Cornbread waffles are homemade, savory waffles made with basic pantry ingredients.  We love to serve them with chili on top for an easy weeknight meal!

Cornbread Waffles

I'm ready for cooler weather, colored leaves, boots, and warm comfort food!  The other night I was really craving homemade chili, but I didn't want it over a baked potato (which is a go-to meal when I'm too lazy to make dinner). I made my tasty cornbread waffles instead!  I threw my favorite chili recipe on it, and laughed at how easily impressed and excited Jeff was about this meal!

The process for making cornbread waffles is the same as for most waffles! First, add the dry ingredients to a bowl, and then mix in the wet ingredients. Preheat your waffle iron and spray it with nonstick cooking spray before adding the batter.

My kids, of course, usually eat waffles with syrup and butter on top, so it took a little work to convince them to try these savory waffles.  In the end, both the cornbread waffles and chili were a big hit!

However, you can definitely enjoy cornbread waffles without chili, and simply serve them with butter and honey on top.

Instructions 

  • Preheat waffle iron.
  • In a large bowl combine the flour, cornmeal, baking powder, sugar, and salt.
  • Add milk, oil, and eggs and stir until smooth, but don't over-mix.
  • Spray waffle iron with non-stick cooking spray. Pour batter onto hot waffle iron and bake in batches.
  • Serve with chili over top, if desired, garnished with shredded Cheddar, sour cream and chopped green onion.

Hey Lauren!
This maybe Sounds like a stupid question, but i would really love to cook this meal and i’m a bit lost here… 🙁

Is it 1x a 3/4 cup flour and 1x a 1/4 cup cornmeal
OR
1 AND a 3/4 cup flour and 1 AND a 1/4 cup cornmeal

Hello. Thanks for the recipe. I was wondering if I would still need the flour if I was using Maseca which is corn flour rather than cornmeal. Thanks a bunch.
