A bowl filled with Canadian Poutine, including fries topped with white cheese curd and gravy.

I first fell in love with Poutine when my husband and I were living in Edmonton, Alberta for the summer. My brother, who has lived in several different regions of Canada introduced us to it and we ate it every single chance we got (which is often, considering you can find it almost everywhere you go, in Canada). I’ve made tons of times over the years, from our home, and it’s a family favorite!

What’s not to love about homemade french fries and fresh cheese curd smothered in gravy? My mouth is watering!

What is Poutine?

Poutine is a popular Canadian dish consisting of french fries, cheese curds, and gravy. The brown gravy helps melt the cheese resulting in a really tasty dish.

Cheese Curds for Poutine: White cheese curds is the authentic option, but if you have trouble finding it, you can tear soft mozzarella into chunks for the closest substitute, or yes orange cheese curd.

How to make Poutine:

Prepare Fries: Make your own using my easy French Fries recipe (includes instructions for frying, baked or air-fryer) or heat frozen store-bought ones, according to package instructions.

A pan with crispy cooked french fries.

Make Gravy: Melt butter in saucepan over medium heat. Add flour and cook for 1-2 minutes, stirring well. Add bouillon and onion powder and stir. Whisk in broth until smooth and thickened. Taste and season with salt and pepper, if needed.

Serve: Add fries to serving bowl and top with cheese curds. Ladle gravy on top. Grab a fork and enjoy!

Make Ahead and Freezing Instructions:

To Make Ahead: The gravy can be made up to 3 days ahead of time and kept in the refrigerator. Reheat before serving.

To Freeze: The fries (without the gravy) can be frozen in a freezer safe bag for up to 2 months. Cheese curds can be frozen the same way. The gravy can be frozen in a freezer safe bag, container, or even ice cube tray for up to 3 months.
