An easy microwave Vanilla Mug Cake (made without eggs) that's the fastest way to make dessert for one or two. Enjoy it plain, add nutella, or stir in a handful of chocolate chips and you're on your way to dessert bliss.

Vanilla Mug Cake

Some people may think I'm exaggerating when I say that Mug Cakes changed my life, but seriously, we're talking about a personalized serving of delicious cake, made in just about 5 minutes!

If you think it's too good to be true then I challenge you to give it a try! And, if chocolate is more your thing, then try my chocolate mug cake instead! If you love cake and baked goods like I do then I'm telling you, your sweet tooth cravings have met their match!

Here's what you'll need to make vanilla mug cake:

  • all-purpose flour: cake flour also works.
  • white sugar
  • baking powder
  • dash salt
  • butter
  • milk: any kind will work. 
  • vanilla
  • sprinkles

Vanilla Mug Cake in 3 Easy Steps:

  1. Add the dry ingredients to a microwave safe mug; flour, sugar, baking powder, and salt.
  2. Stir in the wet ingredients: milk, melted butter, and vanilla. Add sprinkles, if desired.
  3. Microwave for 70-90 seconds.

For healthier mug cake, make these swaps:

  • Milk: substitute skim milk
  • Sugar: Cut the amount in half, or substitute an artificial sugar sweetener or honey.  You could also leave out the sprinkles.
  • Butter: replace with applesauce, or coconut oil
  • Flour: use white whole wheat flour

  • Small scoop of Nutella
  • chocolate chips (or other flavored chips)
  • Small scoop of peanut butter
  • Coconut
  • Nuts
  • Cinnamon

Can you make mug cakes dairy free?

You bet! For dairy free mug cake, substitute almond or soy milk and use dairy-free butter or coconut oil.

  • Add flour, sugar, baking powder, and salt to a mug and stir together.
  • Stir in milk, melted butter, and vanilla extract until smooth, being sure to scrape the bottom of the mug. Stir in sprinkles.
  • Cook in microwave for 70-90 seconds* (until cake is just set, but still barely shiny on top). Allow to rest in microwave for 1 minute before consuming.

Notes

*Because all microwaves are different, it's difficult to give a precise cook time. Start with 70 seconds, wait 1 minute while it cools, then look to see if it is set. Add an additional 15-25 seconds if needed. Allow it to rest in the microwave for 1 minute.
• The trick with mug cakes is to stop cooking the cake earlier than you think, because you want it to be soft on the inside, and the cake will also continue to cook as it cools.

OMG!!!! This is the best mug cake ever!!!! All the other mug cake recipes i have made have been really tough and were gross, this mug cake however was delish and had a nice texture. When I made this i used less sugar but I used brown sugar and I also added in some cinnamon and it was soo yum. Thanks so much!!!!!!

I loved this, to make it even better though try adding half a tsp of cinnamon, a quarter tsp of pumpkin pie spice, and 2 tsp of maple syrup

So first up I tried this recipe without sprinkles (because they’re disgusting!) and it came out airy and a little puffed up. Not a lot of flavor I must say so I added cinnamon, mayo (for moistness) nutmeg and diced apples! Delicious! Laura you should make an apple pie mug cake using that recipe! I know don’t thank me! I’m just that good at baking you know? And be sure to credit me when that mug cake gets famous and eaten by celebrities from all around the world. Your welcome!

I made this recipe and loved it! I had been looking for a mug cake recipe that was not chocolate. I plan on making this again as it is so easy and satisfying! Thank you. I made it with the sprinkles and will try without the sprinkles next time for a variation.

I mean yea it’s vanilla cake I don’t really know what else to say about it. Its good cake its just not really anything special about it but I guess that’s kind of the point.
If you’d want you could add cardamom, coconut flakes and some other spices so it’s not so plain

Best one so far! Thank you. Surpassed my expectations. The only mug cake that doesn’t have cocoa or nutella and tastes great. Didn’t think it could be this good especially without even one egg but exceeded in that department too. Not rubbery and flubbery like a lot of other mic mug cakes. Warm, soft, comforting and sweet. Perfect when craving something quick and sweet in the middle of the night 🙂

Disclaimer: Due to dietary restrictions, I had to swap AP flour for Whole Wheat pastry flour, and small crystal raw sugar for white granulated. If you use whole wheat flour, you’ll have to add a bit more because the bran of WW takes up space in the measuring utensil, which decreases the gluten content in an equal measure. Since gluten acts in rising the batter while cooking, you need to make sure you add enough additional flour to get the necessary amount of gluten to make a good rise. Otherwise you’ll end up with a sunken, stiff cake. So I used 1/4c + 1Tbsp of WW pastry flour. The small crystal raw sugar is the opposite. It’s much sweeter than granulated, so I started with just 1Tbsp. As I mixed the batter, it wasn’t the right consistency, so I added 1tsp, and that corrected it. I also divided the milk, first adding 2Tbsp, mixing thoroughly to get the lumps out, and then finished with the last 1Tbsp and continuing to mix until it was the right consistency. I used almond milk, which in my experience gives results quite similar to cow’s milk. Another swap was an equal measure of vegetable oil for butter. (Other good oils are sunflower or canola). This cake did not disappoint. It’s true that mug cakes with egg in the batter makes it fluffier and spongier, with a lighter texture, but I was specifically looking for an eggless recipe tonight because I’ve been on a mug cake kick, and I don’t want to burn through my eggs making single-serving cakes. This will be my go-to recipe as long as my mug cake kick lasts.

I just tried this simple mug cake recipe (without the sprinkles) because of a late-night craving for sweets and it was delicious! I wanted to top it with fresh strawberries and whipped cream , but the cake got gobbled up before I could reach them!
