This easy Breakfast Casserole recipe is made with eggs, sausage, and cheese and only takes a few minutes to throw together. You can make it ahead of time, so it’s the perfect breakfast casserole for Christmas morning or any day!

Breakfast Casserole

So, I always thought I had the best breakfast casserole recipe (this overnight breakfast casserole that we make a few times a year).  I recently learned I was mistaken, because this breakfast casserole right here really is the BEST!

And, although I still really love the other recipe, this one is more of a traditional breakfast casserole, with tons of eggs, and it’s fantastic!  Plus, you can still make it the night before so it’s perfect for holidays and special events where you don’t have a lot of time to prepare in the morning.

I adapted this recipe from my sister Jessica over at Pretty Providence. I added a couple extra eggs, some milk, left out the mushrooms and cut the amount of bell peppers in half. The great thing about this recipe is how adaptable it is! It’s delicious with other types of cheese like pepperjack or Swiss, or you could try adding more veggies, like spinach or zucchini.

How to make easy breakfast casserole:

The main ingredients for this egg casserole are really simple and include: eggs, sausage, bell peppers, onion, and cheese. We add sour cream and milk to the egg mixture to make it creamy, light and fluffy.

To make the casserole combine the eggs, sour cream, milk, cheese, and salt and pepper in a large bowl.

Next, cook the sausage, breaking it into small bits as it’s browning.  Set it aside and then saute the bell peppers and onions in the same pan. Add everything to the egg mixture and stir to combine.  Pour it into a 9×13” pan and bake for 35-50 minutes or until the edges are set and the center is a little jiggly in the center. It will continue to cook and set up as it cools.

After baking, leftover egg casserole can be stored in the fridge and enjoyed within 3-4 days. Leftovers are delicious reheated in the microwave.

Can I make this breakfast casserole ahead of time?

Yes, you can make this breakfast casserole a day ahead, or freeze it to bake another day!

To make one day ahead of time, prepare everything as directed, up until baking. Cover the casserole and store it (unbaked) in the refrigerator overnight or up to one day. Bake in the morning, according to recipe instructions.

To freeze breakfast casserole prepare the recipe and add to your pan. Cover well with plastic wrap and then tinfoil and freeze for 2-3 months. Allow it to thaw overnight in the refrigerator, and then let it come to room temperature before baking according to recipe instructions.

Ingredients
  

  • 2 pounds pork sausage
  • 12 eggs
  • 1 cup sour cream (light or regular)
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions
  • 1/2 green bell pepper , diced
  • 1/2 red bell pepper , diced
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees. Spray a 9x13’’ pan with cooking spray.
  • Combine the eggs, sour cream, milk, cheese and salt and pepper in a large bowl. Mix on low speed with electric mixers, just until combined.
  • Heat a large skillet over medium heat. Add sausage and cook until browned, breaking it into small pieces with a wooden spoon as it cooks. Drain most of the grease and add the sausage to the bowl with the egg mixture.
  • Add the bell peppers and onion to the same skillet the sausage was cooked in and sauté for 2- 3 minutes. Add to the bowl with the eggs and stir everything to combine.
  • Pour mixture into greased 9x13’’ pan and bake for 35-50 minutes or until the edges are set and the center is just barely jiggly.
  • Leftover egg casserole can be stored in the fridge and enjoyed within 3-4 days. Leftovers are delicious reheated in the microwave.

    I have made this several times: going by the recipe, halving the recipe, adding O’Brien potatoes — all very good. I was wondering about subbing bacon for sausage. I have bacon in the freezer I am needing to use up from “home-raised” pigs (already used my sausage stash). Other casseroles I have done seem to work regardless of whether the sausages OR the bacon. Just wondering. I do not recall seeing this answered in the notes above the recipe; but I might be wrong.

    I am always looking for recipes I can do that aren’t complicated. The other factor I appreciated about this recipe was no potatoes. This recipe was simple and I have to say it was a major hit with my family. This one will definitely be saved and used again and again. I made another for tomorrow morning for guests who are here. My only question is can I just put casserole directly from fridge to the oven in the morning or should I let casserole sit out of fridge for a bit to warm.up ?

    Better than any of the casserole dishes we have made or eaten! My wife and I halved the recipe and substituted canned green and red peppers for the added punch they give. We also didn’t need the milk because of the fluid in the peppers. Truly delicious!

  13. I made this one day ahead for Christmas morning and it was indeed a hit. The only problem I had was when I cooked it, I kept the foil on. It was in the oven for an hour and still very liquidy. Am I supposed to bake uncovered? Should it get to room temperature first? I removed the foil, turned up the heat and not too long after it was done. Very delicious. I am going to make for New Year’s Day morning, and attempt to make it for two days ahead in the fridge. Any advice would be great. I used all red pepper and super delish.

    Made this today with veggies I had on hand (orange bell pepper, spinach and jalapeño ) and only used 1lb of sausage. I cooked sausage in the skillet and then added it to the egg mixture to mix and then poured back into skillet. Baked for 35 min and it came out good. Next time I may do 25 minutes and let sit for 10.     I used Greek Yogurt instead of sour cream, Yellow onion instead of green, added 2 minced cloves of garlic to the saute, and used Chicken sausage meat from wholefoods, instead of Jimmy Dean. Will be making again!!!!!! Thank you for the wonderful recipe.

  20. I use O”Brien hash brown potatoes (peppers & onions included) baked in the pan first, then the mixture poured over. Leftovers get cut into hot dog sized portions and then frozen ready for breakfast taco filling, a Texas thing.

    1. Helpful to know. The last time when I made this casserole, I added O’Brien diced potatoes. I forget how long (extra) I needed to bake it — I think that one thing I will do next time is use a slightly larger casserole dish than I did. I think I used an 8×8 when I should have used a 9×9.

    I made this casserole for my a Christmas office breakfast. EVERYONE loved it. It looked just like the pictures and tasted great. I cooked mild Italian turkey sausage and the peppers the night before and then assembled everything in the morning. EASY.     I’m going to be catering a brunch and would like to know if the breakfast casserole can be made in a large foil pan without during the eggs dark?

      My recipe includes torn pieces of day old (or oven-dried) bread in the bottom and omits the sour cream (I definitely have to try that though!), and I make it every year for Christmas in a big foil pan. The eggs have never darkened, but I’m not sure what would happen of the bread wasn’t there.

  23. Loved the recipe for breakfast casserole (without bread but with sausage). Used it for Thanksgiving and adapted on your site for 4 people vs 12. Today all I am able to do is adapt it for 12, 24, 36. Am I missing something or can you tell me how I can adapt it to a lower number than 12. Thank you so much for your help.

  24. Hello. I’m planning on making this breakfast casserole on Sat morning. I know your recipe instructions calls for a glass 9×13 dish but is it possible I could you a disposable aluminum 9×13? I would just leave the pan at the brunch I am going to. This recipe looks great.

  27. Looks great I think I will add hash browns, mushrooms and spinach to this as well. I love doing breakfast bakes. You can add pretty much what ever you want. If you choose to add hash browns to yours you may have to add more eggs to saturate the entire thing.

    I just returned from a long weekend in MS for a Family Reunion. One cousin fixed this for breakfast last Saturday morning (11/04) and we all loved it! We were begging for the recipe. Thank you for making it easy to find.

  33. I like the idea of high-protein, low fat, very low carbohydrate recipes as I am reformed from being a 192kg [422 pounds] person. 80kg [186 pounds] off and down to body fat of 24.2% [from 47.8%] in six years.

    I replaced your 12 eggs with just 4 eggs and 200mL of liquid egg whites. I dropped the two cups of cheese to just one. I replaced the two pounds of pork sausage with 1kg of finely diced lean pork.

    I also added an extra 50% of each of the “bell peppers” [called capsicums here in Australia]. And I went for 3/4 of a cup of light sour cream.

    Calories and fat were significantly lower. Protein was a bit higher. Carbs went up to 4 grams. All good and tasted great.

    Served with a scoop of thin spring onion rings.

    Was looking for just a simple, quick and tasty egg bake and found this recipe and that’s exactly what I was looking for. I did have to make some changes only due to what I had on hand at home, which I didn’t have sour cream but used onion and chive cream cheese which I softened in microwave before mixing into eggs, used ham instead of sausage cause that’s what I had for meat, then added a few pieces of cubed up bread cause I can remember when my grandma would make egg bake, that’s what she did.     1. I didn’t add any salt because I figured the sausage would add enough saltiness and added just a pinch of ground pepper. It was just right for my and everyone else’s taste. If that helps.

  51. Hi! Trying to figure out a serving size for the calorie count. Approximately how many servings does this make? Or if you know grams per serving that would be even better!

    1. there are 12 equal servings in the 9×13″ pan the casserole is baked in. The recipe says there are 385 calories per serving. Cut your casserole into 12 pieces. Lift one out and place in your scale, let all of us know how many grams a serving is, others may want this info also.

    Love this recipe! I can’t always get fresh vegetables that are good, so I keep 12oz bags of frozen three peppers and onion blend on hand. I’ve made this recipe several times with fresh and frozen vegetables. Today was a frozen kind of day. Added one whole bag to my skillet as my sausage was finishing frying up.   56. I think 2lb of sausage is an error, one of those Jimmy Dean packs is 1 lb and that’s the perfect amount for 12 eggs

    1. It’s not an error–we always add 2lbs because we like it with the extra meat. You can use less if you want!

    Made this for a church breakfast. I know these recipes can generally handle add-ins. I was wondering about adding diced potatoes OR about adding the diced potatoes that already have the peppers, etc, and then dropping the peppers in the recipe? I’m not the world’s greatest kitchen eperimenter, and so I depend on feedback for when I think of “straying.”

    I added extra peppers, mushrooms, and jalapeno, and forgot to add cheese into the eggs but it turned out perfect (easy to sprinkle cheese on top of it later when serving). The sour cream gives the eggs a great fluffy texture most egg casseroles are missing. I served it with hot sauce! Next time I might add some spinach too…very versatile recipe that is easy to adapt.

I substituted Turkey Sausage in the recipe above; used ham, cheddar, caramelized onion and yellow bell pepper; and spinach, sun-dried tomato and feta.     Big hit at Easter brunch. I did 1.5 times the recipe for a large crowd and used a 10×14 casserole dish. I was concerned the edges would dry out before the center finished cooking, so during the first 15 minutes or so I pulled it out of the oven and stirred the edges toward the center. Came out perfect. I used bacon and sausage, and 2/3 sharp cheddar and 1/3 smoked Gouda.

      I, and three others, made this for a church Easter breakfast today. We made them the night before. This morning the casserole seemed like it firmed up a bit overnight. All the casseroles baked well and were the right consistancy. // I like that I did not have to make bread cubes.

    2. I pre-made it the night before and baked the next morning. The mixture’s consistency didn’t seem to change during the time it was in the fridge. It is liquidy, but not too much because of everything else in the mixture. Once you mix it up before pouring it in the baking dish, it evens out.

    This is a very good base recipe, very flexible, based on what’s in your kitchen.

    I made this for a church, ladies’ brunch, and got rave reviews.

    I lightened it up by using about a pound of cooked sausages (chicken mozzarella basil, and some other stuff in my freezer), and added sauteed chopped onions and a zucchini (in thin quarter slices). I also used whatever cheese I had (mostly mozzarella and some mexican blend).

    I was very pleased with the result, I’ll use this recipe again.

    I’ve tried so many breakfast casseroles, most were really good, some were just ok, and a few were great. This one tops them all! I recommend using sharp cheddar and use Tennessee Pride sausage. Cook the sausage a little slower on a slightly lower heat. Bake it for 37 minutes and let it cool for about 10-12 minutes. You are going to love this breakfast dish!

    I wanted something for a bridal brunch that could be cut into small squares. I made two of these. One with sausage, I only used one roll of sausage, I used 1/2 tsp salt, but would cut that back to 1/4 tsp if using sausage. I cooked it 45 minutes, which made it a little drier. The second one was my favorite, I left out the meat, and used gruyere cheese. I cooked it 35 minutes – perfect. Moist, but well set. I did use 1/2 tsp salt for this one. I used kosher salt. I also used 1/4 tsp ground pepper for both casseroles. We all tasted and loved the trial run of this recipe. It is so easy, and the one with gruyere will be a hit at the shower. Thanks for a keeper recipe.

      Just an update to my post. The casserole was a big hit at the bridal shower. It looked so pretty. I made two, and before I could get in line for the food, I saw my sister removing the first empty dish and setting out the second one. Several people asked for the recipe, and it was raved over.       1. Do you add extra time when you start with the casserole from the refrigerator, as I know that with other casseroles, I start with a cold oven. Doing this for Easter breakfast.

        1. You may want to add a few extra minutes–just check on it and take it out when the center is just barely set and not jiggly.

    Made this for Christmas day work potluck, we are in healthcare so I knew nothing was going to be open. For myself I would not add any additional salt. There is a lot of sausage in this recipe and for me it was a little on the salty side. It was good but the taste of sausage was a little overbearing for me and I didn’t get much taste of the other ingredients.

    I made this for my aunt’s Christmas brunch. It was perfection . . . the best breakfast casserole I’ve had! I followed the recipe, except I added half a diced onion, 1 tsp garlic powder and a tbs of dried chives. It was even better warmed up the next day. I thought 2 lbs of sausage seemed like a lot, but it was just right. My only critique is that it’s overly salty, so I recommend not adding any salt because most of the key ingredients contain enough salt.

    Made this the night before for an early tailgate. Substituted mushrooms (brown in butter) and spinach for the green peppers. Also used one pound mild and one pound hot Italian sausage. It turned out great! I baked it the next morning for an hour, but only because I forgot to set a timer and it was a little more browned on the edges than I would have liked. Delicious! I would make it again maybe for Christmas morning.

    1. YES! You are right. You do NOT need to cook the casserole before freezing but will get it all the way through step 4 and into the pan. When you are ready to bake simply thaw it out overnight in the fridge and bake!

We may use half the sausage and add some mushrooms in future attempts simply out of personal taste — my wife likes a breakfast casserole to be more “eggy”.   152. I am a terrible cook and these turn out pretty good. My family is picky so I had to make different versions in a muffin pan. Versions for meat and veggie were cooked bacon, seasoned browned hashbrowns, sauteed mushrooms https://tastesbetterfromscratch.com/how-to-saute-mushrooms/ other was browned seasoned hashbrowns and cooked chorizo (family doesn’t eat red pepper or onions:/. Turned out pretty good- i put hasbrown on the bottom, so make sure to spray muffin pan well so they don’t stick. Next time I will add more cheese. I halfed the recipe and they were done in 25 minutes. Will be making this for a bday brunch.

    I made this as directed up until the assembling and baking. Rather than make it a casserole I wanted a breakfast burrito so I cooked the eggs in the pan after I cooked the sausage and peppers, added the cheese until it melted, and then combined and wrapped it all up in a tortilla.     1. Slice the grape tomatoes in thirds and then use a potato masher to slightly crush them. Put them in a strainer to drain the tomato juice. This will prevent them from making the casserole watery.

  170. I made this casserole today (Wednesday & did bake it. I intend to have it Monday AM, when I have guests in town. My question: Should I freeze it tonight and then thaw it out Sunday night? Or…should I just keep it in refrigerator all tightly covered.until then? Also, on rewarming for Monday, since it’s already baked, I would now have to microwave the slices, correct? Rewarming in the oven would dry it out too much I imagine.

      1. I sauteed hash browns right after the peppers and onion. Rather than stirring everything together, I then thinly layered the greased pan from the bottom up: Hash browns, sausage, cheese, peppers/onion, hash browns, sausage, cheese, peppers/onions, etc. I then poured the egg mixture into it. Cooked it for 40 minutes at 350, then added more cheese on top, and then cooked another 15 minutes. Perfectamundo.

  227. Made this recipe this morning, substituting turkey sausage for the pork sausage to cut down on fat and calories. It turned out great and my guests loved it. I prepped everything yesterday (I cooked the sausage and chopped and veggies) and put in fridge, then this morning I microwaved the sausage and veggies until warm/softened, then proceeded with assembling the recipe. Served with hash brown patties, sausage patties, toast and a fresh fruit bowl. I am going to freeze the leftover breakfast casserole to eat on busy mornings (I’ll have to play with the timing for reheating since it’s not in the directions).       This recipe was a perfect recipe for my family! I was surprised it didn’t call for whip cream since my last egg casserole had tons of it. Pork isn’t my style so I did turkey sausage and it worked well. When I am being very picky, the meat was hot from the pan so the eggs started to cook while I was cutting the veggies. So if you choose to make this I recommend not putting in the meat until cooled. Anyways this recipe I will most definitely use again.

  228. This is easy and very tasty but watch yourself with the salt. With this dish having so much sausage in it, you need very little salt if any. I’ve made this a million ways… it’s very forgiving, you can change it up dramatically and still it will work well. The only times I’ve ruined this is due to adding too much salt.

    1. Yes, you can either make it and store it (unbaked) for a day, or you could reheat it. I would under bake it just slightly, so that the eggs don’t overcook when rewarming.

  255. After my casserole is cooked I slice it up, separate the slices on a cookie sheet and quick freeze them. I then put the pieces in a freezer bag. The quick freeze stops the pieces from freezing together and lets me take out individual pieces to heat in the microwave for a quick breakfast. For myself I usually have one before I go to church. Pop it in the microwave while I’m getting ready. If I happen to wake up late it is also good for a take along.

    I usually make 2 pan fulls. One for myself to eat when I need a quick breakfast and one to take to church.

    This is a family favorite and I make it all the time now that it is just two of us at home.     I made this today for a women’s group and it received rave reviews. The pasture raised eggs were large so I only used 11 per casserole, and I made 2 casseroles. I used Bob Evans maple flavored sausage and added a scant T. of real maple syrup to augment the flavor. Next time I’m going to add s little more bell pepper and green onion. Oh, instead of milk I used organic cream. I will definitely use this recipe again!

  269. I’ve made a casserole similar to this for years. I decided to give this one a try and everyone loved it. I think the sour cream gives it a different taste, in a good way. I did add a few handfuls of frozen diced potatoes. I also added 6 more eggs just because we have chickens and need to use our over abundance of eggs any way possible!! 😄 Excellent recipe!!

    1. Hi, so in addition to the 12 eggs in the recipe, you added 6 more eggs? Did you increase any of the other ingredients?

        I used 18 eggs rather than 12 and it still was nice and fluffy. I used 1/2ish cup milk, 1lb of sausage (that was all we had) shredded cheese and dried spices. No veggies or sour cream as we have super picky eaters.

  270. I would shred it and press the water out of it as thoroughly as possible. I’ve used fresh tomatoes and have noticed that it is a bit watery when I microwave it to heat later.

    My mom made this for supper and it was delicious! Some families cook pancakes for breakfast for supper, well now this is our go-to meal!

    1. You can freeze it baked or unbaked. If baked, allow it to cool completely, wrap it well with plastic wrap and tinfoil and store in freezer. Allow it to thaw completely and reheat at 350 for about 20 minutes or until heated through. If unbaked, cover, freeze, and thaw completely before baking.

    Very good. Used 1/2 hot sausage but would change to all hot next time. Used creme fraiche (cuz it was what I had) and almond milk (same reason) Substituted sazon Badia for the salt and used lots of pepper. After the bake tine, left it in the oven with door cracked to cool slowly — wanted a firm texture. Yum!!!

    Made this today for my mother-in-law. I included it in a “Brunch in a Box” for Mother’s Day. Easy to make and pack up so we could maintain social distancing, but still do something nice for her. I kept two pieces for my husband and me to eat, and it was delicious! Instead of sausage, I used 2 lbs of diced ham (only because my father-in-law) doesn’t eat sausage. I will definitely make this again with the sausage.

    This is a very good recipe! My wife and I love it for a quick morning breakfast when we are rushing to get to work. We make it the night before and have it ready for the morning. Even our young child loves it! I definitely would recommend this recipe!

    1. Leave the meat out and add extra veggies! More chopped peppers, mushrooms, shredded hashbrowns, and spinach would all taste great!

    Delicious! I needed to make it a tad bit larger for a carry in. Added 3 more eggs, sauteed 1/2 green, yellow, red, and orange bell peppers, 1 jalapeno, small vidalia onion and added a little more sour cream, milk, and cheese. It was gone in a matter of minutes.

    Thank you so much for this recipe, what a big hit! Christmas morning was so much easier for me to host and please my adult blended family. I only used 1 lb. of the sausage meat instead of 2 and added a whole green and red pepper instead of the suggested halves. I love this recipe’s flexibility.     Made this for Christmas breakfast. Just from experience I did more of a layering effect. Cooked the sausage with onions and peppers. Drained the extra grease. Put it in 13 x 9 pan. Fried some hash browns for about 10 minutes. Added that next. Topped with shredded cheese and then poured the egg mixture in evenly over top. It was yummy! Will definitely make this again! (Oh, and added a little chopped pickled jalapeños to the egg mixture as my family likes spicy.)

    This is so good!!! I only had 1lb of sausage but added 3/4 lb of unthawed frozen hashbrowns, mixed them into the mixture with a splash of extra milk. It turned out perfectly! Thanks for this wonderful recipe!

    and some shakes of pepper? show that was ok!

    1. Sure, you could try that. I would put them in the bottom of the pan before pouring the eggs mixture over top. I haven’t tried it but I think it could work!

      1. Nothing is good cooked in a microwave. If I spend money on ingredients I am not going to ruin it in a microwave. If you are so busy you can’t cook your recipe don’t try to make something in the microwave.

    Thanks for the recipe. Success on the first try! I used small, green Japanese sweet peppers in place of the green pepper, added a little Hungarian ground paprika to the onions as they were sautéed, and added chopped kale, too. I also used plain whole-milk yogurt in place of sour cream for personal preference but I am sure sour cream is fine, too. End result? Our men’s morning Bible study ate it up and gave it positive reviews! Thanks again

    I made this for a big family breakfast and it is delicious! I put everything together the night before(I recommend if you have a house full of guests) and it was easy and stress free to pop in the oven in the morning.

    Any ideas on how to stretch this a little further to feed a really large crowd? I’m thinking of taking pans of this to a breakfast for the homeless. More veggies, bread, or hash browns??? It would be for at least 50.

    1. I think adding some shredded hashbrowns or bread is a good idea. For 50 people you will probably want to make at least 3 pans, or 4.

      1. I was wondering if adding a bag of frozen hash browns would add to the baking time, and could I just mix them in or put the hash browns in baking dish first then pour egg mixture over it

        1. Let the hashbrowns thaw and add them to the bottom of the pan. Watch the cook time–you may need to add 5-10 minutes.

  300. I made this for a church breakfast and I only used 1 pound of sausage and 10 eggs because that was all that I had. I baked it in a 7×11 glass dish for the full 50 minutes. It was delicious; easy to cut and serve. I will definitely make this again. I think 2 pounds of sausage is excessive and I won’t use more than 1 pound in the future. Thanks for sharing this recipe.

    1. Great! 16 ounce of mushrooms, chopped. Cooking them with the other veggies is optional. In the original version they didn’t cook any of the veggies. Enjoy!

    I made this for a brunch recently, and everyone loved it. I used one package of pre-cooked turkey sausage instead of two pounds of pork sausage. I skipped the onions but added an extra egg. It was done in 35 minutes and firmed up so nicely (not runny like some breakfast casseroles can be). Thank you for the easy recipe!!

    This is dish is delicious and attractive enough to serve on Christmas day, but so easy that I routinely make it for family brunch on Sundays. I always mix everything the night before and store it in a covered pan in the fridge, then bake in the morning. We usually serve with tortillas, hot sauce or salsa, and sour cream, on the side, but it also pairs well on its own with hash browns/tater tots, fresh fruit or a sweet breakfast bread! The only problem is even we never seem to have leftovers…

    I halfed this recipe and made it for me and my boyfriend’s weekend trip to Savannah. Didn’t want to spend time having to cook breakfast and clean the kitchen while on vacation. This casserole is amazing and so easy! This is a keeper for sure!

      You don’t need to make any modification. You can leave them out and cook the recipe as is. I will say that the peppers add a really mild flavor :).
