Our easy Healthy Muffins recipe actually tastes good, made with wholesome ingredients like Greek yogurt, oats, and honey for a naturally sweet, moist muffin while still having the best texture.
2cupsblueberries, (or 1 cup chocolate chips, craisins or other mix-ins)
Instructions
Mix Wet Ingredients: Combine milk, olive oil, Greek yogurt, honey, egg and orange zest in a mixing bowl.
1 cup + 2 Tbsp milk, 1/3 cup extra virgin olive oil*, 1/3 cup plain Greek yogurt, 1/3 cup honey, 1 large egg, Zest from 1 orange
Mix Dry Ingredients: In a separate mixing bowl, combine flour, oats, baking powder, baking soda, and cinnamon. Pour dry ingredients into wet ingredients and mix only until combined.
Grease a 12-cup standard muffin tin. Divide batter among muffin cups (they will be full!).
Bake at 350 degrees F (180 degrees C) for 13-18 minutes, or until cooked through and a toothpick inserted comes out clean

Yield: 12 muffins. Serving Size: 1 muffin. Storing Instructions: These easy banana muffins will keep at room temperature for 3-5 days.Freezing Instructions: Cool completely then store in a freezer safe bag in the freezer for up to 3 months. Thaw on the counter or in the microwave. I love to add them to my kid's school lunches.
