Ingredients

Whole Wheat Penne Pastas

cups
arugula leaves
1 1/2
cups
grape tomatoes
, halved
1/4
cup
freshly grated parmesan cheese
For the dressing
1/4
cup
olive oil
juice of 1 lemon
2
cloves
garlic
, minced
2
Tablespoons
fresh basil leaves
, finely chopped
salt and freshly ground black pepper
, to taste
Instructions
Cook pasta according to package directions, until al dente. Drain pasta and rinse under cold water.
In a large bowl, toss pasta with arugula, tomatoes and Parmesan cheese.
In a small bowl, whisk together the dressing ingredients.
Pour dressing over pasta and toss until well coated. Season with salt and pepper and serve.
Notes
Store in your refrigerator for up to 2 days.
