Guys, I’m happy to inform you (if you haven’t heard already) that February is National Hot Breakfast Month! I’m sure you can relate to crazy weekday mornings where you’re trying to get everyone dressed and ready for school or work. In our house it’s early, busy, and I hardly have time to make a piece of toast for myself. Seeing as breakfast is my FAVORITE meal of the day, a little piece of toast just doesn’t cut it! So, to ease the pain, I’ve fully embraced “brinner”: breakfast for dinner.

- 4 red potatoes chopped
- 3 tablespoons olive oil divided
- Salt and pepper
- 1 7oz package Jones Dairy Farm All Natural Golden Brown Sausage Links or Patties, chopped
- 1 bell pepper chopped
- 2 cups fresh spinach
- 4 eggs
- 1 tablespoon water
- 1 tablespoon butter
