How to make Pumpkin Mug Cake:

  1. Add flour, sugar, cinnamon, pumpkin pie spice, baking powder, and salt to a mug and stir together.
  2. Stir in milk, pumpkin, melted butter and vanilla extract until smooth, being sure to scrape the bottom of the mug. Stir in chocolate chips, if desired.

Pro Tips:

  • Cook time: All microwaves are different so it’s difficult to give a precise cook time. Start with 70 seconds, wait 1 minute while it cools, then look to see if it is set. Add an additional 15-25 seconds if needed. Allow it to rest in the microwave for 1 minute.
  • Keep in mind the cake will continue to cook as it cools off.

The trick with mug cakes is to stop cooking the cake earlier than you think, because you want it to be soft on the inside, and the cake will also continue to cook as it cools.

Really pleased with this! Its very fast, very easy, and customizable for different tastes/diets. I used 2 tablespoons sugar and oatmilk for fewer calories than the original, and there’s no noticeable difference in flavor. I’ll be passing this recipe on to others. 🙂 Thank you!
