I could eat a smoothie every day! I love them for breakfast, or a treat at the end of the day. They’re so refreshing and you can adapt them according to what you have in your fridge. I always freeze bananas that are getting too ripe so that I can use them in smoothies. Frozen bananas and frozen fruit make the smoothie thick and cold–just the way I like it! This Pomegranate Berry Smoothie totally hits the spot! It has the frozen bananas and berries I like, plus pomegranate juice and Greek yogurt! YUM! And I’ll let you in on a little secret: I make my own pomegranate juice for this recipe! It’s easy, and the bottled juice can be expensive! I just blend the pomegranate seeds, strain them, and add a little water and sugar.
- 1 cup pomegranate juice*
- 1 cup Greek yogurt
- 1 cup frozen mixed berries
- 1-2 frozen bananas
- Place all ingredients in a blender and blend until smooth.
- Make your own pomegranate juice: Place the pomegranate seeds in the blender and puree. Strain the juice through a fine mesh strainer, into a cup, to remove seeds. Add a spoonful of water and sugar, if desired, to sweeten it. (One pomegranate makes about 1/2 cup of juice).
