This recipe was adapted from my new Cooking Light cookbook my mother-in-law gave me for christmas. This is perfect for a fun alternative to traditional salads.
1/3 cup uncooked Couscous
1 small English Cucumber, chopped
1 cup fresh Parsley, chopped
1/4 cup fresh Mint, chopped
4 Green Onions, chopped
1 clove Garlic, minced
Optional: cooked, chopped chicken breast
1/4 cup Lemon Juice
2 Tbs. Olive Oil
Salt, to taste
Prepare couscous according to package directions, omitting salt and fat. Fluff couscous with a fork.
Combine couscous cucumber, tomatoes, parsley, mint, onions and garlic.
In a small bowl, combine sauce ingredients. Pour sauce over couscous mixture and toss. Enjoy!
