Our Pumpkin Nothing Bundt Cake copycat recipe is a knockout! The flavor is perfect, it's topped with cinnamon cream cheese frosting, and best of all is it's EASY and way less expensive than the bakery!
Add the dry ingredients to the pumpkin mixture and stir to combine.
Pour the batter into the prepared bundt pan.
Bake 48 to 55 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.
Cream Cheese Frosting:
Beat the butter and cream cheese together until light and fluffy, 2 to 3 minutes. Add the powdered sugar and mix well for 2 to 3 minutes. Add a little more powdered sugar if needed, to thicken the frosting to a piping consistency. Mix in the vanilla and cinnamon. Add a little more cinnamon, if desired.
Make Ahead Instructions: the cake can be made and frosted 1 to 2 days ahead. Freezing Instructions: Tofreeze unfrosted cake, allow it to cool completely, then wrap the bare cake tightly in a layer of plastic wrap (following the ring shape of the bundt to prevent freezer burn), then wrap it in a layer of heavy-duty aluminum foil or place it in a large freezer-safe bag.To freeze frosted cake, refrigerate the frosted cake until the frosting is set, then follow the same instructions to carefully warp it and freeze it for up to 3 months. To thaw, transfer the wrapped cake to the fridge to thaw overnight.
