These easy homemade Palmiers are buttery, flaky French cookies made with puff pastry and coated in cinnamon sugar. They take just a few minutes to make beautiful bakery-worthy cookies.
Shape Dough: Roll one side of the puff pastry so the sides are even, forming a square. Spread the remaining sugar mixture over the top and gently press it into the dough with a rolling pin.
Draw a line down the center of the pastry, then roll one side in until it reaches the center, and roll the opposite side in to meet it. Fold one side over the other, like closing a book, to form a long, narrow log.
Chill: Transfer the log to a lined baking sheet and chill for 10-15 minutes. Preheat the oven to 400°F.
Slice the log into 1/2-inch slices and place cut-side-up on a parchment-lined baking sheet, a few inches apart.
Bake for 10 minutes, flip each palmier, and bake an additional 4-5 minutes, until golden and caramelized. Cool on a wire rack.
Optional Chocolate Dip: Melt the chocolate and dip one side of each palmier, placing chocolate-side up on parchment. Refrigerate until the chocolate has set.
4 oz high quality dark chocolate
Store cooled cookies in an airtight container at room temperature for up to 3–4 days.

Yield: 20 cookies. Serving Size: 1 cookie.Puff Pastry - You can use store-bought puff pastry, or make homemade puff pastryMake Ahead Instructions: Prepare and fold the cinnamon-sugar log, wrap tightly in plastic wrap, and chill for up to 24 hours before slicing and baking. Freezing Instructions: Unbaked palmiers freeze great (I don't recommend freezing baked palmiers since they wont be crispy when they thaw). To freeze Unbaked Slices (best method) cut the log into 1/2-inch slices. Freeze on a parchment-lined sheet for 1 hour until solid, then transfer to a ziplock bag or container (separated by parchment) and freeze for up to 3 months. Bake from frozen at 400°F adding 2–3 extra minutes to bake time, flipping halfway. You could also freeze the whole wrapped, uncut log for up to 3 months. Rest at room temperature for 5–10 minutes before slicing.
