Egg and Sausage Brinner Bowls | Tastes Better From ScratchGuys, I'm happy to inform you (if you haven't heard already) that February is National Hot Breakfast Month! I'm sure you can relate to crazy weekday mornings where you're trying to get everyone dressed and ready for school or work.

In our house it's early, busy, and I hardly have time to make a piece of toast for myself.  Seeing as breakfast is my FAVORITE meal of the day, a little piece of toast just doesn't cut it!  So, to ease the pain, I've fully embraced “brinner”: breakfast for dinner.

  • 4 red potatoes, chopped
  • 3 Tablespoons olive oil, divided
  • salt and freshly ground black pepper
  • 7 ounce package Jones Dairy Farm All Natural Golden Brown Sausage Links or Patties, , chopped
  • 1 bell pepper, , chopped
  • 2 cups fresh spinach leaves
  • 4 large eggs
  • 1 Tablespoon water
  • 1 Tablespoon butter
  • 1 avocado, , peeled, seeded and sliced
  • 1 cup Pico de gallo or salsa
