I love making homemade bread! It’s so easy because you can make it on your time and just let it rise all day in the fridge if you want! Everywhere I look lately I see pretzel rolls, and they’ve quickly become my new favorite type of bread for sandwiches, burgers, or to eat just plain! This recipe is really simple and the “baking soda bath” that you poach these in makes the crust crispy and delicious!
1 ½ cup warm water
1 package or 1 Tbsp active dry yeast
2 tsp sugar
4 ½ cups all-purpose flour
2 tsp salt
4 Tbsp butter, melted
¼ cup baking soda
1 egg, lightly beaten
Sea Salt, To Sprinkle On Top
In a large bowl, combine the water and the yeast and let rest 5-10 minutes, until foamy. Add the sugar and stir.
Add the flour, salt, and butter; mix with the dough hook until thoroughly combined. Cover with a towel and let rise in a warm place for 1 hour or until doubled in bulk. Punch down and turn out onto a lightly floured surface.
Cut the dough into about 18 pieces, roughly the size of ping pong balls. Shape into round balls by pulling the sides of the dough to the center and pinching to seal. Round with your hands to form balls. Place the dough balls, pinched side down on the baking sheet with 1” between each roll. Cover with a towel and let rise in a warm place until doubled, (about 30 minutes- 1 hour).
In a large saucepan, bring 2 quarts of water to a low boil. Slowly the baking soda and lower the heat to a simmer. Put the rolls into the poaching liquid, seam side down. Poach for 30 seconds then carefully turn the roll over in the liquid. Poach the other side for 30 seconds and then remove with a slotted spoon to the prepared baking sheets, seam side down. Repeat with the remaining rolls.
Use a pastry brush to brush the lightly beaten egg over each roll. Sprinkle salt over top of the rolls. Use a sharp knife to cut slashes or an “X” into the top of each roll. Bake 15-20 minutes at 425 degrees F.

Pretzel Roll Bacon Avocado Burger Sliders
8 Pretzel rolls
1lb. ground beef
salt and pepper
4 slices of bacon, halved
4 slices of cheese
4 pieces of lettuce
1 tomato, sliced
4 slices of pickle
In a large bowl mix together ground beef, salt and pepper. Make 8 small patties for the burgers. Grill on grill.
Place burgers on pretzel roll bottom. Top burgers with cheese, avocado, bacon, lettuce, tomato and pickle!
