In a mixing bowl add sugar and oil and stir till combined.
Add the eggs one at a time, mixing well after each egg is added.
Add cocoa powder and mix. Stir in salt, flour, and vanilla and stir until combined.
Line a bakers half sheet size pan (18’’x13’’) with parchment paper and spray lightly with cooking spray.
Pour batter into pan and spread into an even layer.
Bake at 350 degrees for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely.
Once cool, carefully pull up on the parchment paper to lift the brownies out of the pan. Cut a line down the center of the pan to cut the brownies in half, hamburger-style, creating two, large, equal sides.
Separate the pieces (I use scissors to cut the parchment paper down the middle.)
Spread softened ice cream over the top of one of the layers. Add the other layer on top, creating a brownie ice cream sandwich. Freeze for several hours.
