An easy microwave Vanilla Mug Cake (made without eggs) that's the fastest way to make dessert for one or two. Enjoy it plain, add nutella, or stir in a handful of chocolate chips and you're on your way to dessert bliss.

Vanilla Mug Cake

Some people may think I'm exaggerating when I say that Mug Cakes changed my life, but seriously, we're talking about a personalized serving of delicious cake, made in just about 5 minutes!

If you think it's too good to be true then I challenge you to give it a try! And, if chocolate is more your thing, then try my chocolate mug cake instead! If you love cake and baked goods like I do then I'm telling you, your sweet tooth cravings have met their match!

Here's what you'll need to make vanilla mug cake:

  • all-purpose flour: cake flour also works.
  • white sugar
  • baking powder
  • dash salt
  • butter
  • milk: any kind will work. 
  • vanilla
  • sprinkles

Vanilla Mug Cake in 3 Easy Steps:

  1. Add the dry ingredients to a microwave safe mug; flour, sugar, baking powder, and salt.
  2. Stir in the wet ingredients: milk, melted butter, and vanilla. Add sprinkles, if desired.
  3. Microwave for 70-90 seconds.

For healthier mug cake, make these swaps:

  • Milk: substitute skim milk
  • Sugar: Cut the amount in half, or substitute an artificial sugar sweetener or honey.  You could also leave out the sprinkles.
  • Butter: replace with applesauce, or coconut oil
  • Flour: use white whole wheat flour

Additional add-in ideas:

  • Small scoop of Nutella
  • chocolate chips (or other flavored chips)
  • Small scoop of peanut butter
  • Coconut
  • Nuts
  • Cinnamon

Can you make mug cakes dairy free?

You bet! For dairy free mug cake, substitute almond or soy milk and use dairy-free butter or coconut oil.

  • Add flour, sugar, baking powder, and salt to a mug and stir together.
  • Stir in milk, melted butter, and vanilla extract until smooth, being sure to scrape the bottom of the mug. Stir in sprinkles.
  • Cook in microwave for 70-90 seconds* (until cake is just set, but still barely shiny on top). Allow to rest in microwave for 1 minute before consuming.

Notes

*Because all microwaves are different, it's difficult to give a precise cook time. Start with 70 seconds, wait 1 minute while it cools, then look to see if it is set. Add an additional 15-25 seconds if needed. Allow it to rest in the microwave for 1 minute.
• The trick with mug cakes is to stop cooking the cake earlier than you think, because you want it to be soft on the inside, and the cake will also continue to cook as it cools.

Best mug cake I’ve ever tried. Other recipes always turned out with a rubbery texture. This one is amazing, delicious & hit the spot. I accidentally added too much vanilla & was still crave-worthy. Will make again. Thank you for sharing your fabulous recioe.

OMG!!!! This is the best mug cake ever!!!! All the other mug cake recipes i have made have been really tough and were gross, this mug cake however was delish and had a nice texture. When I made this i used less sugar but I used brown sugar and I also added in some cinnamon and it was soo yum. Thanks so much!!!!!!

I loved this, to make it even better though try adding half a tsp of cinnamon, a quarter tsp of pumpkin pie spice, and 2 tsp of maple syrup

I tried this with water instead of milk…I know it sounds awful but I had a craving! It was actually really good. Reminded me of a favorite sugar cookie dough. Used those sugar sprinkles in the batter and a little on top, added a teensy bit extra vanilla. Loved it! Last vanilla I tried was disgusting, had egg in it. This is great even with water, can’t wait to try again when we buy milk! Thank you! 🙂

This was very good and an awesome alternative to making an entire cake. My only critique is the vanilla flavor was a little light to me. Next time I’ll try doubling the vanilla or maybe I didn’t add enough salt? Either way this was good. I added Nutella to mine for icing and put it on a plate. It was so light and fluffy I almost can’t believe it was made in the microwave and doesn’t have eggs or oil!

This has a great flavor, easy recipe, but what does the inside look like when cooked? I added extra time a few times, but its not changing it. It looks transparent in some places, not like an oven cake does. Is this undercooked, or the result of the real butter or almond milk? I can sort of “pack it”, it is so moist, yet its crumbly. Is this correct? 🙂

Hi Kathy,

I just made this cake. Mine didn’t look transparent to me. The top wasn’t flat like you’d expect with an oven baked cake. Maybe the unevenness of the top is making you second guess the doneness of the cake? Upon first glance I didn’t think mine was done either. The absence of eggs also had this cake lighter in color than I expected so that could also make you think it’s not done. I think the toothpick test should relieve your worries about the cake being done if you’re unsure.

I cooked mine in an oversized mug for 90 seconds. I checked for doneness with a toothpick and it came out clean. I then let it sit for 1 min in the microwave as suggested before removing it from the mug. I decided to take it out the mug because , like you, I wanted to make sure it was done before consuming it. I didn’t want any surprises. LOL

Thanks, Erica. That is so simple, toothpick test! I also may not have cooked it long enough to start with, then I started messing with it, and putting it back in the microwave several times! I will definitely try it again. I really liked the flavor! Will make another attempt soon.

Erica, Hi again, I tried again today and after your comments, plus watching the video and looking at the photos, I cooked mine longer. I have a small microwave, so I did 110 seconds, waited a minute and it wasn’t quite set. Then 20 more seconds, 1 min of stand time, and i see the difference this time; it pulled away from the sides and the top looked just like the photo. Delicious! It worked better to just cook it longer and not mess around with it!! Very light and delicious.

First of all, this recipe was perfect and yummy! I made these mixes in bulk for my students to make & enjoy at home- it was a big hit, except for the one kid whose family doesn’t have a microwave! I’m wondering for how long and at what temp would you cook this in an oven? Thank you!

This recipe is genuinely delicious and not rubbery at all like other microwave cakes. Super tender and sweet I don’t even think it needs frosting. Sprinkles are mandatory 🙂

I’m a real person. The reviews aren’t fake. You just didn’t like it. Like I said my personal review I thought the vanilla flavor was a little light so I’ll double that when I make it again. I did notice when I tasted to cake a few hours after it cooled the flavor was stronger.

I definitely think it needs icing of some kind to boost the flavor. I don’t think sprinkles are enough. I personally think sprinkles taste like wax even though they are pretty.
