Homemade pizza is easy, cheap, and fun, especially on the weekends! While you can never go wrong with traditional cheese and pepperoni, give BBQ chicken a chance and you wont be disappointed! You can cook your own chicken and shred it for this recipe, or use a rotisserie chicken, which gives great flavor and cuts the prep time in half! This is the easiest recipe and tastes just as great as CPK’s BBQ Chicken pizza!
Dough for one large pizza crust (find our Perfect Pizza Crust recipe here)
1 1/2 cups shredded chicken (Rotisserie Chicken or about 2 chicken breasts, cooked and shredded)
2 cups shredded mozzarella cheese
1/2 cup barbeque sauce
1/4 large red onion, sliced very thin
Cilantro, to taste
Spread pizza crust dough with thin layer of barbeque sauce. With a fork, shred the breast of a rotisserie chicken into thin pieces. Top pizza with 1 cup of mozzarella cheese, sliced red onion, and shredded rotisserie chicken. Add remaining cup of cheese, and sprinkle with cilantro to taste.
Bake at 450 degress F for 10 -15 minutes or until crust is golden brown and toppings are bubbly!
