf I have ever cooked! I have a great recipe for cooking turkey meatloaf that my family loves, but it just takes too long to prepare and too long to cook.     This was a great idea for many meatloafs. Usually I’ll just make mini meatloafs and put it on a baking sheet. The only thing that I would do differently is there’s too much sugar in here. I followed the topping part and even left out some of the sugar especially that brown sugar and it was still too sweet. So if you are looking for a sweet recipe for meatloaf this is the one for you. If you’re looking for a recipe that tastes like regular meatloaf this is not the correct way to do it. I think what I did was the barbecue sauce had sugar in it the ketchup had sugar in it everything had sugar in it in terms of sauces that you added to the meatloaf or the topping. I would do probably no sugar and then add that brown sugar in there. Overall I’m still going to give it a 5-stars for the fact that I never thought to use a muffin pan. The meatloaf part other than the sauce was excellent. I think the sauce added too much sweetness even though I only added a few tablespoons. I will continue to use this recipe because it was great but modifying the sauce with other no sugar condiments. Thank you! 🙂

    These got rave reviews from my family. My kiddos who doesn’t love meatloaf loved these. I discovered didn’t have BBQ sauce so used A1 sauce and then at the last minute omitted the chili powder because I wasn’t sure if it would be weird with A1 sauce.     These turned out *fantastic,* this is our new go-to meatloaf recipe. I did not have BBQ sauce, so I used A1 instead. The only thing I’d do next time is do 1 1/2 times, or double, the sauce to heat and add on top of mashed potatoes.   55. I don’t have a standard muffin pan as mine or jumbo size I guess but that should be fine right? It will just make fewer of them and I’m sure you could also use those aluminum mini loaf pans as well?
    Also, do you think it would be OK to open the egg? Or keep the egg and omit the breadcrumbs? I have different reasons for both of those questions.
    Anyway, looking forward to trying this For a freezer meal.

    1. Yes, that will work with a larger man (just cook slightly longer). The egg and breadcrumbs just act as binders. You could omit one of the other and be fine, or use a replacement like a “flax-egg” for the egg and gluten-free bread or cracker crumbs.

    Yum. If you use lean meat make sure to add a little extra sauce to the meat. This recipe was delicious and I used a little olive oil spray, I was surprised it didn’t stick to the pan at all. Great recipe!

    OMG I loved this recipe!
    I do not enjoy cooking AT ALL, but this looked so good! I have always loved the ends & edges of regular meatloaf so you can imagine how thrilled I was to see this version!
    I did change it up a bit as I only had Progresso Italian bread crumbs. I also did not add mustard. Lastly, I also cut up a green bell pepper to add like my grandmother used to!

    I changed the sauce as well. Again, like my grandmother I just used ketchup & a whole lot of brown sugar.
    I never comment on recipes but this was FABULOUS!! I will definitely cook this again! I also appreciate the info on freezing as it will come in handy! Thank you for sharing this recipe!

    Great recipe, very easy and quick to bake. My one substitution was celery instead of onions. I thought the sauce was a bit too sweet, will cut down on the sugar next time or try BBQ sauce instead of sugar as others have suggested. I liked the chili powder in the meat mixture very much!

    I cut the recipe in half since there is just the two of us. And I substituted impossible burger for the ground beef. Came out great. Got a thumbs up from my husband who also ate the leftovers for lunch the next day.

    These were fun to make and eat, but not fun to clean up the muffin tins afterwards (I almost threw them away!!!!) I also did not have the ingredients for the sauce but made my own up and was delish – used a small Spicy Sriracha sauce from Chickfila in it!

    Soooo good! The sauce is boss! My brother said it was better than mom’s (but of course we didn’t tell her that 😉 I used regular breadcrumbs that I had on hand and made mini loaves on a sheet pan. I’ll definitely make more sauce next time as everyone wanted more for both the meatloaf and baked potatoes I served it with. I’m a newbie with cooking, and this is definitely one to add to my recipe stash. Simple and delicious! Thanks for sharing it!

    Made this tonight. My kids scarfed it down with no complaint. I did substitute onion powder (2 tsp) for the onion for a kid who won’t eat something if she thinks she can see an onion. It’s going into my monthly rotation. Super easy for portion! I didn’t use the sauce, and it was still really good, and we didn’t miss it.

    The hubs and I both loved this recipe. Just made a few changes. I added some garlic powder, a little bit of lemon pepper, and a little Kitchen Bouquet and omitted the chili powder, since I only like that in my chili.
    Otherwise I kept the rest the same as recipe.
    It was delicious! And will be on my menu rotation.

    I served it with mashed potatoes, and broccoli, and Hawaiian rolls , very pleased that it was so easy to make and didn’t take forever to cook all the way through. Will be making this regularly.

    Made these 4 or 5 times now. everybody loves them, including my mother-in-law who comes for over for dinner just to eat these. Maybe I should make them less…

    I experimented with turkey gravy, but not as good as the barbecue sauce in the recipe.

    I did stuff the meatloaves with a third of a cheese stick and/or a babybel, for molten cheese when you cut into them. It’s really yummy. Kids love them.

    Hi! I’m not a very good cook but I haven’t given up yet on finding a recipe for meatloaf that I can make and enjoy. I’ve been trying to find one that’s not only easy j to make, but tastes good so I don’t have to waste it. I found this one on Pinterest. I only have a mini loaf pan, so I just used that. I have to say, I could actually really enjoy this one!! There is only one change I will have to make with the next batch is to just don’t add any chili powder. I’m a big wimp when it comes to spice.

    I also enjoyed the glaze. Thanks for the tip to remove the fat the has come up to the top. The glaze stayed where I told it to 😁 and it came out perfect. It wasn’t too sweet and no one ingredient overwhelmed another. Thank you so much for a recipe that I look forward to making again and again!

    My husband was in the mood for meatloaf so we decided to try this recipe and we are so glad we did. First let me say that I did not grow up eating meatloaf so I definitely have my reservations regarding any meatloaf. These meatloaves came out perfectly and they we’re all quickly gobbled up.     Thanks for such a quick & easy recipe that I used in a pinch and that my entire family really enjoyed! I didn’t have any panko or bread crumbs so I just crushed up some Ritz crackers really fine and omitted the salt. I also spooned more of the jarred bbq sauce I used in the recipe (Head Country original) on top of the loaves since it’s a family favorite. I served it with peas and mashed sweet potatoes and the meal was a hit! I will definitely be making it again and again.

    We had these last night. Very good! I had something similar in the past that were large patties on a baking sheet. I was a little hesitant to do these in my muffin tin, but they cooked so well (very evenly). I chose not to make the sauce as directed, because I felt like it was a lot of sugar (just personal preference). Instead, I just eyeballed some Worcestershire sauce and ketchup, but next time I think I’ll give the sauce in the recipe a try.

    1. Definietly! You will need to increase the cook time significantly. I would check it at 50 minutes but it may take closer to 60+ minutes.
