But what side dish will actually get eaten? Because let’s be honest, some pasta salads can be a little sad.
It looks fine. It sits there. People take a polite spoonful and move on. That’s how this Mexican Street Corn Pasta Salad became my go-to.
I wanted a pasta salad that didn’t feel like an afterthought – something creamy, bright, a little smoky, and good enough that people actually come back for seconds.
