Instant Pot Chicken Taco Bowls

When I reached out on my Instagram page to ask for your recipe recommendations, it quickly became clear that my readers want more easy dinner ideas–including more recipes you can make in your instant pot!

(Here’s the instant pot I own and if you’re thinking about buying one, you can read this great article about them.) Let me teach you how to use your instant pot!

If you’ve been following along with my blog at all, you may know my affection for “bowls” : complete meals–including grains, protein and veggies, served together in a bowl. These are a few of my absolute favorites.

The instant pot takes my affection for “bowl recipes” to a whole new level,  allowing me to add all of the ingredients to the pot at the same time, without any prep! YES!! This recipe is a busy mom’s dream come true.

I first got the great idea for these bowls from wondermom wannabe. I knew I wanted to use white rice, and adjust the ingredient ratios, for less rice. I also played around with the recipe several times to make sure the rice and chicken cooking times coordinated enough that the rice was cooked perfectly, and not gloopy/mushy, and the chicken not dry.

The end result was just perfect! It really doesn’t get much easier than these Chicken Taco Bowls, made in the handy, dandy Instant Pot!

How to make Instant Pot Chicken Taco Bowls:

  • Add a little broth, and 2 chicken breasts to the bottom of the IP.
  • Sprinkle taco seasoning over the chicken. (If you don’t have a packet of taco seasoning, you can make it really easily from scratch).
  • Top with black beans, corn, salsa, and uncooked white rice.
  • Add the rest of the chicken broth. BAM!
  • Secure the lid, and follow my setting instructions.
  • While the mixture cooks, prepare your toppings.

One important tip I would offer, when everything is done cooking, is to fluff the rice really gently with a fork. If you take the lid off and stir the mixture when the rice is piping hot, you’ll end up with rice that gloops (is that a word?) and sticks together. Yuck! So just fluff it with a fork, then put the lid over it and allow it to rest for a few minutes before serving.

What Instant Pot size to use:

I developed this recipe for use in the 6-QUART INSTANT POT. If you’re using a larger IP you may need to add more liquid so that you don’t get a burn notice.

Can I use brown rice or Quinoa?

Yes, you could use brown rice for these instant pot chicken bowls but some adaptions will be needed. Add ¼ cup more chicken broth, and I would also suggest using chicken thighs, or cooking the chicken separately, so that it doesn’t get overcooked/dry. Brown rice takes longer to cook in the IP–about 22-24 minutes (22 for low elevations, 24 for higher). Then follow the same pressure release instructions.

If you’d like to use quinoa instead of rice I recommend cooking it separately. Quinoa only takes 1 min on high pressure to cook, so if used in this recipe it would be very overcooked.

Can I use frozen chicken breasts?

Yes!  To make this recipe with frozen chicken breasts, follow the directions exactly as they are listed below (but use frozen breasts).  Cook on manual (high pressure) for a total of 10 minutes, instead of the 8 minutes it calls for.  Then allow the pressure to naturally release for 12 minutes.

Other ways to adapt these Instant Pot Chicken Taco Bowls:

  • Use ground beef/ground turkey.  To substitute, sauté the meat in the bottom of the IP, first, before adding the rest of the ingredients.
  • Make it vegetarian. You could also leave the chicken out, to make this a vegetarian meal. Add additional veggies like chopped bell pepper, zucchini, or stir in fresh spinach at the end.
  • Switch the beans. If you don’t have black beans I would suggest pinto, or really any other type of bean you like.
  • Leave out the rice. If you’d like to leave the rice out, you only need 1 cup of chicken broth. Cook time is the same.
Toppings are key!

The toppings can really make this dish fantastic! I would suggest a little shredded cheese, a scoop of sour cream or plain greek yogurt, and definitely some fresh chopped cilantro and avocado. You could serve warm corn/flour tortillas or tortilla chips on the side. You could also top with some shredded lettuce or chopped spinach.

Ingredients
  

Topping ideas:

  • cheese
  • fresh cilantro , chopped
  • avocado sliced
  • green onion , chopped
  • sour cream

Instructions
 

  • Spray bottom of IP with non-stick cooking spray.
  • Add ½ cup chicken broth to bottom of IP.
  • Add chicken breasts.
  • Sprinkle chicken with taco seasoning.
  • Add black beans and corn.
  • Add salsa.
  • Add rice.
  • Add remaining 1 cup chicken broth.
  • Press rice into the liquid to make sure it’s fully submerged.
  • Set valve to sealing. Cook on Manual (high pressure) for 8 minutes.
  • Allow pressure to naturally release for 12 minutes, then turn to quick release.
  • Remove IP lid and gently FLUFF rice with a fork (Don't stir it!).
  • Place IP lid back on (with power off) for 5 more minutes to allow rice to rest while you prepare the toppings.
  • Slide rice to the side a bit to find the chicken breasts and pull them out. Shred the chicken. 
  • Add a scoop of rice mixture to a bowl. Top with some shredded chicken, and other desired toppings. Serve with tortillas, if desired.

Notes

*This recipe is for use in a 6 QUART INSTANT POT.   If using a larger instant pot, In step 2, add an additional ½ cup of chicken broth to the bottom of the pot (1 cup total in step 2).
Try these INSTANT POT MEALS.
To make in the Slow Cooker:
Add 1 cup broth, chicken, taco seasoning, beans, corn and salsa to slow cooker and cook on low for 4-5 hours or high for 2-3 hours, until chicken is cooked through. Stir in cooked rice.

    My rice is on the crunchy side but still edible. Any tips? My son liked it and wants me to give it another try.

Hey Renee, I just made this recipe for dinner tonight and used to have that issue with most recipes requiring rice, so I switched to using 5 minute or quick rice instead an it comes out perfectly cooked every time. No issue tonight either. See if that might help. Or add a little extra broth or water to be sure it is totally submerged before you seal the lid. Glad your son liked it anyway. Good luck!

    2. You want to be sure to have the rice covered by liquid. Lots of people mess this recipe up because they don’t layer the food into the order listed in the instructions. To be sure the rice gets covered in liquid, I would put the rice in after the beans and corn and cover the rice with the salsa and the broth.

  2. I am not sure about natural release. Do I leave the pot on for 12 minutes then release the rest of the pressure? Or do I shut the pot off for 12 minutes and relieve the pressure. It seems the rice and also the meat would get over cooked if I leave the pot on.

  3. If this recipe looks so easy and almost too good to be true, that’s because it is. Don’t ignore all the comments about the burn notice like I did – you will end up wasting time and food. Bummer! Followed the recipe exactly.

    The burn notice came on and now dinner is delayed! Defiantly don’t recommend this recipe, the rice stuck to the bottom of the instapot and now we are just having chicken tacos because that the rice is burned to a crisp on the bottom of my instapot.

      Followed the recipe to a T, and yet continued to get the ‘burn food’ on the insta pot. Even after multiple attempts of adding more liquid/scraping I still continued to get the ‘burn food’. Needless to say much time was wasted and all the food ended up in the garbage, which was a total waste of money.

    I’ve made this recipe over 20 times and every time it comes out delicious and perfect! I’ve made it as is or added green bell pepper if I have it or hatch chilies or whatever I need to use in the pantry and it’s always SO good. Great leftovers! I do like to squeeze a lime wedge into my bowl for a little pop! Seriously the best recipe I’ve found on the internet and made.

    So easy, it makes a great weeknight dinner – my 11 year old made it the second time around. We eyeball cumin, oregano, garlic powder and onion powder instead of a seasoning packet but did everything else as called for. My first successful rice recipe without getting a burn notice! This was our second time making this dish in two weeks, first time with frozen chicken. This is a keeper :]

    I had to use a can of diced tomatoes because I was out of salsa. I used 2tbs of my DIY taco seasoning, can of corn, can of black beans, and 2 of our very own chicken breasts. I followed the rest of the directions, and this turned out tasty! We topped with lettuce, cheese, and sour cream. Most of us ate ours over tortilla chips as well! It’s a keeper!

    We had these for dinner tonight and my family loved them! Even my pickier kids had seconds. I used brown rice and frozen chicken breats. Cooked for 21 minutes and mixed the shredded chicken back in with the rice mixture. The homemade taco seasoning was great too. We topped them with cheese, lettuce, tomato, and avocado.

    This recipe did not work well AT ALL…and I followed it exactly. I got the “food burned” message the first round. I thought, maybe it’s the olive oil spray. Salvaged the chicken and rice mix, scrapped out the burnt food, cleaned the pot. Tried it with vegetable oil spray and added water. Same thing…”food burned” message. Tried it again, last round, NO OIL, a little more water,…SAME MESSAGE! I finally have it in the oven in hopes it’ll cook the chicken through.

    1. I also got the burn notice. Took everything out of pot, allowed it to cool then washed the pot. Returned everything to the pot, added little more liquid & restarted the instant pot. Got the burn notice again. Put everything in Dutch oven & cooked it on the stove. What a shame because it had a very good flavor .

      I had the same issue. However, no food was burnt, yet the burn notice still came on. I didn’t do anything but turn it off. I walked away to finish vacuuming up the crackers my toddler had shared with the carpet, about 15min, and when I came back the instapot had naturally released the pressure, and food was cooked perfectly. May try again with more broth in the future… I skipped the taco seasoning and just tossed in paprika, chilli powder, cumin, oregano, garlic, onion, salt n pepper. The flavor was great but my heavy seasonings may have caused it to get overheated.

    Didn’t work out for us. We kept getting a burn message and I ended up cooking it on the stove.

    1. I also got the burn notice. I opened it up and added one cup of water, and slightly lifted the chicken from the bottom with a spatula so the liquid could go under it again. Worked just fine after that.

    I had a big problem with the instant pot constantly “burning” and not cooking correctly and I followed the recipe as stated. I’m not sure that adding rice is a great idea. I would appreciate some pointers as this recipe has promise but the execution sucks.

    I am going to try this recipe tonight, but since I have diced ham I’m going to use my slow cooker instead of the IP. Thank you Lauren for giving instructions for both appliances!

    Suggestions I loved in the comments:
    — can of diced tomatoes with green chilies as variation to salsa.
    — sweet Italian ground pork with beef broth instead of chicken.
    — after natural release, leave a clean towel over pot for 10 minutes. (For rice to steam.)

    I loved this! I subbed brown rice for white, any tips on how much longer to cook it? My rice came out a little crunchy, but overall super simple and tasty!

    1. I would recommend cooking your brown rice separately from the chicken. I personally use chicken broth instead of water, gives the rice more flavor. And cooking the rice 25 minutes and then a natural release for 10 minutes.

    2. 22 minutes in the instant pot works for brown rice 🙂 also I use thighs as she recommends so that they don’t dry out like breasts might for that longer cook time.

      I kept getting a burn notice! After stopping, scraping and adding more water several times, I ended up putting it in a baking dish and baking it in the oven until it was done. It tasted very good, but I won’t use the instant pot for this recipe again. Took a lot longer to prepare because of this problem.

    This is a great recipe and make it all the time. Turns out flawless. Have made many of the mods discussed below.

    The recipe makes a ton of food; trying to align 6 servings to 299/cal/svg. Is a serving about 3 cups?

  26. I make this with sweet Italian ground pork with beef broth instead of chicken broth, and people go nuts. They absolutely LOVE it. I like chunky Pace salsa for this.

  27. I cooked this from frozen (not even totally frozen) like it says I can but cooked for 10 minutes vs 8 minutes and it’s still raw.

    Good recipe. Here is what I added to to give it some extra flavor:
    – used boneless chicken thighs – better flavor than breasts
    – one white onion minced and two cloves mined garlic + 1/2 jalepeo minced no seeds. then sautee with chicken with olive oil for 3-4 minutes along with spice pack.
    – Added 1/2 cup of stock and make sure to scrape the bottom to prevent burn notice. then add rest of stock
    – add rice on top of mixture. do not push into mixture. other wise it gets mushy
    – fast release when done but leave a clean towel over pot for 10 minutes. prevents rice from getting mushy.

    I have made this several times. With modifications, it is quite good. We are trying to cut down on sodium but I love spicy food. I use reduced sodium taco seasoning, organic low sodium chicken broth, reduced sodium black beans, roasted corn (canned) and a can of diced jalapeño peppers. My salsa is homemade from Once Upon a Chef. I also top my bowl with shredded cheddar and light sour cream. I love it but my husband is not a fan. Personal preferences…

    Complete waste of my time, patience, and resources. I followed the recipe and got a burn notice. Thinking I did something wrong, I scraped the bottom of my pot and reset the instant pot to try again. Nope. Another burn message. Cleaned the bottom of the pot again, and reset to try and make this recipe work. NOPE. Another burn message. I finally had to dump the lot into a pot on the stove in hope that I could salvage what was left. For those who may be on a budget and plan their meals and grocery shops meticulously, don’t waste your time with this recipe. Now I am left trying to get my rice fully cooked and praying that the chicken doesn’t make my family sick.

        I had a similar issue with a different recipe and found out wasn’t the recipe at all, but my sealing ring wasn’t sealing the pot properly. It was extremely frustrating because I ruined too many meals and thought I was doing something wrong or the recipe was wrong. You may be jaded from this recipe, but just make sure your ring is in your lid well/ you may need to buy a new ring. After I purchased my new sealing ring, I haven’t had any issues at all.

    I made this for meal prep this week and it turned out great. I didn’t change one thing! We sprinkled just a little cheese on top and sour cream. I would compare them to the burrito bowls you can buy at Costco (which we used to get sometimes) and this recipe is better , and with fresh ingredients.     I used to make a baked version of this recipe, before I purchased my Instant Pot. As such, this was the first dish I tried to make when my Instant Pot was brand new, out of the box. It didn’t go well. I still live in fear of the BURN WARNING, almost a year later, with everything I cook.     Wow terrible. The rice kept sticking to the bottom of the pot and my pot kept saying, “food burn”. Wasted a whole bunch of food. best not to add rice.

    Loved this recipe! I made a triple batch because I was meal prepping for my husband and I for the week. I only did 2 cans of corn and one can of beans because we don’t like it super heavy on the beans. Didn’t have to adjust the time at all even though the recipe was tripled. So good!

  51. I love this recipie! It is a great dump and go quick meal, and it turns out super tasty every time I make it. I use Ro – Tel as well as salsa (½ & ½) for a little extra punch of flavor, and added an extra chicken breast for more servings. I also add a little bit of fresh garlic and onion. For spices I added Cumen, Paprika, and Cayenne Pepper to the taco seasoning. We add avacado and chips in our bowls as well and it is simply delicious. 😋 Thank you so much!

    I have cooked this many times, ( and I love this recipe) tonight the chicken burned a bit on the bottom and the beans on bottom tasted burned. What did I do wrong?

    1. That’s great–yes, just add it at the end and you only need to cook everything else for 4 minutes at high pressure, with a 10 minute natural release.

    Great flavor, but I’ve tried this multiple times verbatim and the rice has required extra cooking time in each instance.

    1. yes I simply set timing longer than 8 minutes, also for burning, black beans to me aren’t needed to pressure cook, get mushy, you can easily keep off to side till later in saucepan if needed; lastly pulling chicken out and adding to top not needed if use pre cut or smaller boneless thighs or breast chopped ahead of time…

    I LOVE LOVE LOVE this recipe, it is sooooo good! It’s a staple for us now, and company loves it. When you put out all the fresh toppings it makes for such an appealing dinner table. I highly recommend!

    Follow her tip of using 2 cups broth if you’re using an 8qt instant pot. I’ve used what I have on hand like canned diced tomatoes if I don’t have salsa, usually skip the corn, and also use whatever meat I have, pork, chicken, moose (I like to cube it so I don’t have to shred after although shredded meat is so good in Mexican) and always turns out great. As long as you have enough liquid it’s a foolproof recipe. Guests love the build your own bowl deal. Thank you for sharing!

    This is delish! I used chicken breast tenders, they shredded so easy in the IP. Didn’t have enough salsa so I used a bottle of Frontera green enchilada sauce. Also used pinto beans instead of black beans. Easy recipe and one I will go to often. And easy to improvise with what you have on hand. Next time I’m gonna make it with brown rice and toss in some butternut squash in place of corn.

    Using my 8 quart Instant Pot IP-DUO, I get “BURN” notices unless I:

    – add 1/4 cup MORE chicken broth
    – cut rice to 1 cup
    – rinse the rice thoroughly

    Once I started doing that, no more BURN notices. Yum!

    Marvelous recipe! I had to substitute jasmine rice for long grain rice, but it worked, just made the consistency different. Also, I used boneless skinless chicken thighs instead of the breast, so I hardly had to shred the meat at all. One more thing, I did not have taco seasoning, but had mild chili seasoning. I used some salsa I had made, too. It turned out great! This is going into my recipe stash to be made many times!

    1. First time making it and yes, just got my first burn message and I doubled the ingredients so there’s 3 cups of broth and actually less salsa than listed… Not sure how it’ll work out.

    2. I gave up after 3 burn notices, gonna throw it in the slow cooker tomorrow. Chinese tonight. But, I was so excited to try it, just not sure why or what I could have done differently. Even added more liquid and not as much salsa.

    1. Hi Michelle, use just want to cook it on the high pressure setting. Don’t use the slow cook setting.

    2. Manual is a set time to pressure cook rather than use the presets. You’ll love your instant pot, I promise! I’ve ditched my crockpot.

I added liquid like 3 or 4 times and I continued to get the BURN warning. After opening and closing it so many times, it eventually cooked and had a good flavor.     Delicious! The only thing I might change next time is to do the rice separately. I cooked dry black beans earlier and used them plus frozen chicken breasts.     Great recipe! I used what was on hand which was El Pato green enchilada sauce, and skinless chicken legs (7), long grain rice. and corn. I stuck to the broth, rice and other meausurement which worked out great. I added salt, pepper,ground cumin and ground coriander to the chicken since I didn’t have taco mix on hand . Because of the bone I added one minute to the cook time. It turned out great! The meat fell off the bone which was only a minor problem with legs, but the flavor and moistness was very good. I threw a little bit of Italian blend cheese to the top after fluffing the rice. I plated with sour cream and avocado. I found the rice texture to be reminiscent of Risotto creamy but not gummy. I would definitely try again, but with boneless skinelss chicken thighs.

    I’ve made this recipe twice and followed as directed. I absolutely love it but for some reason some of the rice isn’t getting done all the way. I’m using long grain white rice, I’ve tried adding more broth and cooking longer but then the food burn signal comes on. Any ideas as to why only some of the rice is getting done and bits and pieces are under cooked? Other than the issue with the rice, it tastes so good.

    I made this for friends and they were impressed. It’s very easy and very good. I used ground turkey and defrosted in the microwave until the edges unfortunately started to cook (didn’t have time to do it the long way). Then I sauteed in IP and broke it up.   137. You can add brown rice to a soup or anything that doesn’t need to absorb completely for about 10 minutes on high.
    I’ve done this a lot of times, deciding to make chicken and rice instead of noodle soup. Now it’s just my go to method of adding brown rice to soupy dishes!

    1. I cooked for 8 minutes and let it naturally depressurize, however my rice didn’t cook. Did I do something incorrectly?

  138. I am very new to the insta pot world. I’m looking for some clarification on the cooking settings. I have the duo nova 6qt. So I cook on high pressure for 8 minutes then vent and cook on high for 12 more minutes? Than fluff the rice and put the lid back on with the pot off for 5 minutes?

    1. You set the timer to cook for 8 minutes. When it beeps that means that it’s done pressure cooking, and the pot will automatically begin to release pressure. You don’t need to do anything other than wait, while the pressure releases for 12 minutes. Then remove the lid (release any remaining pressure if you need to, to get the lid open). Then fluff the rice and place the lid back on the pot to allow the rice to rest.

    A favorite of our entire family from ages 4 to 54.
    I usually double the recipe and it turns out great!
    We prefer dicing the chicken into 1 inch pieces first then adding it to the IP in the order the recipe states.

      1. I would saute them separately and add them at the end so they don’t get mushy when pressure cooked. If you don’t care that they get overly soft, you can saute them in the instant pot at the beginning, and then add the rest of the ingredients.

    I made a few modifications…I used 6 skinless chicken thighs rather than chicken breasts and seared them, I removed them from the IP, added the chicken broth and scrapped the brown bits off the bottom. I added all other ingredients , added the chicken thighs, then added the rice. Also, used brown rice (although jasmine rice my “go to“ I’m trying to go health so I went with brown rice, better nutrition. I followed the cooking times for standard rice.

    It appeared really wet but when I mixed everything (yes with a spoon) all the “extra juices” blended and it was perfect.

    I used All the other “ after ingredients” but substituteD plain Greek yogurt for the sour cream (the health thing again). I also added pickled jalapeños and arugula. The flavors were amazing.

    Will make this again for sure.

    1. Yes, see those directions in the post. (To substitute brown rice, add 1/4 cup more chicken broth, and I would also suggest using chicken thighs, or cooking the chicken separately, so that it doesn’t get overcooked/dry. Brown rice takes longer to cook in the IP–about 22-24 minutes (22 for low elevations, 24 for higher). Then follow the same pressure release instructions.

    1. Dried black beans take about 30 minutes to cook at high pressure in the instant pot, so they wouldn’t cook through if added as a direct substitute in this recipe (and you’d need more liquid). You could cook them separately…

I ended up using orzo (bc that’s all I had) and even added a little extra chicken and so came out perfect! We ended up just shredding the chicken in the Kitchen Aid Mixer and then added it right back into the mixture. Almost like a casserole. Seriously, so yum!

    1. Yes, turn the pot to saute. Add the ground beef and cook it just like you would in a skillet. Drain the grease. Then turn the pot off and continue with the rest of the recipe. 🙂 Hope you enjoy it!

We topped it with guacamole, pico de gallo (enhanced the flavors and added freshness), and sour cream. But, not just any sour cream. My family has discovered the brand El Mexican, and we love the Crema Mexicana con sal de mar version. It completed this dish unlike regular sour cream could. I’m from Texas and HEB is a grocery store chain here. I found this sour cream in a special ethnic section in the cheeses.

    1. I haven’t tested it with cauliflower rice (I’m not sure how it would hold up in the IP, or if it would be mush). Let me know if you try it!

    1. Yes, thats fine to mix everything together. If you’er not using the chicken I would cook for 4-5 minutes high pressure with a 10 min natural release.

    I made this and doubled it. Everything turned out great.
    I used the leftovers to make enchiladas. I sprayed a 9×13 pan with non stick spray then poured enough green enchilada sauce in to cover the bottom, about 1/4 to 1/3 of large can. I then filled with leftovers and rolled my tortillas, putting them seam side down into pan close together.
    I poured the rest of the large can of enchilada sauce all over them. The last thing I did was cover with 8 oz of shredded cheese.
    I baked them for about 45 minutes uncovered at 350°F, or until starts to bubble and turn golden.
    Everyone liked them and it was a super easy dinner after a busy day with an unexpected ER visit for one of my son’s!

  168. Hi! I made this today and it tastes great, since it’s a new instant pot I thought I should add a little bit more broth so I added about 1/4 extra of chicken broth. I used basmati rice, The rice cooked perfectly. The only thing is when I shredded the chicken, it was a bit dry. Why do you think that is?

    1. That would mean the chicken is a little over-cooked–the chicken breasts may have been on the thinner side and cooked faster. Next time you could cook it for less time, and even place the chicken at the top of the mixture. Hope that helps!

Hi Jamie, you should be fine to keep the cooking time the same (the instant pot will just take quite a bit longer to come to pressure, before counting down). but if your chicken pieces are thicker you could always add 1-2 more minutes to the cook time, for peace of mind, and it will still turn out great.

    Quickest “dump” recipe! I used cream corn and left over instant pot black bean soup. Also added red/yellow chopped peppers and chopped onion. Had Adobo sauce so marinated thighs for a bit in that rather than taco seasoning. Cooked as instructed, fluffed rice and added a cup of mexican blended cheese. Re-covered as instructions. Just used what I had on hand and use up! A keeper!

      1. What kind of IP do you have? Check your manual to make sure you’re meeting the minimum liquid requirements.

      2. I am at a higher altitude (about 6500 ft) – I cooked for the 8 minutes with a full NPR then stirred and did another 5 minutes under pressure with a 7 minute NPR. The rice cooked perfectly. If you are at a higher altitude, that might help.

    I doubled the rice & therefore doubled the liquid, but it took FOREVER to release pressure manually & the burn warning came on in the middle of it, and it doesn’t seem fully cooked. I’m an Instant Pot newbie so… when you said 1.25 cups of rice, did you mean an actual measuring cup or the cup that comes with the machine?

    1. Sorry Michele, I’m guessing you have a newer IP –they are much more sensitive when cooking rice, and you may need to add more liquid next time. I use a regular measuring cup.

    I’ve cooked this multiple times and love it!! So easy and delicious. I do add two packets of taco seasoning 🙂 My only issue, which has happened every time except the first, is I get the burn message multiple times per cook! I can’t figure out how to avoid this, and I’ve tried so many different things. It makes it tough because it’s still has pressure built up that I have to release adjust things and get the burn message to go away, which alters my cooking time.

    1. Hi Pattie, I would cook the rice separately and cook the chicken and other ingredients (you wont need as much broth) in the slow cooker for 3-5 hours on low or until the chicken has cooked.

    My only changes – I used frozen corn (it’s winter at the moment) and “roasted” it in an iron skillet, adding it with the toppings. Other tweak was adding a can of Hatch green chilis.
    Salsa used this round was what I had on hand – Trader Joes tomatillo and roasted yellow chili salsa (a favorite).

After reading a few comments, I’m glad I decided to chop the chicken into 3/4 inch chunks before adding them to the pot. Know a lot of people don’t like handling raw chicken.. but it was definitely worth the effort, as the finished product was full of flavor and fall apart tender – perfectly ready to scoop and serve with your favorite toppings

    Could I do it with cauliflower rice and how would that change cook times?

    1. Hi Azadeh,
      Cauliflower rice cooks much differently than regular rice on the stovetop (regular rice cooks in about 20 minutes and cauliflower rice takes only 5-10). It also takes much less liquid to rice ratio than regular rice. Given the variety in ingredients, it’s pretty tough to give an estimation without trying it first. If you experiment and find success I would love to hear about it!

      1. Made this last night and substituted frozen cauliflower rice for regular rice. I reduced the chicken brith by 1/2 cup. Didn’t end up reducing cook time. Came out great. Could maybe have reduced the liquid a smudge more but I didn’t mind it. Put tortilla strips as garnish which added a little crunch.

    This is one of the first recipes I tried when I got my Instant Pot, and the whole family loves it! Thank you. I’ve made it 4 times now. We like spicy, so I made some modifications. I marinate the chicken breasts with 2 packets of hot taco seasoning, crushed red pepper, and garlic pepper for about 30min or so. I also add in chopped onions and Rotel tomatoes with chili.     In an 8 qt instant pot you say to add 1 cup chicken stock in step 2 (instead of 1/2 cup). Does this mean that in step 8 I only add 1/2 cup of stock for an amount that is still 1 1/2 cups stock total? Or am I adding 2 cups of stock in total and still adding 1 cup of stock in step 8 as well?

    What’s the best way to reheat the additional servings? There are only 2 of us. Can leftovers be frozen?
    We have an 8 at pot but I messed up and added an additional cup of broth and it turned out fine. Great recipe.
    This was my first try at using the IP.

    1. I’d reheat individual servings in the microwave, covered with a paper towel. If the rice seems dry you could drizzle a little water over it before microwaving. I haven’t tried freezing this recipe, but I imagine it would work fine. (The rice may be mushier after thawing.)

    1. I’m sure that would be fine–check the minimum liquid requirement for your IP (you may need 1 cup minimum).

    1. No just, set the timer for 10 minutes. If it’s a really thick chicken breast you could cut it into smaller peices, or add 1-2 minutes onto the time.

    Loved this dish! I cook a lot but am new to the InstaPot world and love how easy and quick this meal was to make. I used an 8 qt InstantPot and followed your suggestion by adding extra liquid in Step 2. The chicken was cooked through and not dry at all.     1. As long as your IP will fit it all that’s fine! Triple the liquid if you triple the rice (you need at least a 1:1 ratio of rice and liquid for the rice to cook). Cook time should be the same. 🙂

    1. Hi Angela, just make sure to allow to pot to naturally release. I’d also suggest using chicken thighs, which I think cook better in the IP than breasts do. If you use thighs you’ll want to add a few minutes to the cook time.

    1. I haven’t tried it but it should be fine!
      You will want 2 1/2 cups broth (instead of the 1 1/2) Add the broth first, bring it to a simmer. Add the rice and bring to a boil. Add the rest of the ingredients, nestling the chicken in with the rice. Cover and cook on low heat for 20 minutes for white rice. Remove from heat and let it rest for 5 minutes before removing the lid and gently fluffing the rice with a fork.

    1. This recipe was tested on the IP 6quart DUO. You may have a newer version that is more sensitive than the older Instant Pots. Next time try adding more liquid to the pot or check you IP manual for the minimum liquid requirements.

  263. Hello! Question about using brown rice. I know you said above it takes longer to cook. So instead of 8 min on pressure cook I need to cook for 22-24 min on pressure cook? I’m worried my chicken will burn.

    1. Hi Jennifer, I would suggest using chicken thighs or cooking the chicken separately. (see my notes about this in the post).

  269. I made this recipe just as written. I used brown rice and 2 and 1/2 cups of broth. I cooked it on high for 22 minutes and let it decompress for 10. I took you it off and slept it and it still looks a little soupy. I put the lid on and Lauren suggestions for 5 minutes will I fix the rest of the toppings. So rice soaked up the rest of the broth. Where is cheese and sour cream and salsa red onions and avocado on top it was delicious. My husband said it was delicious and he is a picky eater.

    1. Hi Theresa, what type of instant pot do you have? This recipe has developed with my 6-Quart IP Duo–I know that the newer Instant Pots are way more sensitive –probably need more liquid to cook. Check what your IP manual says is best for cooking rice (what amount of liquid) and adjust this recipe if needed.

    This was fantastic! I cubed my chicken and sauteed it in the bottom of the pot before cooking but otherwise followed the recipe exactly. It was a clear winner in my house.

    1. Hi Laura, quinoa only cooks for 1 minute on high pressure (with a 10 minute natural release), which isn’t enough time for the chicken to cook. So I would suggest either leaving the chicken out, cooking the quinoa separately, or sautéing the chicken at the bottom of the IP for a few minutes until almost cooked through, before adding everything else. Hope that helps 🙂

    I was looking for an easy option to cook in my new 8quart instapot. I chose this recipe because I had all the ingredients in the pantry. I used 3 chickenbreasts instead of 2 since they needed to be cooked. I did not add any additional liquid because I didn’t have a extra can of chicken broth but I didn’t want to use water. I was worried I might get the burn notice but I didn’t. The only thing that threw me off was the “ cook on manual” My pot does not have this option so I selected pressure cook. The food came out very good. The only thing I found that the chicken was a little blander than I liked. The rice however had a very good flavor and with the chicken mixed in it was delicious. ( I did the suggested 8 min)

You would definitely need more liquid, but I fear the chicken would be overcooked by the time the rice cooked. If it were me I would cook the rice separately, the chicken mixture in the crock pot (for about 2-3 hours on low), and mix the cooked rice in at the end. Hope that helps 🙂

    1. Hi Jenn, you can use ground beef instead. You just need to have equal ratios of rice (jasmine or white) and water. 1:1 ratio. Sauté the meat first and drain the grease. You can add the liquid all together at the end and make sure the rice is mostly covered.

    1. Yes. (In some IP recipes you don’t need to change the liquid amount–like hard boiled eggs, for example you only need 1 cup water no matter how many eggs you add. But, since this has rice in it you need to have enough liquid to cook the rice, so the more rice you add, the more liquid you need.)

    Just made this and its so tasty! Using the salsa and seasoning (I used white bean chilli seasoning I didn’t have taco seasoning) made this come out fabulous. I did use brown jasmine rice and added the extra broth and it worked great. We topped it with guacamole and sharp cheddar cheese YUM YUM YUM!     I made this tonight- it is delicious! I made it in an 8qt IP and adjusted the recipe because I became a little paranoid after reading all the burn notices. I added 1 1/4 chicken stock to start, 3 chicken breasts, 1/2 a chopped green pepper and 1 1/2 cups rice. I poured enough chicken stock on top to cover rice- about 1 1/2 cups. I made the taco seasoning you linked. It seemed a little soupy when I first opened, but after letting it rest and shredding the chicken and putting it back in, it was perfect!     DELICIOUS! RECIPE IS A KEEPER BUT NEEDS MORE WATER TO COOK RICE.

    I used a 6 quart Cosori electric pressure cooker. (I have used 6 qt Instant Pot recipes before and they worked perfectly, so I don’t think the brand makes a difference.) I followed the instructions exactly and using high pressure. Usually if a lower pressure isn’t listed, high pressure is the default. The rice was not cooked. I added one US measuring cup of water to the mix and cooked it a bit longer. (Sorry don’t remember the exact time as it was just a guess and I suspect may have been too long.) I used the frozen tiny baby corn kernels and thawed before adding them to the cooker. Also my husband said the amount of black beans should be doubled. So I will try to fix these things the next time.

  330. I have frozen chicken breasts that normally I would pressure cook for 12 minutes so would I do that time then? I just checked my cupboard and sadly just have instant rice… So should I leave the rice out or hpw would you modify with frozen chicken and instant white rice?

    1. Hi Lori, you could use frozen chicken breasts and cook them a little longer, but I wouldn’t suggest using instant rice (it would just turn to mush). If you leave out the rice you could cut back on the chicken broth also, cook the chicken for 10 minutes and allow it to natural pressure release.

  332. Chicken didn’t cook after even 20 minutes. Put on manual and set timer but chicken still raw. First time ever used instant pot so maybe did something wrong. I have the exact IP you are using.

    1. Hi Mandy, I’m sorry! The only thing I can think is that you weren’t cooking on “high pressure”, for 8 minutes. The chicken shouldn’t need nearly 20 on high pressure to cook–it would be dry and way overcooked (consider the time it takes the pot to get to pressure, a 20 minute cook time and the all of the release time.) I’d double check your settings… Hope you get to try it again 🙂 (And if you’re worried about the chicken cooking next time, you can always cut it into smaller pieces).

    2. The first thing I thought of was that possibly you hit “Delay” when you set the timer. Or you didn’t let it actually come to pressure. You need to hit the “Pressure Cook” button and then adjust the time. It takes about 20 minutes for this recipe to come to pressure then start counting down. Also, do not quick release it when it’s done. Let it naturally release for at least 10 minutes. I’ve made this several times, and at first I got the “Burn” message, then I started adding about 1/4 cup more liquid and letting it run down the sides to the bottom of the pan. I always put my rice on top and do not stir it in. I hope this helps.

Hi Jean, I haven’t tried it with instant brown rice (so I can’t say for sure), but here are the changes I would suggest: Cut the chicken into very small pieces (so that it will cook faster), prepare everything the same but cook for 2 minutes high pressure, with about 5 minute natural release. I’d love to hear if you try it!

    Excellent! I doubled the recipe but used chicken drumsticks instead (8 of them). Instead of using 3 cups of chicken broth, i only used 2 cups. Next time, will reduce the broth to 1.5 cup to improve the texture of the rice. Thanks for the recipe. Please share more instant Pot recipes 🙂

    I made this last week and loved it! I’m making it again for a party tomorrow and am planning to triple the recipe in an 8qt instant pot. Do you think my IP is big enough? Would you adjust the cooking time or the amount of chicken stock? Any other adjustments? Thanks!

    1. Hi Jess, I just saw your comment on FB, but I’ll reply here too. 🙂 I haven’t experimented with this as a bigger batch in an 8qt, but it should work great. You will want to triple ALL of the ingredients (the extra rice will need the extra chicken broth in order to cook it properly). Hope the party goes well and hope everyone loves this meal!

    This was fantastic! But it makes SO MUCH! My husband and I can definitely eat this for two meals and be VERY full.

    I sauteed an onion and some minced garlic first, and used this homemade taco seasoning https://www.allrecipes.com/recipe/46653/taco-seasoning-i/ (only because I didn’t have any at home and didn’t want to have to stop at the grocery store). Otherwise, I followed the recipe exactly. We like spicy so my other suggestion would be to add a can of green chiles. I didn’t have one on hand but will definitely try it next time!

    I had trouble with the rice not being fully cooked after 8 minutes (I used long grain white rice). I cooked it for an additional 6 minutes and it was still not co0ked. I finally put the IP on the “rice” setting and that worked without overcooking the chicken.

    made this for a slap-it-together weeknight dinner. Doubled the recipe (sort of ) by doing the following: Put 4-5 chicken breasts on the stock, sprinkled generously with taco seasoning. Put in 1 can black beans, 1 can kidney beans (drained and rinsed) and a 12 oz packet of frozen corn, then about 1.5 cups salsa and a can of rotel tomatoes with chiles (undrained) then added 2.5 c rice and chicken stock to cover by 1/4 inch. Cooked at the recommended times. The rice came out a little mushy and the chicken shredded but would probably have been even better if it had been cooked a tiny bit longer or a tiny bit shorter time (so it would either shred easily, or would be firm and sliceable still). Served with shredded cheese and cilantro on top and some lettuce. Easy, tasty, fast recipe we will use again for sure. I will try reducing the amount of water a little next time, or cook the rice in a separate metal bowl on top of the other ingredients to avoid it being a mush, but it still tasted great. Thanks!!

    1. The rice was hard for me too! I forgot to rinse the rice, would that have anything to do with it?
      I also had to leave, so mine naturally released after cooking for 9 minutes, then stayed on warm. I was worried the rice would be mushy, but it was crunchy. What could have gone wrong!
      The meal tasted great, despite the crunch!

    Deeeee-lish! First time I finished my meal (even feeding a 2yr old and 1yr old) before hubs… he was too busy ooooh’ing and aaaaah’ing over the flavors. Our fam of 5 chowed this down. Used organic brown rice and 4 chkn breasts – I added 2 cups total broth and a 1/2c water for “luck”…. perfection!! Can you say shredded chkn for tomorrow?! Hoooray.

    1. Hi Lesley, that should work just fine! Season the thighs with salt and pepper and use the saute function to cook them on both sides for 2-3 minutes, first. Then pressure cook for 10 minutes with the same natural release. Hope you enjoy this recipe!

      1. I think thighs would be a great option if you’re using brown rice. They can take a much longer cooking time without drying out like breasts! I’m going to try this!

    1. Hi Kelli, I have not experimented with cauliflower rice–not sure how it would work in the IP. If you want to leave the rice out, I would keep just 1/4 cup of chicken broth or water for the bottom of the IP.

      1. I get the burn message too on my IP Duo 8 qt. There is not enough liquid to reach pressure therefore it burns because it can’t reach pressure in my IP. Instruction manual says there has to be at least 3 cups of water, broth, etc. to reach pressure.

        1. When it’s on “keep warm” the pressure is naturally releasing. Once the timer is up, (even when it’s on keep war), the pressure is naturally releasing. I usually just leave it on the “keep warm” setting but you can turn it off! Hope it turns out great!

      DON’T drain the black beans or corn! I got the burn message tonight from doing that. Last time I made this I didn’t get the burn message and used all of the liquids possible. Liquid is key to no burning and it reaching its pressure

    1. Yes, they are different 🙂 Minute rice is rice that has been precooked and then dehydrated, so that it cooks really fast (in a “minute”) when you use it. Look for “Long grain white rice” on the bag of rice.

    1. Hi Mollie, this recipe is for thawed chicken. If you want to cook frozen chicken I would cook everything for 11 minutes, with the same natural release–the rice may get a little on the softer side, instead of tender and fluffy. But it would still taste great.

    Sorry, I just read the other comments and see that you say either is fine. I had initially decided to split the difference and do 6 minutes on warm, the last 6 minutes off. It came out great! It tastes delicious, and will be a great addition to our dinner routine. I followed the directions exactly, with a 6 qt IP, and did not get the burn notice that other described.
