German Pancakes was one of my favorite breakfasts growing up, and I've loved watching it become one of my kids' favorite breakfasts now. They love how the german pancakes puff up in the pan while they cook in the oven.

Top them with powdered sugar and syrup and they're to die for!

What are German Pancakes?

German pancakes, often called Dutch Baby pancakes are baked pancakes made from eggs, milk, flour and vanilla. The pancakes are baked in a metal or cast iron pan, puff up in the oven and then fall as they cool.

How to make German Pancakes:
  1. Add 5 tablespoons of butter to a 9×13 inch baking and place it in your preheating oven to melt.
  2. Meanwhile, add the eggs, milk, flour, salt and vanilla to a blender; cover and blend until smooth. Pour batter into the baking dish, over the melted butter.

3. Bake until the edges are golden brown and puffy, about 22-27 minutes.

4. Serve warm, sprinkle generously with powdered sugar and syrup.

I've found that the pancakes puff up more when baked in a metal pan, but a glass pan also works.
We love to serve German pancakes with homemade pancake syrup and powdered sugar, but many people like them served with fresh squeezed lemon, butter or fruit toppings.

  • Preheat oven to 425 degrees F. 
  • As oven preheats, put the butter in an un-greased 9x13-in. metal baking dish and place in oven, just until melted.  
  • Place the eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into baking dish, over melted butter. 
  • Bake, for 22-27 minutes or until edges are golden brown and puffy.
  • To serve, sprinkle generously with powdered sugar and syrup

Notes

Gluten-free Adaptations: Use gluten-free flour, I personally really like the Cup4Cup and the King Arthur Measure for Measure brands.

My brother and I made these together in the 70s when we were both under 10 years old. We absolutely loved how they puffed up. I’ve been making them ever since. I will say, a blender is nice, but not necessary. I use a whisk and it is far from perfectly smooth and it comes out delicious. Imagine 2 kids making this! Trust me, even without a blender, it comes out very nicely.

The texture will be different. If you’re trying to make it gluten free we recommend the Cup4Cup and the King Arthur Measure for Measure brands.

Soooooooo delish and a quick prep for the win! The kids have proclaimed this is their favorite breakfast. We make two pans for our family of 5 (sometimes we have leftovers) and serve with strawberries, maple syrup and a little sprinkle of powder sugar. Thank you for sharing your family recipe!

So i tried to bake this german pancake, exactly as directions indicate, and it came out dry, flat, and overly crispy. Clearly baked too much, or so i think. I noticed it looked ready at the 14 minute mark, but i was afraid the center wouldn’t be cooked through, so i let it bake for the minimum 22 minutes. Suggestions?

We are so sorry it didn’t turn out as expected! Sometimes that can happen if the batter was over-mixed (it allows extra air to get in and dry it out) or sat on the counter after blending for a while before pouring in the pan. Make sure the pan is plenty hot and you pour the batter in the pan immediately after blending. Let us know how it works out next time for you!

I took mine out at about 15mins and was perfect. I just went by the golden colour and the middle was firm to the touch. Hope you try it again Denise.
