I love to share that cooking dinner from scratch is not only delicious but it can be really easy too. Most the meal ideas I share are super simple, and most can be made in 30 minutes, or less! And One Pan meals take things to a whole new level of convenience!

One Pan Lemon Basil Chicken and Rice from TastesBetterFromScratch.com

Ingredients
  

For the Chicken:

Instructions
 

  • Season chicken with salt, pepper, garlic powder, onion powder and dried basil.
  • Add olive oil to a large skillet (with a fitted lid) over HIGH heat. 
  • Add the chicken and brown (sear) for only 1-2 minutes on each side, just until browned (chicken will not be cooked through.) Transfer chicken to a plate.
  • Add butter to the pan, reduce heat to medium. Stir the butter with a wooden spoon to scrape up any browned bits from the chicken. 
  • Add the rice and sauté for 2-3 minutes until lightly browned. 
  • Add chicken broth, lemon juice, and 3 tablespoons of the fresh basil to the pan and stir. Bring mixture to a boil. 
  • Once boiling, place chicken on top, then cover, reduce heat to low, and simmer for about 20 minutes until all of the liquid is absorbed. 
  • Garnish with remaining tablespoon of fresh basil. Serve immediately.

    The rice was delicious! The chicken, however, was incredibly bland, even with the seasoning. It almost seemed as though the rice soaked up all of the flavors/seasoning, leaving nothing behind for the chicken. I will be making the rice again, but definitely not the chicken as both myself and my spouse were disappointed in how it tasted.

  2. I made this for meal prep and it was delicious! I wanted something without a ton of ingredients and steps and this was a winner.

    This was ridiculously easy to make for something that packs so much flavor. I found the lemon a bit overpowering but I think that’s just my personal taste. My husband would not stop eating it. I had to hide the leftovers just so I’d have a lunch tomorrow. 😛

    We loved this meal. It tasked really good and was really easy to make. I get home late in the evenings and need something that is quick and don’t dirty up a bunch of dishes. I wouldn’t change a thing with this recipe I felt that it had the right amount of everything in it.
