Let me introduce you to the best homemade Ice Cream Sandwiches, made with brownies on the outside and ice cream in the center! These are soo EASY and fun to make (not to mention absolutely delicious) that you’ll never want to buy store-bought ice cream sandwiches again! 

I love yummy desserts that I can pull out of the freezer at a moments notice.  Brownie ice cream sandwiches, peach frozen yogurt, and a variety of cookie recipes are things I love to keep in the freezer for an easy treat.

Ice Cream Sandwiches

I’m telling you right now, this is one of the EASIEST and funnest homemade desserts you could ever make, and how convenient that they store in the freezer so you can enjoy them any time?! I’ve taken my favorite easy brownie recipe, baked it in a sheet pan, and folded it together with ice cream in the middle, to make a homemade ice cream sandwich!

Ingredients in ice cream sandwiches:

  • oil
  • sugar
  • eggs
  • unsweetened cocoa powder
  • salt
  • flour
  • vanilla extract
  • Vanilla ice cream

How to make homemade ice cream sandwiches:

  • Mix sugar and oil in a large bowl and stir to combine. Add the eggs one at a time, mixing well after each egg is added.  
  • Add cocoa powder and mix.  Add salt, flour, and vanilla and stir until combined.
  • Pour batter into a bakers half sheet pan (18×13”) lined with parchment paper. 
  • Bake at 350 degrees for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely.
  • Prepare brownie sandwich. Once the brownies have cooled, carefully pull up on the parchment paper to lift them out of the pan. Cut a line down the center of the pan to cut the brownies in half, hamburger-style, creating two, large, equal sides. Separate the pieces (I use scissors to cut the parchment paper down the middle.)
  • Add softened ice cream over the top of one of the layers. Add the other layer on top, creating a brownie ice cream sandwich.
  • Freeze for several hours.  Once well frozen, cut into squares and serve. Store leftovers in the freezer.

    This is so good and easy. I am NOT a fan of the store-bought ice cream sandwiches, but these are THE BEST. I am planning to make a few different flavors for my mom’s 77th Surprise Birthday Party.
    Can you tell me HOW LONG they can stay in the freezor and still taste moist and great?

    Absolutely delicious. The only things I did differently from the recipe is I used Hersey’s Special Dark Cocoa and I roughly chopped some Guittard Bittersweet Baking Wafers and added to the batter at the end. I’ve made them twice now and have gotten rave reviews from friends. Everyone wanted the recipe. Thanks so much for a great recipe!
