I love summer!! With summertime comes warm weather, and with warm weather comes Farmer’s Markets with tons of fresh produce! I’m all about meals that are stocked full fresh veggies, and I’m in love with this dish! As I mentioned in this black bean veggie burger post, I’m not a vegetarian, but I definitely support having a few meatless meals during the week. These quinoa stuffed bell peppers are perfect for that kind of night because they’ll fill you up and they’re packed with all the good stuff like spinach, tomatoes, black beans, carrots and cheese!
Yields 6-8 servings
Rinse and cook quinoa according to directions. Set aside once cooked.
Uncover, sprinkle peppers with more cheese, if desired. Bake uncovered 10-15 minutes longer, or until cheese is bubbly. Drizzle peppers with pan juices before serving. Enjoy!Recipe adapted from here.
