How to make Brownie Truffles:

Make Brownies: Prepare and bake brownies according to recipe instructions. Do not over-bake them! This recipe works best with soft and warm brownies so they’re easy to roll into balls.

Form Into Balls: Once brownies have cooled enough to handle, use a fork to crumble them up. Scoop 1 heaping tablespoon into your hands and press together to form into a ball. Should make about 35 balls.

Melt Chocolate: Place chocolate chips in a double boiler (I make my own by placing a heat proof bowl over a pot of simmering water), or in the microwave, stirring often until melted and smooth.

Dip In Chocolate: Drop brownie balls into the bowl of melted chocolate and use a fork to coat it on all sides, then lift up and allow excess chocolate to drip off into bowl.

Enjoy: Place brownie bites on prepared pan and top with sprinkles if desired. Allow brownie truffles to set up at room temperature, or refrigerate for a few minutes until chocolate sets.

Make Ahead and Freezing Instructions:

To Make Ahead: Make this brownie truffles recipe ahead of time and store in the fridge in an airtight container for up to a week.

To Freeze: Place brownie balls in an airtight freezer safe container or bag and freeze for up to one month.

Notes

Chocolate: It’s essential to use high quality chocolate chips, like Guittard or Ghirardelli so they melt smoothly (other chocolate chip brands will not melt well). You could also use high quality chocolate bars or Bakers chocolate
Brownies: we prefer to make homemade brownies, but a box mix would work as well.
Make Ahead Instructions: Make these ahead and store in the fridge in an airtight container for up to a week.

    The melted chocolate chips were difficult to cover the brownie balls. It’s too thick and doesn’t come out very smooth, so I covered everything with sprinkles. They taste ok though

  2. Very easy and simple- and an absolute hit! I dialed them up a notch by adding caramel bits in the middle while rolling them into balls. They did not last long at the party I brought them to! Great recipe!

    These came out beautifully! So simple to make. I did bake about 10 minutes longer, because the batter didn’t seem to want to set, but still very moist. I had a little trouble with the dipping chocolate when I used the butter, so ended up using a little bit of shortening to thin it out.
    All in all, very good! I just went and got a cookie scoop and I’m fixing to make more 😉

    I feel like i did something wrong. My brownies were extremely greasy when I went to roll them. I baked until the stick in the center came out clean which was about 25 minutes. the crumbs tasted moist. They are in the freezer now. I will see what happens after they are frozen and chocolate covered.

  5. I’ve been making brownie balls for years now, both box mix and homemade, and everyone loves them. I make one addition after the brownies are baked by mixing in chocolate frosting, it makes them extra fudgy. I also use a food processor to break up the brownies, its quick and efficient and you don’t have to cut off the edges, unless you just like to eat them.
