Ingredients

cooked brown rice

olive oil

yellow onion

red bell pepper
(or green), chopped

garlic

fresh jalapeño peppers
, minced, ribs and seeds removed (leave ribs and seeds in one pepper if you like a lot of spice)

ground turkey

black beans
, drained and rinsed

ancho chili powder

salt and freshly ground black pepper
, to taste

salsa
, best with fresh store-bought salsa for this, rather than from a jar

crushed fire roasted tomatoes

sour cream, cheese, green onion, tortilla chips
for topping
Instructions
Heat the olive oil over medium high heat.
Add the onions, bell pepper, garlic, and jalapeños and saute for 1-2 minutes, stirring.
Add the turkey and cook until crumbled and browned.
Add the black beans, ancho chili powder, chili powder, cumin, salt and pepper, salsa, canned tomatoes and water.
Simmer for at least 15 minutes.
Add the cooked brown rice to the pot and stir to combine.
Serve warm topped with sour cream, cheese, green onions, and tortilla chips.
