This delicious White Pizza is drizzled with olive oil, garlic, and white cheeses (no tomato sauce!) culminating in a simple Italian masterpiece!

If you’re not familiar with White pizza, it’s a pizza made without tomato or marinara sauce, and topped with white cheeses. It’s also called Pizza Bianca. There’s a sophisticated, classy feel to it but it’s every bit as easy as traditional pizza, and it’s completely customizable!
How to make White Pizza:
1. Prebake pizza dough: Take pizza dough and stretch to desired size. Prebake in the oven at 425 degrees F for 5 minutes.
2. Add toppings: Remove from oven and brush with olive oil and minced garlic. Mix together ricotta, salt, pepper, and herbs and spread mixture into a thin layer across the pizza. Layer with thin slices of fresh mozzarella, and a sprinkle of half the pecorino cheese.
3. Bake at 425 degrees F for 10-15 minutes, until cheese is melted and bubbly. Remove from oven and sprinkle with remaining pecorino and crushed red pepper flakes, if desired.
Optional: Toss fresh arugula with lemon juice, salt and pepper. Top on pizza just before serving.
Possible Recipe Variations:
- Cheese: Substitute your favorite cheeses including shredded mozzarella or cheddar cheese.
- Toppings: like most pizzas, pretty much anything is fair game when it comes to toppings! We particularly like adding fresh arugula tossed in lemon juice, salt and pepper.
- Sauce: try substituting alfredo sauce, or white garlic sauce on your white pizza or dipping it in pizza sauce (for those of you really missing that traditional tomato taste).
Make Ahead and Freezing Instructions:
To Make Ahead: If you are looking to save time, pre-bake the dough ahead of time, allow it to cool completely, and store it covered, in the refrigerator for 1-2 days until ready to add toppings and bake. The entire pizza can also be assembled 1-2 days ahead of time.
To Freeze: For best results, freeze the pizza crust or dough. Check out my tips for freezing pizza dough.

White Pizza (Pizza Bianca)
Ingredients
- Dough for one large pizza
- 2 tablespoon olive oil
- 3 garlic cloves , minced
- 8 oz ball fresh mozzarella , sliced very thinly
- 1/3 cup ricotta cheese
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1/8 teaspoon dried oregano
- 1/8 teaspoon dried thyme
- 1/3 cup freshly grated Pecorino Romano or parmesan cheese
Optional Arugula topping:
- 2 cups baby arugula greens
- lemon juice
- pinch of salt and pepper
Instructions
- Take pizza dough and stretch to desired size. Prebake in the oven at 425 degrees F for 5 minutes.
- Remove from oven and brush with olive oil and minced garlic.
- In a small bowl, mix together ricotta, salt, pepper, and herbs. Spread mixture into a thin layer across the pizza. Layer with thin slices of fresh mozzarella, and half the pecorino cheese.

Best white pizza recipe ever! I added tomatoes.Everyone loves it.
This was perfect! Followed the recipe exactly and it was the best pizza I’ve ever made. Only adjust I made was instead of three garlic cloves minced, I substituted for 1 tbs of jarred minced garlic.
This was really good! I added sliced Italian chicken meatballs I made from scratch. Bon appetit!

I whipped this up tonight with a sourdough pizza dough I made last night. So so delicious! I really like the par-baked crust tip. I’ll use that for all of my pizzas from now on. Next time I’m definitely following your idea of topping it with lemon dressed arugula!
Very nice! I followed the recipe pretty closely and the results were great. I gave my wife a taste and although she is the pickiest person I know and she liked it too!
“Pizza Bianca” in Italy doesn’t have any topping, apart from salt, olive oil and rosmarino.
This White pizza you make basically doesn’t exist in Italy, especially if you put garlic and cheese together..
The nearest thing would be a pizza “quattro formaggi”.

I made the recommended crust and kept it simple to the exact recipe for the first time, it turned out so good! Baked it on a large size pizza stone and splitting Laura’s pizza dough recipe in 2. Capers and or lemon would be fun to try for the next try with a white wine or light beer would be amazing!
Topped with fresh ramps from the forest and mushrooms. Glass of wine. Fantastic!
