A delicious cinnamon Apple Coffee Cake recipe with a surprise layer of cream cheese filling, and a simple streusel crumb topping. Serve coffee cake with a side of coffee for breakfast, brunch, or as dessert!
Streusel Topping: Combine all the streusel topping ingredients in a small bowl. Mix with a fork (or your fingers) until the mixture resembles crumbs. Set aside.
1/4 cup unsalted butter, 1/4 cup all-purpose flour, 1/4 cup old-fashioned rolled oats, 1/2 teaspoon baking powder, 1/4 cup packed light brown sugar, 1 teaspoon ground cinnamon, 1/4 cup chopped pecans
Cream Cheese Layer: Use electric mixers to mix together the cream cheese, sugar, and vanilla until smooth. Set aside.
Wet Ingredients: In a large bowl beat together 1/4 cup butter and 3/4 cup brown sugar with an electric mixer until light and fluffy. Add egg, sour cream, and vanilla and mix to combine.

Dry Ingredients: In a separate bowl stir together flour, cinnamon, baking soda, and salt.

Combine: Add dry ingredients to the butter mixture and stir to combine. Stir in apples.

Assemble: Pour half of the batter into prepared baking dish and smooth into an even layer. Spread cream cheese layer on top. Top with remaining cake batter, and then streusel topping.
Bake for 35 to 40 minutes. Cool in the pan for at least 10 minutes before serving.
Serve with a cup of hot coffee (or tea), if desired.
