In our house it’s early, busy, and I hardly have time to make a piece of toast for myself.  Seeing as breakfast is my FAVORITE meal of the day, a little piece of toast just doesn’t cut it!  So, to ease the pain, I’ve fully embraced “brinner”: breakfast for dinner.

  • 3 Tablespoons olive oil divided
  • salt and freshly ground black pepper
  • 7 ounce package Jones Dairy Farm All Natural Golden Brown Sausage Links or Patties , chopped
  • 1 bell pepper , chopped
  • 2 cups fresh spinach leaves
  • 4 large eggs
  • 1 Tablespoon water
  • 1 Tablespoon butter
  • 1 avocado , peeled, seeded and sliced
  • 1 cup Pico de gallo or salsa
