Overnight Sausage and Egg Breakfast Casserole

Who doesn’t love a delicious hot breakfast in the morning without any work?! I LOVE, love, love this overnight breakfast casserole. You throw it together the night before, which takes like 10 minutes, and then you stick it in your fridge til morning. In the morning you simply pop it in the oven for an hour and, viola, the yummiest breakfast ever without any work or fuss!
This is the best overnight breakfast casserole for times like Christmas morning, general conference, wedding or baby showers, or any other occasion where you might have company or want to relax in the morning. Heck, I’d even make this for a regular morning, just because it tastes so good and the leftovers keep so well!

Serves 12

6-8 slices white bread
Few Tbsp softened butter (for buttering the bread slices)
4 cups grated colby jack cheese, or cheddar cheese
12 oz pork sausage, browned and drained of any grease
1/4 medium onion, chopped
1/2 red bell pepper, chopped
1 4 oz can green chiles
6 eggs
2 cups milk
1 tsp kosher salt
1/2 tsp paprika
1 tsp oregano
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp dry mustard

Remove the crusts from your bread and lightly buttering one side.  Start by removing the crusts from your bread and lightly buttering one side. Place the bread, butter side down, in a 9Γ—13 baking dish. ( Enough to cover the bottom of the pan without any big gaps.
Brown sausage in a frying pan. Drain Grease and remove to plate. Add onions and bell peppers to skillet and saute until slightly tender, 3-5 minutes.
Sprinkle freshly grated cheese evenly over the the bread.  Spread the browned sausage on top of the cheese, followed by the onions, bell pepper, and green chiles.
In a medium sized mixing bowl whisk eggs. Add milk and then salt, paprika, oregano, black pepper, garlic powder, and dry mustard and whisk well to combine.  Slowly stir the egg mixture while you pour it evenly on top of the assembled casserole. Cover baking dish and place in the refrigerator overnight.

In the morning: 
Preheat oven to 350 degrees F. Bake (uncovered) for 50-60 minutes or until center is set and outside edges are golden brown. Allow to cool for at least 10-15 minutes before cutting into it (otherwise it wont set enough and will fall apart as you cut.

    I love your recipes!! Currently your lasagna roll ups and chicken tikka masala are on repeat πŸ™‚ This probably only makes sense in my head…but i like your recipes because they taste ‘normal’ and homemade and delicious instead of some of the slightly weird and ‘off’ tasting made up recipes from other blogs/pinterest. Thanks for posting!!
