Learn how to make Yellow Rice with saffron, a vibrant and flavorful side dish that transforms simple basmati rice into an impressive one-pot sde dish that pairs well with anything.
Sauté Onion: Add olive oil to a dutch oven or saucepan over medium heat. Add onion and saute for a few minutes, until translucent. Add garlic and cook for 30 seconds.
1 Tablespoon olive oil, 1 small onion, 3 cloves garlic
Add Rice and Broth: Stir in rice. Add saffron, baharat, salt, cardamom and cinnamon stick. Stir in chicken broth. Bring to a simmer, cover, reduce heat to low and cook for 20 minutes.
1 ½ cups basmati rice, Pinch saffron threads, 1 teaspoon baharat*, 2 cardamom pods*, 1 cinnamon stick, 2 ½ chicken broth, ½ teaspoon kosher salt
Top with Raisins: Sprinkle golden raisins on top of the rice, replace lid, turn off burner and allow rice to rest for 10 minutes.

Serve: Fluff with a fork. Garnish with almonds and parsley, if desired.
