Apple Pie Cheesecake Bars with Granny Smith apples, a cream cheese filling, and an oat streusel topping!

Ingredients
For the crust
  • 2 cups all-purpose flour
  • 1/2 cup light brown sugar , firmly packed
  • 1 cup butter (2 sticks), softened
For the filling:
  • 16 ounces cream cheese , softened
  • 1/2 cup + 2 Tablespoons granulated sugar , divided
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 large Granny Smith apples , peeled, cored, and finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
For the streusel topping:
  • 1/2 cup light brown sugar , firmly packed
  • 1/2 cup all-purpose flour
  • 1/4 cup quick cooking oats
  • 1/4 cup butter , softened
Instructions
  1. Preheat oven to 350 degrees F.

  2. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. 

  3. Press evenly into a 9x13'' greased baking. Bake for 15 minutes or until lightly browned.  

  4. In a large bowl, beat cream cheese with 1/2 cup sugar until smooth. Add eggs, 1 at a time, and vanilla. Pour over warm crust.

  5. In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. 

  6. In a small bowl, combine all ingredients for the streusel topping. 

  7. Sprinkle evenly over top of dessert. Bake 30-40 minutes, or until filling is set.
